SPICY HONEY-GLAZED HAM

- Position an oven rack in the lowest position; preheat to 350 degrees F. Trim off any skin from the ham, leaving a 1/4-inch layer of fat. Score the fat with a sharp knife in a 1-inch crosshatch pattern without cutting through to the meat. Place the ham flat-side down in a roasting pan and add the chicken broth to the pan. Cover with foil and bake 1 1/2 hours.
- Meanwhile, make the glaze: Whisk the honey, brown sugar, mustards, vinegar, hot sauce, thyme and red pepper flakes in a medium bowl. Remove 3/4 cup of the glaze to a separate bowl and set aside for serving. Remove the ham from the oven, discard the foil and brush with about one-quarter of the remaining glaze. Continue baking, brushing with the glaze and the pan juices every 30 minutes, until the ham is a deep reddish-brown and a thermometer inserted into the center registers 140 degrees F, 1 to 1 1/2 more hours. (Add 1/2 cup water to the pan if the juices dry out.)
- Transfer the ham to a cutting board and let rest 20 minutes before slicing. Serve with the reserved glaze.

- Rub four 8-ounce filets mignons with Pepper-Ancho Rub on one side; drizzle with vegetable oil. Grill rub-side down over high heat, about 4 minutes; flip, reduce the heat to medium or move the steaks to a cooler spot and grill 4 more minutes (for medium-rare), brushing often with Mint Glaze (recipe below). Top with more glaze.
- Whisk all of the ingredients in a bowl.
- Whisk the mustard, honey, horseradish and mint in a bowl; season with salt and pepper. Set aside a few tablespoons for the finished steaks.

- In a large saucepan, heat olive oil over medium heat. Add onions; saute until softened and lightly browned, 5-6 minutes. Add garlic; cook 1 minute more. SPICY HAM SLICE/STEAK
I'm not a big ham fan but I just LOVE this dish. Easy to do, very forgiving - you can substitute different kinds of juice or soda. Ham steaks freeze well and thaw fast so it's good for a week night. Fairly economical if you get the ham on sale. I love to have it with orange rice where I substitute about a half a cup of OJ for water with plain old white or even brown rice, and a nice green salad. Enjoy!

- Prick ham slice with a fork all over to make holes and slash the edges so it won't curl during baking.
- Place in baking dish just big enough to hold slice.

- Arrange your oven rack to be 2 to 3 inches from the broiler. Heat the broiler to high heat.
- Dry the ham steak with paper towels and set on the broiler pan.
- In a small sauce pan, combine the 6 glaze ingredients. Bring to a simmer over medium heat for 2 to 3 minutes while constantly stirring.
- Brush one side of the ham with the glaze and broil until the glaze is bubbling and browned - 4 to 5 minutes.
- Remove and flip the ham steak and brush the other side - repeat the process.
- Serve immediately.
BROWN SUGAR AND SPICE DRY HAM RUB
I created this recipe when frustrated by the packets of glaze that came with spiral hams bought at the grocery store. It is sweet, with the perfect amount of spice, and makes a nice crust on the outside of the ham, similar to the famous ham store's. This recipe makes enough to cover a 3 to 5 pound ham. Store in an airtight tin if not using immediately.
