Steps:

  • In a shallow dish, whisk together soy sauce, vinegar, corn syrup, hot sauce, and pepper. Add steak, bell peppers and onion and toss to coat. Cook immediately or cover with plastic wrap and refrigerate up to 24 hours.
  • Set a large nonstick skillet or stove-top grill pan over medium heat. Spray with cooking spray and add steak and vegetables, with the marinade. Saute 5 to 7 minutes, until vegetables are tender-crisp. Transfer mixture to a serving platter.
  • Meanwhile, warm tortillas in the microwave or according to package directions.
  • To make the guacamole, in a zip-top bag or medium bowl, mash avocado lightly. Then add tomato, garlic, lime juice and cilantro and combine. Season, to taste, with salt and black pepper.
  • Serve fajitas with guacamole on the side.

1/4 cup soy sauce
1/4 cup red wine vinegar
2 tablespoons light corn syrup
1/2 teaspoon hot sauce or more to taste
1/4 teaspoon ground black pepper, plus more for seasoning

Steps:

  • Combine the chicken with the chili powder, 1/2 teaspoon of the cumin, 1 teaspoon salt and several grinds of pepper in a bowl and toss with tongs until well combined.
  • Heat 1 tablespoon of the oil in a large skillet over high heat until shimmering and starting to smoke around the edges. Add the chicken in a single layer and cook, stirring occasionally, until cooked through, about 5 minutes. Transfer to a plate.
  • Add the remaining 1 tablespoon oil to the skillet. Add the bell peppers and onions and season with the remaining 1/4 teaspoon cumin and 1 teaspoon salt. Cook, stirring often, until the peppers are softened and the onions are translucent, about 5 minutes. Stir in the garlic and jalapeno and cook until softened, about 2 minutes. Return the chicken to the skillet, stir to combine and continue to cook until the chicken is very hot, 2 to 3 minutes.
  • Heat the tortillas according to the package directions, then top them with the Cheddar and chicken mixture. Serve with lime wedges, avocado slices, cilantro leaves and hot sauce on the side.

1 1/4 pounds boneless, skinless chicken breasts, sliced into 1/4-inch-thick strips
2 teaspoons chili powder
3/4 teaspoon ground cumin
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
3 orange bell peppers, thinly sliced
2 red onions, thinly sliced
2 cloves garlic, finely chopped
1 jalapeno, seeded if desired and chopped
12 blue corn tortillas
8 ounces sharp yellow Cheddar, grated

Steps:

  • Combine the olive oil, cilantro, cumin, chipotles, garlic, lime juice, orange juice and 1 teaspoon salt in a 2-cup measuring cup or similar vessel. Using an immersion blender, puree the marinade until smooth. Transfer to a resealable plastic bag. Add the steak to the bag, then seal and shake to coat. Refrigerate for 2 to 4 hours.
  • Preheat a ridged grill pan over medium-high heat (or prepare an outdoor grill).
  • Drain the marinade from the steak and sprinkle liberally with salt and pepper. Lightly oil the grill pan. Grill the steak for 4 minutes per side for medium-rare. (Depending on the size of your grill pan, you may need to cook in batches.) Transfer to a cutting board to rest.
  • Toss the bell peppers and onions with some olive oil and lime juice. Grill the vegetables until barely limp, 7 to 8 minutes.
  • Turn any free burners to a medium-low flame. Place a tortilla on each flame and let char for 30 seconds to 1 minute. Flip and repeat on the second side. Wrap the tortillas in a clean tea towel to keep warm while you continue with the remaining tortillas.
  • Thinly slice the steak on a diagonal, against the grain. Serve with the warm tortillas and grilled vegetables.

1/4 cup olive oil, plus more as needed
3 tablespoons roughly chopped fresh cilantro
1 teaspoon ground cumin
3 chipotle chiles in adobo
2 cloves garlic, roughly chopped
Juice of 2 limes, plus more as needed
Juice of 1 orange
Salt and freshly ground black pepper
2 1/4 pounds skirt steak, trimmed
2 red bell peppers, thinly sliced
1 large onion, thinly sliced
12 flour tortillas

Steps:

