SIMPLE TOMATO SANDWICH
I am only posting such a simple recipe because I actually somehow lived 29 years of life before my husband introduced me to the Tomato Sandwich. If you've only used tomatoes as an accessory in your sandwiches, and not as the Featured Ingredient, you are truly missing summer as it was meant to be tasted. Note: after many years, I have solidly converted to mayo for this sandwich, with fresh ground black pepper too. (Oct 2012)

Steps:
- Toast bread.
- Slice tomato.
- When bread is adequately toasted, liberally spread both sides with Miracle Whip (or butter one side with Miracle Whip on the other).
- Lay tomato slices on one side of bread.
- Salt tomato to taste.
- Slap that baby together and savor summer at its best!
SUPER TOMATO SANDWICHES
I never could resist a tomato sandwich. It is the combination of mayonnaise, tomatoes and bread that is so compelling. I call these MLTs: mayonnaise, lettuce and tomatoes. I make a spicy mayo with chipotle adobo (my son's favorite), and an herbal mayo with tarragon (my favorite). Play around with aioli and other flavored mayonnaises. Use whole grain bread and toast it lightly so that it doesn't get soggy. The tomatoes should overlap in a thick layer.

Steps:
- Spread mayonnaise on both slices of the lightly toasted bread. Arrange tomato slices in a thick overlapping layer on top of the bottom slice. Sprinkle with salt, pepper and basil if desired (do not salt if not eating right away).
- Place a layer of thin avocado slices on top of the tomatoes and top with lettuce leaves and the top slice of bread. Press down firmly and cut the sandwich in half. You can wrap and transport the sandwich, as the toasted bread will resist becoming soggy for a few hours.
TOMATO SANDWICHES
You may not really need a recipe for a tomato sandwich, but sometimes varying it can be nice, especially if you tend to get stuck in a habit as the summer progresses. This version, based on pan con tomate, involves rubbing the guts of a ripe tomato all over garlicky toasted bread. More tomato slices are added on top, along with slivers of onion and mayonnaise, and bacon if you'd like. It's a supremely messy sandwich best munched over the sink, or with plenty of napkins nearby.

Steps:
- Toast the bread. Take each slice and rub one side all over with the cut side of the garlic clove. (The clove should start to disintegrate into the bread.) Rub each slice with the cut sides of the soft halved tomato, pressing so the tomato flesh sticks to the bread. Drizzle bread with oil, then sprinkle with salt.
- Spread mayonnaise over the tomato pulp. Place the sliced tomatoes on top of 2 pieces of the bread. Cover tomato slices with onions and sprinkle with salt. Top with bacon if using, then use the other 2 slices of tomato-rubbed bread to make sandwiches. Eat over the sink.
MY FAVORITE OPEN-FACED TOMATO SANDWICH
This is my favorite way to eat tomatoes, developed accidentally by my brother-in-law on a "empty cupboard" day. I've been addicted ever since! It's a great simple lunch or snack.

Steps:
- Spread butter, margarine, or Pam on both sides of each piece of bread.
- Grill on a cast iron skillet, non-stick pan, or whatever it takes to get them toasted. (You can toast them in a toaster and then butter them, but I've found that makes them a little soggy.).
- In the meantime, slice each tomato into 8 slices.
- When the bread is toasted on both sides, spread Boursin or goat cheese on one side of the bread.
- Top each bread slice with four tomatoes.
- Sprinkle each sandwich with kosher salt to taste.

- Prepare a large non-stick skillet by spraying it with cooking spray. Butter one side of bread and lay it buttered-side-down into the pan. Top with the cheese squares by staggering them slightly when placing them onto the bread rather than stacking all the squares exactly on top of each other (this will create height to the finished sandwich). Top with one tomato slice. Butter another piece of bread and place it on top of the tomato slice, buttered-side-up. Repeat for as many sandwiches and you wish to make.
- When all your sandwiches are in the pan, turn the stove to medium or medium-high heat and cook sandwiches for about 3 minutes on the first side. Flip and cook for another 2-3 minutes on second side, or cook until both sides are browned to desired level. Serve immediately.
- Consider serving with ketchup, ketchup + hot sauce, salsa, three cheese ranch salad dressing (shown in photos), mustard, mayo, or any desired dip.

- Add onion, chilli and garlic to a large pan over medium heat with a dash of olive oil. Gently fry until they begin to soften. Don't allow them to char.
- Add in tomatoes, sugar, red wine vinegar, balsamic vinegar and a good pinch of salt and pepper. Give it all a good stir.
- For a quick chutney just place it on a rapid simmer and stir until it reduces down. This should take around 20mins. Whilst it's quick, the texture won't be as thick/glossy and the flavours won't be quite as developed, but it still does the trick. Or, keep on a low simmer for 1-1.5 hours, stirring occasionally until the chutney reduced to a jammy consistency.

- Using a plate and paper towels, line the sliced tomatoes on the paper towels. Lightly sprinkle half the table salt on one side of the sliced tomatoes, then turn them over and lightly sprinkle salt on the other side. This will help draw out extra moisture from the tomatoes, which will help keep your sandwich from becoming soggy.
