  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Combine the dates, pecans, water, banana, egg, butter, and vanilla extract in a bowl.
  • Whisk flour, baking powder, cinnamon, and salt together in a separate bowl. Add to the date mixture and stir until well combined.
  • Drop dough by tablespoonfuls about 1 inch apart onto the prepared baking sheet and flatten lightly with the palm of your hand.
  • Bake in the preheated oven until cookies start to brown around the edges, being careful not to over-bake, for 11 to 13 minutes. Transfer cookies immediately to a wire rack to cool.

Steps:

  • Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
  • Mix together the shortening, sugar, and eggs.
  • Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
  • Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
  • Chill dough for at least 1 to 2 hours.
  • Roll out dough in thin layers in small batches and cut with round cookie cutter.
  • Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
  • Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

This is not a super fudgy or super sweet cookie. But it is a nice little drop cookie when you want something tasty and relatively healthy!

Cocoa Date Cookies (No Added/Refined Sugar) image

Steps:

  • Preheat your oven to 350°F.
  • Spray a large baking sheet (or two small ones) with cooking spray.
  • Mix together the flour through nuts. Set aside.
  • In a blender combine the dates, the eggs, the water, and the vanilla. Mix until the dates are broken up and everything is combined. This might take a few minutes and you might need to use a spatula to mix it all up.
  • Add the cocoa powder to the blender and mix again. It is ok if there are little date pieces.
  • Pour the blender mix into the dry and mix well. It will be fairly stiff.
  • Using two tablespoons, drop the cookies onto the sprayed cookie sheets.
  • Bake for 10-14 minutes or until a toothpick inserted into a cookie comes out clean.
