BASIC SWEET DOUGH

I have made plenty of sweet breads, and I always favored the Hungarian Coffee Cake and Swedish Tea Ring. This sweet dough recipe is my mother's, and this works out really well because it is an old recipe. I have also used others which were more recent and still turned out well, but this one is the best I have found. Use this recipe for the basis of your sweet breads.

Basic Sweet Dough image

Steps:

  • Scald milk in a medium saucepan. Add cold water to scalded milk. Remove 1/4 cup liquid; mix yeast into liquid when cooled to lukewarm. To liquid in saucepan, add salt, sugar, shortening, and eggs. Add dissolved yeast to saucepan. Mix well.
  • Sift and measure the flour into a large bowl. Make a well in the flour, and pour the liquids into the well. Stir with a large wooden spoon until liquid disappears.
  • With one hand, mix dough in bowl using swinging rotary motion. Gradually form dough into smooth ball, then knead in bowl for 2 minutes. Brush top with melted shortening. Cover, and allow dough to rise at room temperature until doubled in bulk, about 2 hours.
  • Punch down dough. Use dough for any sweet bread recipe.

Steps:

  • Warm 1/2 cup water and the milk in a saucepan over low heat until a thermometer registers 100 degrees F to 110 degrees F. Remove from the heat and sprinkle the yeast on top, then sprinkle with a pinch of the sugar; set aside, undisturbed, until foamy, about 5 minutes.
  • Whisk the melted butter, egg yolk and vanilla into the yeast mixture until combined. In a large bowl, whisk the flour, the remaining sugar, the salt and nutmeg. Make a well in the center, then add the yeast mixture and stir with a wooden spoon to make a thick and slightly sticky dough. Turn out onto a floured surface and knead until soft and elastic, about 6 minutes. Shape into a ball.
  • Brush a large bowl with butter. Add the dough, turning to coat lightly with the butter. Cover with plastic wrap and let rise at room temperature until the dough is doubled in size, about 1 hour, 15 minutes.
  • Turn the dough out of the bowl and knead briefly to release excess air; re-form into a ball and return to the bowl. Lightly butter a large piece of plastic wrap and lay it directly on the surface of the dough. Cover the bowl tightly with plastic wrap and refrigerate at least 4 hours or overnight.

  • COCOA DOUGH:
  • Add 2 tablespoons sifted non alkalized cocoa powder to the dry ingredients before mixing in the butter. Double the quantities for the 2 crust recipe. If the dough seems dry after adding egg(s), add a teaspoon or two of water, no more.

CAJUN SWEET DOUGH

Down in Louisiana this dough is used to make what we call Cajun Sweet Dough. The traditional filling is fig and it is made into turnovers, but it can also be used as pie crust, although it is not as flaky. It is supreme as turnover dough, for ANY kind of filling.

Steps:

  • Sift together the flour, baking powder, and salt. Set aside.
  • In a separate bowl, beat the butter, then add the sugar a little at a time. Add the vanilla. Beat the mixture until it is nice and fluffy. Beat in the egg. Stir in the flour mixture alternately with the milk.
  • Before you use this dough, be sure you chill it well at least 2 hours or even overnight.
  • To make turnovers: Preheat the oven to 350 degrees F (175 degrees C). Roll dough out to 1/4 inch thickness on a lightly floured surface. Cut into 3 inch squares. Spoon about 2 teaspoons of the pie filling into the center of each square and fold over to form a triangle. Pinch the seams to seal or press with the tines of a fork. Place at least 2 inches apart on a greased baking sheet. Brush with egg white.
  • Bake for 12 to 15 minutes in the preheated oven, until golden brown on the tops and bottom.

Rich Sweet Pastry Dough image

Steps:

  • In a bowl with a pastry blender or in a food processor blend or pulse together flour, sugar, and salt. Add butter and blend or pulse until mixture resembles coarse meal. Add yolks and, if blending by hand, stir until mixture forms a dough. If using a food processor pulse until mixture forms large clumps and with hands form mixture into a dough.
  • On a work surface smear dough in 3 or 4 forward motions with heel of hand to slightly develop gluten in flour and make dough easier to work with. Form dough into a ball and flatten to form a disk. Chill dough, wrapped in plastic wrap, at least 1 hour and up to 1 day.

Steps:

  • Dissolve 1 tsp.
  • sugar in warm water in large bowl.
  • Sprinkle in yeast.
  • Let stand 10 minutes, then stir well.
  • Heat milk to lukewarm.
  • Stir in 1/4 cup sugar and salt.
  • Add lukewarm milk mixture, butter,egg and 1 cup flour to dissolved yeast mixture.
  • Beat for 3 minutes.
  • Stir in about 3 cups remaining flour gradually.
  • If necessary, add more flour to make a soft dough which leaves sides of bowl.
  • Turn out onto lightly floured board.
  • Knead dough, adding more flour as necessary, until dough is smooth, elastic and no longer sticky (about 5 minutes).
  • Place in lightly greased bowl.
  • Turn dough to grease top.
  • Cover with greased waxed paper and tea towel.
  • Let rise in warm place until doubled (about 1 hour).
  • Punch down.
  • Turn out onto lightly floured board and round up into a ball.
  • Cover and let rest 10 minutes.
  • Shape and prepare according to one of the following variations.
  • (These variations can also be made with Basic White Bread dough).
  • Dinner Rolls: Divide each portion of prepared dough into 16-24 equal pieces depending on size of buns desired.
  • Shape into balls and flatten slightly.
  • Place on greased baking sheet or in muffin cups.
  • Cover with a tea towel and let rise in warm place until doubled (about 30 minutes) Bake at 375F for 12-15 minutes or until golden.
  • Brush with melted butter, if desired, for soft shiny crust.

