  • Stir brown sugar, soy sauce, white sugar, water, white wine vinegar, rice vinegar, and ground ginger together in a saucepan; bring to a boil, reduce heat to medium-low, and cook until reduced in volume by half, about 30 minutes.
  • Let glaze cool to thicken, at least 1 hour.

Sweet Soy-Glazed Chicken image

Steps:

  • Preheat the oven to 450 degrees F. Mix the soy glaze with the rice vinegar and garlic. Divide the sauce between 2 small bowls and add 2 tablespoons water to one bowl; set aside.
  • Season the chicken with salt and pepper. Heat the vegetable oil in a large ovenproof nonstick skillet over medium-high heat. Add the chicken skin-side down and cook until the skin is golden and crisp, about 6 minutes. Flip and cook until golden on the other side, about 4 more minutes. Pour the thinned soy glaze mixture over the chicken. Transfer to the oven and bake, 10 minutes.
  • Meanwhile, combine the vegetables, 2 tablespoons water and 1/2 teaspoon salt in a microwave-safe bowl; cover loosely with plastic wrap. Microwave until tender, about 4 minutes. Stir in 1 tablespoon of the remaining soy glaze mixture.
  • Remove the chicken from the oven; brush with the remaining soy glaze mixture. Return to the oven and bake until the chicken is cooked through, about 5 minutes. Serve with the vegetables and rice.

Steps:

  • Preheat oil to about 160˚C (320˚F).
  • Season both sides of the chicken wings with salt and pepper. Coat with potato starch.
  • Fry the wings at 160˚C (320˚F) approximately 7 minutes.
  • Heat oil to about 180˚C (350˚F). Fry the wings until golden brown, about 3 minutes. Drain them on paper towels. Set aside.
  • Make the glaze. Combine all the glaze ingredients in a shallow pan and bring it to a simmer. Reduce until thick. Toss in the wings.
  • Sprinkle toasted white sesame.

  • Chop enough shallots to measure 1 cup. In a heavy saucepan cook shallots in oil over moderate heat, stirring, until softened, about 3 minutes. Stir in soy sauce, water, sugar, jam, gingerroot, garlic, allspice, and red pepper flakes and simmer, stirring occasionally, until reduced to about 3/4 cup, about 20 minutes.   • Preheat oven to 400.
  • Mix glaze ingredients together, stirring until dissolved. Marinate fish filets for at least 30 minutes.

Turkey Yakitori Burgers With Sweet-Soy Glaze image

Steps:

  • GLAZE: In a small saucepan bring the Mirin, soy sauce, maple syrup, brown sugar, ginger & lemon juice to a boil. Mix the cornstarch & water together to dissolve the cornstarch. Stir into the boiling mixture. Let boil for about 15 minutes, until thickened. Set aside to cool. Once cooled mix 1 tabelspoon of the glaze into the mayonnaise & set aside to top the burgers.
  • BURGERS: Mix all the burger ingredients together with your hands & form into two patties. Grill over medium-high heat for 3 minutes per side. Brush with glaze & flip. Grill 2 more minutes. Brush with glaze & flip again cooking 2 more minutes.
  • When the burgers have about 5 minutes left put the onions on the grill & brush them with the glaze. Grill until they are soft.
  • Brush both the burgers & onions with glaze once more before serving.
  • Serve the burgers on rolls topped with the mayonnaise & lettuce. The onions can be eaten on the side or on the burgers.
