PERFECT GUACAMOLE

Steps:
- Put the avocado cubes in a glass bowl. Add the cilantro, tomatoes, red onion, lime juice, jalapeno, cumin, salt and pepper. Gently, using 2 wooden spoons or paddles, work from the outside blending until the avocado cubes start to break up yet chunks still remain. Work slowly, taking time to ensure the guacamole stays chunky and creamy.
- If not serving immediately, press a piece of plastic wrap directly on top of the guacamole to cover it completely so it doesn't brown. When ready to serve the guacamole, garnish with a tortilla chip in the middle of the bowl. Serve with the remaining chips on the side for dipping.

- Mash the cilantro, onions, canola oil, if using, avocados, lime juice and jalapenos together in a bowl, using a fork; guacamole should be chunky. Season with salt and pepper.
SUPER FABULOUS GUACAMOLE
This is the best guacamole recipe I have found yet! I got it off of Allrecipes.com a couple of years ago and have brought it to several parties. It is quick and easy and has LOTS of flavor! I usually serve it with blue tortilla chips!

Steps:
- In a medium bowl, mash together the avocados, lime juice and salt.
- Mix in onion, cilantro, tomatoes and garlic.
- Stir in cayenne pepper.
- Refrigerate 1 hour for best flavor -- or serve immediately!
- Note: I usually stick the avocado pits in the guacamole until it is time to serve -- this seems to slow down the oxidation process.

- Cut 3 avocados in half lengthwise, remove pits, scrape the flesh of the avocado out with a spoon. Place in a medium bowl with a flat bottom and mash avocados with a potato masher to a chunky consistency.
- Squeeze 3 Tbsp of fresh lime juice directly over avocados while prepping the rest of your ingredients.
- Add diced tomatoes, onion, and chopped cilantro. Season with 1/2 tsp salt and 1/4 tsp black pepper. Stir just until combined and serve.
