STRAWBERRY CREAM CAKE
Cake, cream, and berries combine in a treat that's twice as delectable as the sum of its parts. The buttery cake soaks up the strawberry juices, while the whipped cream adds an airy richness.

Steps:
- Preheat oven to 350 degrees. Butter bottom of an 8-inch round cake pan, and line with parchment paper. Butter and flour paper and sides. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
- Using an electric mixer on high speed, beat butter and 1/2 cup sugar in a large bowl until light and fluffy. Add eggs and yolks, one at a time, beating well after each addition. Beat in vanilla. With mixer on low, alternately add flour mixture in 3 parts and milk in 2, beginning and ending with flour mixture; mix just until combined. Spread batter in prepared pan.
- Bake until a toothpick inserted in center of cake comes out clean, 30 to 35 minutes. Cool in pan 10 minutes; invert onto a wire rack to cool completely. Using a serrated knife, split cake in half horizontally; place bottom half, cut side up, on a serving plate.
- Make topping: In a large bowl, combine strawberries and 1/4 cup sugar; set aside. Place 2 tablespoons cold water in a small saucepan, and sprinkle with gelatin; let soften 5 minutes. Place saucepan over very low heat, and stir until gelatin is dissolved. Remove from heat; let cool.
- Using an electric mixer, beat cream and remaining 1/4 cup sugar in a large bowl until very soft peaks form. Continue to beat, and gradually add gelatin mixture; beat until soft peaks form.
- Arrange half of strawberries over bottom cake layer; top with half of whipped cream, leaving a 1-inch border. Cover with top half of cake, cut side down. Top cake with remaining whipped cream, leaving a 1-inch border. Refrigerate cake and remaining strawberries separately, at least 1 hour (or up to 1 day). Just before serving, spoon strawberries over cake.

SUPER STRAWBERRIES & CREAM BREAD
This is a collaboration of two recipes I found here on recipezaar, Strawberries & Cream Bread (Strawberry or Blueberry) and Strawberry Coffee Cake. My Fiance LOVES just about anything with Strawberries in it, so I went off tying to find some new things to make for him and came across those two recipes. Both are VERY delicious. :) So, after trying both, my Fiance and I found different things that we really liked about both and brought them together, creating a SUPER Strawberries & Cream Bread. We're silly people. :) Anyhow... I measured out everything, except the strawberries, walnuts and pecans. Some people may want to add more or less, I just listed the amount from the original recipe. You, too, might want to try various things to see what works for you. I, personally, think it tastes best when served hot or warm, as it is more flavorful. No matter how you have yours, I hope you like it! I haven't tried it with blueberries, yet, but I'm sure it would be SCRUMTRULESCENT!

Steps:
- Combine flour, baking powder, baking soda, salt and cinnamon; set aside.
- In small bowl, beat butter until creamy; Gradually add sugar, beat 1 minute or until light and airy; Add brown sugar; Beat in eggs, one at a time; Beat in sour cream and vanilla.
- Stir into flour mixture only until dry ingredients are moistened.
- Fold in chopped strawberries and nuts.
- Pour into a greased and floured baking pan. Just about any pan could probably be used (a loaf pan, springform pan, etc.), just keep in mind that the bread will rise, so you want to make sure your pan is deep enough to avoid overflowing. I used roughly a 10.5 inch, round pan, about 2 inches deep.
- Place sliced strawberries, evenly, over the top of batter.
- To make the topping: Combine the flour and sugar in a bowl.
- With a fork or a mixer, cut in and mix butter until consistency of cookie dough (the best way I can think to describe it).
- Tear topping into little chunks and spread evenly over top of sliced strawberries. I had just enough to cover them completely, however, as stated above, the amount you need will vary depending on the size of your pan. If you use a bigger pan, you will need to make about a batch and a half of what is stated above for the topping. If you use a considerably smaller pan, like a loaf pan, you might want to cut the topping recipe in half. It's hard to mess it up, so do what you think will work. :).
- Bake at 350°F for 60 to 65 minutes or until toothpick comes out clean (cooking time may vary; it took about 90 minutes in my oven).
- Remove from oven and let cool for about 10 to 15 minutes.
- DIG IN!

Steps:
- Preheat a grill to medium heat.
- In a small bowl, combine the sugar and pumpkin pie spice. In a large bowl, combine the berries with half the lemon zest and lemon juice and half the sugar and spice mixture. Allow the berries to sit and macerate for 15 minutes. Slice each ciabatta loaf in half lengthwise and then slice each half in half on the bias. Brush the cut sides of the bread with the melted butter, sprinkle with the remaining sugar and spice mixture and place on the grill. Grill until toasted and browned, 3 to 4 minutes. Combine the remaining lemon zest with the whipped topping and stir. Remove the bread from the grill. Divide the bread evenly among 4 plates. Top each with 1/2 cup berry mixture. Serve with a dollop of the whipped topping and garnish with mint.
STRAWBERRIES 'N' CREAM BREAD
Once strawberry-picking time arrives here each summer, my husband and I look forward to this bread. Since only fresh strawberries will do, I have been thinking of trying a different kind of berry so we can enjoy it more often. Baking is great fun for me. I have to admit, though, sweets are my weakness. On occasion, a bag of chocolate chips makes it to the batter! -Suzanne Randall, Dexter, Maine

STRAWBERRY DREAM
The idea for this dessert didn't come to me in a dream but I was trying to think of a better name for a Strawberry Posset (which is what this actually is) but since very few people know what that is, I am calling it a Strawberry Dream. I think after trying it you'll agree that the name is totally appropriate. The boiled strawberry-infused cream and sugar filling firms up into a luxurious, pudding-like texture that when sandwiched between strawberry puree and macerated strawberries, tastes like a dream! Even though the portions are a bit small, the taste is rich and a little goes a long way.

Steps:
- Prepare strawberry puree: Mix quartered strawberries and sugar in a 2-cup liquid measure or bowl. Let sit and macerate for 1 hour, stirring every 10 to 15 minutes. Use an immersion blender to blend into a smooth puree. Pass through a mesh strainer to remove seeds, if desired. Cover and refrigerate until needed.
- Prepare cream mixture: Combine sugar and cream in a saucepan. Set heat to medium-high and bring to a boil while whisking occasionally; be careful, since cream can easily boil over. Once cream just starts to boil, reduce heat to between medium and medium-low and maintain a steady simmer. Simmer for 5 minutes.
- Remove from the heat and whisk in vanilla, lemon juice, and 1/3 cup of the reserved strawberry puree until completely incorporated. Let cool for 10 to 15 minutes.
- While the cream is cooling, pour the remaining strawberry puree evenly into 4 dessert glasses.
- Pour the cooled cream mixture into the glasses. Wrap with plastic wrap and pop in the refrigerator until thoroughly chilled, 3 to 4 hours.
- Meanwhile, prepare topping: Toss diced strawberries and sugar together in a small bowl. Wrap with plastic wrap and chill alongside the strawberry dreams.
- When ready to serve, remove strawberry dreams and topping from the refrigerator. Stir the topping and spoon strawberries and any accumulated juices on top of each dream.
