SPICE BALLS
These are very easy and quick to make. To make them even faster, you can make the dough the night before, cover and store in refrigerator overnight. That way in the morning all you have to do is heat your oil, cook and serve. Look like small puffed doughnut holes. I like them tossed in a plastic bag with cinnamon and sugar.

Steps:
- Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- In a large bowl, mix flour, 1/3 cup sugar, baking powder, salt, mace and 1/2 teaspoon cinnamon. Create a well in the center of the mixture, and pour in milk, canola oil and egg. Thoroughly stir into the mixture.
- In batches, drop the mixture by rounded teaspoonfuls into the hot oil. Fry on all sides, 2 to 4 minutes, until golden brown. Drain on paper towels.
- In a resealable plastic bag, mix 1 cup sugar and 1 teaspoon cinnamon. While still warm, place balls a few at a time into the bag, and toss to coat.

- Blend butter, 1/3 c sugar; add vanilla. Combine flour and cinnamon & add this mixture to the crushed cornflakes alternating w/ the sugar mixture. Add pecans and form into small balls. Bake 350 degrees for 30 minutes. Roll in powdered sugar while hot.
- Measure corn flakes BEFORE crushing ! Yield is a guesstimate.

These are my favorite cut-out cookies. Sweet and spicy, they're a wonderful Christmas treat. I've been making them every Christmas for almost 15 years now. You can make the dough up to 3 days ahead of time.

- Mix the flour, the baking powder, cinnamon, nutmeg, and cloves together in a bowl.
- Cream the butter and brown sugar together with an electric mixer in a large bowl until smooth; beat the egg and vanilla extract into the butter mixture. Add the flour mixture in small amount to the butter mixture, beating each addition until blended. Form the dough into a ball, wrap with plastic wrap, and refrigerate at least 1 hour or up to 3 days.
- Preheat an oven to 350 degrees F (175 degrees C). Grease baking sheets.
- Roll the dough out on a floured work surface with a rolling pin to about 1/8-inch thickness. Cut with 2-inch cookie cutters. Arrange the cut cookies onto the prepared baking sheets.
- Bake in the preheated oven until the edges begin to brown, 10 to 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

SUGAR 'N' SPICE NUTS
To tell the truth, I can't recall where this recipe came from. It's been a regular in my holiday baking, though, for many years. Between Thanksgiving and New Year's, I hand these out to almost everybody-even the mailman's been known to find a batch in the mailbox! I moved from a big city as a bride. My husband soon persuaded me to enter baked goods at our county fair-now, our son, 8, is my cookie tester, and our daughter, 6, is the egg beater.

- Place nuts in a large bowl. In a small bowl, beat egg white and orange juice with a fork until foamy. Add the sugar, orange zest, cinnamon, ginger and allspice; mix well. - Slowly add the flour, nutmeg, and salt and mix just until combined
- Stir in the nuts
- Scoop into 1" balls and round them smooth between your hands
- Bake 10-12 minutes, until cookies are set but not browned
- While the cookies are baking, place the remaining cup of powdered sugar in a small bowl
- Let the cookies cool on the tray for a minute or two
- Roll the warm cookies in powdered sugar and set on a cooling rack. Once cool, roll them once or twice more in powdered sugar
- Store in an airtight container