  • Over a shallow bowl, cut the chicken with a pair of scissors into thin, lengthways, 1/4 to 1/2-inch strips. Halve the long strips across to give 2 shorter strips (to echo the size of the bell pepper strips). Don't get too hung up on precision, though; you're just trying to cut the chicken into uniform shapes.
  • Add the oregano, cumin, salt, sugar, 1 tablespoon garlic flavored oil, and the lime juice to the chicken. Stir to combine and let marinate while you get on with the onions and bell peppers. Preheat the oven to 225 degrees F if you wish to warm your tortillas.
  • Warm the peanut or olive oil in a large frying pan or wok and fry the onion slices over medium heat, stirring occasionally, for 5 minutes.
  • Spread the tortillas out on a cookie sheet and put it in the oven to warm.
  • Add the bell pepper strips to the pan with the onion and cook for 10 minutes. When both the onions and peppers are tender, remove them to a bowl.
  • Warm the remaining 2 teaspoons garlic flavored oil in the pan over medium heat and add the chicken with its marinade. Cook, stirring frequently, for 5 minutes. Check that the chicken is piping hot and cooked through, then add the onions and bell peppers. Stir together, then transfer them to a serving dish.
  • Take the warmed tortillas out of the oven and put them on the table alongside the chicken mixture and all the other accoutrements. Wrap what you fancy in the tortillas and eat straightaway.
  • Make Ahead Note:
  • The onion and bell peppers can be cut 1 day in advance. Cover tightly with plastic wrap and refrigerate. The chicken can be cut 1 day in advance and tossed with the oregano, cumin and garlic flavored oil. Cover tightly with plastic wrap and refrigerate. Add the lime juice and salt just before cooking.

2 skinless chicken breast fillets, preferably organic
1 teaspoon dried Mexican oregano, or regular oregano
1 teaspoon ground cumin
1 teaspoon kosher salt or 1/2 teaspoon table salt
1/2 teaspoon sugar
1 tablespoon garlic flavored oil, plus 2 teaspoons
2 tablespoons lime juice
2 tablespoons peanut oil or regular olive oil
2 onions, peeled, halved and cut into thin half-moons
8 soft flour tortillas
1 red bell pepper, cored and seeded, cut into strips
1 orange bell pepper, cored and seeded, cut into strips
1 yellow bell pepper, cored and seeded, cut into strips
1 cup grated Cheddar or Monterey Jack cheese
1/2 cup sour cream or creme fraiche
1 (7-ounce) can corn niblets, drained (or 2/3 cup drained canned corn)
1 large avocado (or 2 small), finely diced and dressed with 1/2 teaspoon kosher salt and 2 teaspoons lime juice
1/4 to 1/2 head iceberg lettuce, shredded
1/3 cup chopped fresh cilantro leaves

Steps:

  • For the chicken: In a large resealable plastic bag, add the chicken, olive oil, lime juice, chile powder, cumin, onion powder, garlic powder, salt and a few grinds of black pepper. Seal, squish around a bit to mix and leave at room temperature for 15 minutes.
  • For the veggies: In a large bowl, combine the peppers and onions blend and lime zest. Season with salt and pepper, toss together and set aside.
  • On a large, seasoned cast-iron griddle on medium-high heat, add the chicken right from the marinade and spread it out so it doesn't steam; you may have to cook it in batches. Cook until the chicken is light golden and cooked through, 4 to 5 minutes. Once a batch is finished, try to pile it on a cool area of the griddle until you finish the rest or pile in a bowl. Once done with the chicken, cook the veggies the same way.
  • Pile the chicken and veggies back onto the griddle and gently spritz and sprinkle just enough beer to allow the griddle to steam a bit while tossing the chicken and veggies together just to warm through. Drink the rest of the beer. Serve with the fixins: tortillas, avocado, lime wedges, cilantro, salsa, chopped tomatoes and shredded cheese.

3 pounds chicken breast strips
1/4 cup olive oil
2 tablespoons lime juice
2 tablespoons ancho chile powder
2 tablespoons ground cumin
2 tablespoons onion powder
1 tablespoon garlic powder
1 tablespoon kosher salt
Freshly ground black pepper
One 14-ounce bag frozen peppers and onions blend, defrosted
Zest of 1 lime
Kosher salt and freshly ground black pepper
12 ounces pilsner beer
Warm flour tortillas
Sliced avocado
Lime wedges
Fresh cilantro leaves
Salsa verde and rojo
Chopped fresh tomato
Shredded cheese blend

Steps:

  • Place chicken strips in a bowl and stir in lime juice, cumin, paprika, chili powder, cayenne pepper, and black pepper; marinate chicken for 15 to 30 minutes.

Set chicken and vegetables aside.
  • Place corn tortillas on a microwave-safe plate with damp paper towels separating each tortilla. Cook in microwave until tortillas are hot and flexible, about 30 seconds.
  • Place corn tortillas onto 4 serving plates; spread each tortilla with 1 tablespoon sour cream.

STEAK (OR CHICKEN) FAJITAS

These are so quick and tasty. You can use strips of boneless chicken breast instead of the beef. Feel free to double the marinade. The flavor is so great for such a short marination time. You can can do them up ahead of time and have the meat sit longer if you wish.
