My mom and I have been using this recipe for years. I have a peach tree in my backyard. We make several cobblers for friends and keep it simple. I cut back on the sugar for mine.

Steps:
- Place peaches in bottom of 9x9 pan or casserole.
- Sprinkle lemon juice over peaches
- Sift dry ingredients.
- Beat egg slightly and add to dry ingredients. Toss with fork until crumbly.
- Sprinkle over peaches.
- Drizzle butter over top.
- Bake at 375 degrees for 35-40 minutes.

THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

- For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.

- Drain 1 can of peaches; reserve the syrup from the other. Place the butter in a 9- by 12-inch ovenproof baking dish. Heat the butter on the stove or in the oven until it's melted. - In a mixing bowl, combine flour, sugar, and butter with a pastry cutter until it forms crumbles about half the size of a pea.
- Pour the can of peaches into your baking pan and sprinkle flour mixture evenly over the top.
- This recipe does take about 45 minutes to bake, just keep watch for the juices to start bubbling and the top to brown. Bake at 350. Sorry I forgot to add that in!

- Flour mixture will cook through the fruit making its own crust.
- If using blueberries and there isn't enough juice, put berries in pan and add 1/4 cup to 1/2 cup of water and cook slowly.

- Preheat oven to 350 degrees. Mix the peaches, 1 cup sugar, 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, and the water in a saucepan and bring to a light boil. Lower heat and let simmer for about 10 minutes. Meanwhile, cut up the butter and place in a 3 quart baking dish. Place it in the oven to allow butter to melt. In a mixing bowl, combine the flour and remaining sugar. Slowly stir in the milk, stirring well by hand.
- Take the melted butter out of the oven and slowly pour the batter over it, covering the bottom of the dish. Do not stir! Carefully lay the fruit on top as though you were layering it and then carefully drizzle the syrup into the baking dish, but not all in one spot. Again, do not stir! The peaches will sink to the bottom and the crust will rise to the top, but ONLY if you use self-rising flour. Sprinkle remaining cinnamon over the top. Place in the oven and bake for approximately 40 minutes. (This is a slight variation of a recipe shared by Paula Deen.)
