FRUITY SWEET AND SOUR SAUCE
This is the light pink and fruity tasting sweet and sour sauce that they serve in Chinese restaurants. The maraschino cherry juice makes the difference; don't ever throw it away again! Serve warm as a dipping sauce, or over meat as a sweet and sour sauce.

THE BEST SWEET AND SOUR SAUCE
This came from Taste of Home's Quick Cooking and is much better than anything I've created on my own. The sauce is thick and gooy and goes well with so many things.

Steps:
- Microwave the lime in a small bowl and set aside until it is just cool enough to handle. In a small bowl, create a slurry by gradually whisking 2 tablespoons water into the cornstarch. Through the feed tube of a running blender add, 1 at a time, the vinegar, chile pepper, garlic, ginger, salt, black pepper, and sugar. Then squeeze the lime from the micro-waved lime through the feed tube into the mixture. Then, leaving the blender running, add the slurry to the sauce, and pour the olive oil in a slow thin stream.
- Heat the oil in the deep-fryer to 375 degrees F, or as directed by the manufacturer's instructions for similar foods.
- Season the flour with salt and pepper and dredge the chicken strips, allowing any excess flour to fall away. Deep-fry the chicken and drain on paper towels.
- Serve with sweet and sour sauce.
GINGER SWEET AND SOUR SAUCE
I usually use this as a dipping sauce when putting out dumplings. It also works nicely as a stir fry sauce. This sauce also works with sugar free preserves.

- Warm the preserves in a small saucepan over med-low heat. When preserves have melted add rest of ingredients. Taste to make sure you have the right balance of sweet to sour, some preserves are sweeter than others. You may need to add just a dash more vinegar or a heaping spoonfull of preserves to balance the flavors.

LINDA'S SWEET AND SOUR SAUCE
My mother-in-law gave me the best recipe for sweet and sour sauce that I've ever tried. We like it best on meatballs, but it's also good on leftover cooked chicken or roast pork, and my children even like it on chopped-up hotdogs ! My husband prefers it to be served with mashed potatoes on the side, so he can scoop some of the sauce over them.
