BUTTER SPRITZ COOKIES
One of the most iconic of holiday sweets, spritz are bite-size buttery cookies with vanilla and almond.

- Preheat the oven to 350 degrees F. Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy, about 5 minutes. Add the vanilla and almond extracts and the egg and mix to incorporate; don't worry if the mixture seems to separate.
- Sift together the flour and baking powder and add to the creamed butter. Mix until combined. Using a cookie press, press the cookies onto ungreased baking sheets. Top with sprinkles of your choice. Bake until firm but not yet browning, 6 to 8 minutes. After a few minutes, move cookies to a rack and cool.
BUTTER RICH SPRITZ BUTTER COOKIES
These are wonderful cookies from the press. They are rich in flavor. My mom has made these cookies for years for all of the holidays. She even used food coloring for the different designs, like green trees, etc.The kids love to decorate them as much as they love to eat them.

- Preheat the oven to 400 degrees F (200 degrees C). Sift together the flour and salt; set aside.
- In a medium bowl, cream together the butter and sugar. Stir in the egg yolks, almond extract and vanilla extract. Gradually blend in the sifted ingredients. Fill a cookie press with dough and shoot cookies about 1 1/2 inches apart onto an ungreased cookie sheet. If you like, decorate with sugar or sprinkles at this time.
- Bake for 6 to 8 minutes in the preheated oven.

- Preheat oven to 350°F.
- Cream together butter, powdered sugar, vanilla and salt.
- Gradually add cornstarch and flour.
- Whip with an electric mixer until fluffy.
- Place dough into a cookie press and press cookies out onto a COOL baking sheet.
- Decorate with candies, or candied cherries if desired.
- Bake 12-15 minutes.
- Let cool for 2 minutes on baking sheet.
- Then remove to wire rack to cool completely.
- Store in an airtight container at room temperature.

SUPER SHOOTER SPRITZ HOLIDAY COOKIES

Steps:
- Preheat oven to 400°F.
- Cream sugar and butter.
- Mix in remaining ingredients.
- Place dough in cookie press.
- Press cookikes out onto a COOL cookie sheet.
- Sprinkle with jimmies or colored sugar or place a"red hot" candy or a "mini-M&M" candy in the center of each cookie.
- Watch them closely while baking and don't let them brown.
- Bake about 6-9 minutes, remember, do NOT brown.
SUPER SPRITZ COOKIES
I got this recipe from the Super Shooter Idea Book. After trying different recipes, this one's my favorite. I think the rich flavor comes from the three egg yolks. I recommend using butter rather than margerine. It really gives the cookies that special flavor.

- 1. With an electric mixer at high speed cream butter until soft.
- 2. Add sugar gradually, continuing to cream about 5 minutes until light and fluffy.
- 3. Add egg yolks one at a time. Add vanilla. Beat well.
- 4. Add flour in three additions. Mix well after each addition. Dough will be stiff.
- 5. Shape dough into 2 rolls. Wrap in plastic wrap. Refrigerate at least one hour.
- 6. Assemble gun. Fill with cookie dough.
- 7. Bake 7-10 minutes (I bake for 9 minutes) until just starting to turn light brown around the edges, being careful not to overbake.
EASY SPRITZ COOKIES
I always make Spritz (you know...that cookie press thing you got at your wedding shower 20 years ago that is still collecting dust? That's what you use to make Spritz.) at Christmas time or for parties because they're sooo easy to make and they look like they came from a bakery; place them on a tray with other shapes and various colors of sugar sprinkles. You've spent almost no money for an expensive-looking tray of treats!

I found this at www.proctorsilex.com. I lost the recipe book for my super shooter plus years ago and found that regular spritz cookie recipes don't work in it!. I haven't yet tried this one yet, but will soon. I hope to add a few drops each of orange flavoring and yellow and red food coloring. - Preheat oven to 375°F Place butter and shortening in a large mixing bowl and cream together on medium high speed.
- Add sugar gradually; beat until light and fluffy, about 5 minutes.
- Add egg and vanilla; mix well using medium speed.
- Combine flour, baking powder, and salt in separate bowl.
- Add flour mixture to butter/sugar mixture in three additions; mix well after each addition.
- The dough will be stiff.
- Assemble and fill super shooter with dough; use desired disc.
- Press cookies on ungreased, uncoated baking sheet (no teflon).
- Bake for 10-12 minutes or until lightly browned around the edges.

- Preheat the oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper.
- Combine butter and sugar in a bowl. Beat with an electric mixer until creamy. Add egg yolks and vanilla extract. Mix until well combined. Beat in flour and baking powder. Use your hands to finish mixing if dough does not come together.

- Preheat the oven to 325 degrees F (165 degrees C).
- Combine butter, brown sugar, white sugar, and vanilla extract in a large bowl; beat with an electric mixer until light and fluffy, 3 to 5 minutes.