Steps:

  • Heat milk in a small saucepan over medium heat or in a microwave until an instant-read thermometer registers 110°F-115°F. Transfer milk to a 2-cup measuring cup; stir in 1 tablespoon sugar. Sprinkle yeast over milk and whisk to blend. Let sit until yeast is foamy, about 5 minutes. Add eggs; whisk until smooth.
  • Combine remaining 4 tablespoons sugar, flour, and salt in the bowl of a stand mixer fitted with a dough hook. Add milk mixture. With mixer running, add 1/2 cup room-temperature butter, 1 piece at a time, blending well between additions. Mix on medium speed for 1 minute. Knead on medium-high speed until dough is soft and silky, about 5 minutes.

My Grandma raised 6 kids, and has oodles of Grandchildren and Great-Grandchildren. She loved to bake -- most of her recipes were from memory. Before she passed away, I was able to watch her make this dough and wrote the measurements down. It is a favorite of all the family, so I wanted to share it with everyone. Can Do Quick Sweet Dough image

Steps:

  • Dissolve yeast in the warm water in a large mixing bowl. Add buttermilk, eggs, 2 1/2 cups flour, butter, sugar, baking powder and salt.
  • Blend 30 seconds on low speed, scraping sides and bottom of the bowl.
  • Beat 2 minutes on medium speed. Stir in remaining 3 cups of flour. Dough should be soft and slightly sticky.
  • Knead for about 5 minutes on a lightly floured board. Shape as desired. Let rise in a warm place until double. (about 1 hour -- depending on temperature) Dough is ready to bake if slight dent remains when touched. Bake at 375 degrees. I don't have a bake time, but 20 minutes is about standard. It is best to keep a close eye.

Fried Sweet Dough image

Steps:

  • Heat the vegetable oil in a wide saucepan to 350 degrees F. (The oil should be an inch or two deep.)
  • For the filling: Whisk together the ricotta, mascarpone, amaretto, and confectioners' sugar in a bowl until smooth. Stir in the candied peel and chocolate. Refrigerate the filling while you make the zeppole.
  • Combine 1 cup water, the butter, sugar, and salt in a medium saucepan over medium heat. Bring to a boil, stirring to melt the butter. While stirring, add the flour and zest all at once. Cook, stirring constantly, until the dough dries out and pulls away from the sides of the pan. Remove from heat, and add the eggs one at a time, stirring vigorously to incorporate one before adding the next, until the dough is completely smooth.
  • Drop a batch of zeppole in 2-tablespoon dollops (a small ice-cream scoop is perfect for this) into the oil, making sure you don't crowd them in the pan, because they will grow in size. Fry the zeppole, turning on all sides, until light and golden brown all over, about 5 minutes per batch. Drain on paper towels, and repeat with the remaining dough.
  • To serve, when cold cut the zeppole in half with a serrated knife and with a pastry bag pipe the filling onto the bottom half. Cover and dust with additional confectioners' sugar if desired.

BASIC RICH SWEET YEAST DOUGH

An old fashioned sweet dough recipe for coffee cakes, coffee bread, babka, buns, kolacky, rolls, and so on. Prepare 24 hours ahead of time. This rich dough needs the chilling and long rest period to produce a wonderful versatile dough. You may halve the recipe if you wish.

  • Dissolve yeast in 1/4 cup warm water and set aside until foamy.
  • Heat milk, shortening, sugar and salt to melt shortening.
  • Cool to warm and add yeast mixture, egg yolks and whole eggs.
  • Beat well by hand.
  • Gradually beat in by hand 6 cups of flour and the cardamom.
  • Knead well on a floured surface only adding additional flour to make a smooth and elastic dough.
  • Place dough in an oiled bowl, turn to coat with oil and cover and let rise double in volume.
  • Punch down and cover dough and refrigerate overnight in large bowl.
  • When ready to use, punch down and knead briefly to warm up dough.
  • Use dough as you wish for coffee cakes, sweet breads, buns, etc.
  • You may divide dough into 6 buns, or 4 equal pieces to make 4 small loaves or braids.
  • If braiding, divide each piece into 3 loose strands and braid and tuck under ends.
  • Brush with melted butter.
  • Place on baking sheets/pans and let rise double in volume.
  • Bake in a 350F oven about 30 minutes or golden and tested done.
  • Remove from pans/baking sheet to cool on rack.
  • Mix icing ingredients and drizzle over warm cake/bread.
  • Yield: approx.
  • 6 buns, 4 small braids, or 2 large loaves.

If making Apricot-Anise Tarts, add aniseed.) Add milk mixture. With mixer running, add 1/2 cup room-temperature butter, 1 piece at a time, blending well between additions. Mix on medium speed for 1 minute. Knead on medium-high speed until dough is soft and silky, about 5 minutes.
  • Brush a medium bowl with some melted butter; place dough in bowl. Brush top of dough with remaining melted butter; cover with plastic wrap. DO AHEAD: Can be made 1 day ahead. Cover with plastic; chill.
