Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut each sweet potato in half crosswise. Quarter each half lengthwise. Cut each quarter evenly into 2 to 4 pieces. Repeat with remaining sweet potatoes.
  • Place sweet potatoes on a rimmed baking sheet. Add salt. Drizzle olive oil on top. Stir up potatoes to coat with oil; spread out evenly on the baking sheet. Season with pepper.
  • Bake in the preheated oven, stirring every 10 minutes, until browned, 20 to 30 minutes.

  • Put cut fries into large ziploc bag with olive oil, put in salt, garlic and cinnamon and shake to coat.
  • Place fries onto baking sheet leaving space between fries.

  • Preheat your oven to 450 degrees Fahrenheit. Get out 2 large, well worn, seasoned baking sheets.
  • Scrub the potatoes and slice into 1/2" thick disks, lay the discs flat and cut into 1/2â€� batons or matchsticks. Put cut sweet potatoes in a large bowl -- big enough to toss them around.
  • In a smaller bowl, combine the egg white, oil and seasoning. Whisk with a fork or whisk until combined (and "not snotty" as my eloquent friend, Kristen, puts it) or get fancy and emulsify with a hand blender.
  • Pour the oil/egg white mixture over your sweet potatoes and toss to coat evenly.
  • Using your immaculately clean hands lift the coated sweet potato batons from the bowl (allowing any excess gunk to drip back into the bowl) and transfer to the baking sheet. Spread the fries out in a single layer so that none are touching -- this is a drag but critical to the crispiness factor of the finished fry. Bake both sheets in the oven and bake for about 15 min, at which time the fries will be half done.
  • Remove both trays from the oven and, using a metal spatula, loosen the fries from the baking sheet. Give the sheet a vigorous shake to make sure that all are free. Use a pair of tongs to turn each fry individually -- again, tedious but crucial to the crispiness factor.
  • Return the pans to the oven for another 10 - 15 minutes, until the fries are deep golden, brown and tender on the inside. You may have to sample a few just to be sure.
  • Once done remove fries from the oven, season cautiously with sea salt (they may already be quite salty from the Cajun seasoning) and serve right away. These babies do not like to sit around and you worked hard for all that crispiness!

Crispy Sweet Potato Fries image

Steps:

  • Set a pot of water on medium-high heat to boil.
  • Meanwhile, peel the sweet potatoes, slice them into roughly 1/3 inch sheets, then into roughly 1/3 inch thick fries. Preheat the oven to 475 degrees F.
  • Once the water has boiled, add the vinegar and a 3 finger pinch of salt, stirring to dissolve the salt. Add the sweet potato fries to the boiling water and set a timer for 6 minutes. When the time is up, drain the fries into a colander. Using a fork lightly scratch the surface of the fries to help the slurry mixture mix into the nooks and crannies.
  • Meanwhile, add the 50 g cornstarch and 80 g of cold water to a bowl. Stir until completely combined with no clumps remaining. Add the still hot, drained fries to the bowl and toss until the slurry thickens and sticks to the fries. If you need a little more cornstarch feel free to add it. The mixture should lightly coat the fries.
  • Using tongs, move the fries to a wire rack over a large baking sheet. Evenly space the fries so none of them are touching. Using a squirt bottle or spoon, drizzle the peanut oil over the fries trying to get an even coating over each one (you could also use a baking spray though I didn't find it works as well). Add the sweet potatoes to the oven and set a timer for 15 minutes.
  • Pull the baking sheet out and flip the fries with a spatula. At this point, you should be able to see some blistering on the outside but the fries won't be overly crisp. If they look a little dry, drizzle over more peanut oil. Add them back to the oven and bake for another 10 to 15 minutes. At this point, they should be slightly browned and crispy though it could take longer depending on the size of the fry, how crowded the pan is or the oil used. If they aren't crispy, let them go longer!
  • Pour in the fries into a bowl. Immediately a pinch of salt and a couple of cranks of black pepper. Toss the fries in the seasoning and enjoy with the dipping sauce of your choice. Feel free to add spices, fresh herbs, cheeses, or any flavorings of your choice during this stage.

  • Preheat your oven to 200C.
  • Wash and peel your sweet potatoes, then cut them into sticks around 1cm x 1cm wide. Lay them flat on a baking tray and drizzle over the olive oil. Toss the sweet potatoes until all the sticks are evenly coated with oil.

  • Scrub the sweet potatoes, leave unpeeled, and cut into fries or rounds. (Trust me, rounds are much easier!).
  • Combine olive oil and melted butter.
