ORANGE-SPICED SWEET POTATO CASSEROLE
This recipe uses less sugar and butter than a traditional sweet potato casserole. Nutrition Note: This recipe has been flavored with fresh orange and uses less sugar and margarine than a traditional sweet potato casserole. Nutrition Note: Sweet potatoes are loaded with vitamin A and have a low glycemic index rating, which is important for diabetics. The carbohydrates that are present break down more slowly causing glucose levels to rise more gradually. Baking sweet potatoes instead of cooking in water helps to bring out the natural sweet flavor.

- Preheat oven to 400 degrees F.
- Wash and dry potatoes. Pierce potatoes in several places with a fork. Bake potatoes 1 hour or until tender. Cool. Peel potatoes, place in large bowl, and mash.
- Stir in orange peel, orange juice, 2 tablespoons margarine or butter, 2 tablespoons brown sugar, cinnamon, cumin, and salt; mix well. Spoon into lightly greased 10x6-inch baking dish.
- Combine pecans, flour, 1 tablespoon brown sugar, and 1 tablespoon margarine or butter; mix well. Sprinkle evenly over potatoes.
- Bake 30 to 35 minutes or until hot. Let stand 5 minutes.

- Preheat oven to 450°F. and butter a baking dish, 13 by 9 by 2 inches. Prick potatoes and bake on a foil-lined baking sheet in middle of oven until very soft, about 1 1/2 hours. Scoop flesh into a large bowl and mash with butter, sugar, juice, marmalade, gingerroot, and salt. Spread potato mixture evenly in baking dish. Potato mixture may be made 1 day ahead and chilled, covered. Bring potato mixture to room temperature before proceeding.
- Make topping:
- In a food processor grind cookies fine. Add butter and pulse motor until mixture resembles soft cookie dough. Wrap topping in wax paper and chill until firm, about 2 hours. Topping may be made 1 day ahead and chilled, covered.
- Preheat oven to 400°F. Crumble topping over potato mixture and bake in middle of oven until topping is browned lightly, about 25 minutes.

- To make the casserole, heat oven to 375 degrees. Bake sweet potatoes until very tender, about 1 hour 20 minutes. Remove and let cool. Reduce heat to 350 degrees.
- When potatoes are cool enough to handle, cut them in half, scoop out flesh and mash until smooth. You should have about 4 cups. Using a hand mixer, mix in brown sugar, orange juice, heavy cream, butter, vanilla and salt. Place in a casserole dish.
- To make the topping, combine the butter, brown sugar and pecans. Sprinkle over sweet potato mixture. Bake for 30 minutes. Serve hot.

- 1. Boil sweet potatoes till tender. When cooled enough to handle peel if not already. Then add to a large bowl.
- 2. Add melted butter, & blend into potatoes. Or cut butter into pieces and add while potatoes are still hot.
- 3. Mash potatoes to combine with butter.
- 4. Add eggs and beat or mix till blended.
- 5. Add milk, cinnamon, nutmeg & orange juice, & blend together.
- 6. Combine vanilla bean paste, orange extract together in small cup along with orange zest, then stir to mix, and pour into sweet potato mixture & blend together.
- 7. Beat potatoes with mixer, and remove any strings that wrap around the beaters from the potatoes. See picture. Repeat if needed.
- 8. Add the flour, and beat to blend.
- 9. Spray a 9X13X2 inch casserole dish with non stick cooking spray, and pour in potato mixture, Smooth out top.
- 10. Prepare the topping by combining all of the topping ingredients in a medium size bowl. Then blend together till mixture is combined & crumbly.
- 11. Sprinkle topping over top of potatoes, & bake in a preheated 350 degrees F. oven for about 45 minutes or until potatoes are hot & bubbly. Allow to cool at least about 15 minutes to come together before serving or a bit longer if needed.

- 1. Place sweet potatoes in a large saucepan and cover with water. Bring to a boil. Cover and cook over medium heat until tender, 10 to 15 minutes. Drain well and return to the pan. Mash with a potato masher. Measure out 3 cups. (Reserve any extra for another use.).
- 2. Preheat oven to 350°F Coat an 8-inch-square (or similar 2-quart) baking dish with cooking spray.
- 3. Whisk eggs, oil and honey in a medium bowl. Add mashed sweet potato and mix well. Stir in milk, orange zest, vanilla and salt. Spread the mixture in the prepared baking dish.
- 4. To prepare topping: Mix flour, brown sugar, orange juice concentrate, oil and butter in a small bowl. Blend with a fork or your fingertips until crumbly. Stir in pecans. Sprinkle over the casserole.
- 5. Bake the casserole until heated through and the top is lightly browned, 35 to 45 minutes.
- Makes 10 servings, about 1/2 cup each.

Broil the sweet potatoes until the topping is lightly browned and bubbly, 2 to 4 minute. Serve warm.
