EASY VIDALIA ONION CASSEROLE
This is a delicious side dish to any meal, even people that do not like onions, like this recipe! also, this can be prepared a day ahead, and baked when ready.

Steps:
- Set oven to 350 degrees.
- Butter a 2-qt casserole dish.
- In a large saucepan, melt butter.
- Add onions to pan, over high heat, saute until soft, and just starting to brown, about 20-25 minutes
- Remove from heat.
- Place half of the onions in the baking dish; cover with half the crackers, and half of the Parmesan.
- Repeat to make another layer of onions, crackers and Parmesan Bake, uncovered, until cheese on top is lightly browned, about 25 mins Serve warm.
- Note: if made a day ahead, let cool, and keep refrigerated until time to reheat for serving.
- Delicious!

SWEET VIDALIA ONION CASSEROLE
This recipe was given to me by a friend. It's unusual but absolutely delicious. Great for Pot Lucks; when everybody brings the same dish, yours is gauranteed to be DIFFERENT! I hope you enjoy it.

- Butter a 9" x 13" baking dish. Layer in onions, cheese and chips. With the last layer of chips in place, combine soup, milk and pepper and pour over casserole.
- Bake at 350° for 45 minutes to an hour.

VIDALIA ONION CASSEROLE
This is a bit rich but oh is it good! It has a sweet taste to it but can be amped up with hot sause and still taste great! Great for the diebetic that wants sweets but can't have them.

- Peel and chop onions. Then saute the onions in the butter. Let onions cool. Beat eggs and sour cream together and add to onion mix. Stir in salt and pepper. Pour into a 9 by 11 inches baking pan. spread cheese on the top. Bake for 20 min at 450, then reduce heat to 325 and bake an additional 20 minute.
- Optional: Add hot pepper sause to taste with the salt and pepper to give it a less sweet taste and a little kick.

- In a large skillet over medium heat, saute onions in butter until tender. Remove from the heat; stir in sour cream. , Spoon half into a greased 1-qt. baking dish. Sprinkle with cheese. VIDALIA ONION CASSEROLE

Steps:
- Preheat oven to 350F.
- Cut onions in quarters and slice very thin.
- Set aside. Melt 1/4 cup butter in saucepan and pour over stuffing.
- Mix thoroughly and line 1 quart casserole dish with stuffing mixture. Melt 2 tablespoons butter in pan and saute onions until tender.
- Pour over stuffing in casserole dish.
- Mix eggs, milk, salt and pepper.
- Pour mixture over onions and sprinkle cheese over top.
- Bake for 45 minutes or until slightly brown.

VIDALIA ONION PIE
Steps:
- For the crust: All ingredients should be cold. Combine all the dry ingredients in a large mixing bowl. Add shortening and butter. Using a pastry blender cut in the shortening and butter until the mixture resembles coarse meal. Drop by drop, add cold water. Mix in with the fingertips, not with the hands as the palms will warm the dough. Continue mixing water in until the dough begins to hold together without being sticky but not crumbly. Place dough in plastic wrap. Fold over plastic wrap and press down to form a disk. This will make rolling out easier after chilling. Finish wrapping in plastic and place in the refrigerator for at least 1 hour.
- Lightly spray a deep 9-inch pie pan or an 8 1/2-inch fluted flan pan. Roll out dough and place in pie plate. Return to the refrigerator until filling is ready. Makes pastry for a 9-inch single crust pie.
- Preheat oven to 450 degrees F.
- For the filling: Brush egg wash on the inside of pie crust. Return to refrigerator until filling is ready. Over medium heat, melt butter. Add onions and saute until translucent. Do not brown. Combine eggs, sour cream and flour. Add onion mixture. Season with salt and pepper and pour into chilled pie crust. Top with Parmesan. Bake for 20 minutes. Reduce oven temperature to 325 degrees F for the last 20 minutes or until center is set.

Steps:
- Wash chicken and pat dry.
- Brown in the 2 Tbsp.
- of oil and drain on paper towel.
- Grease a 1 1/2 qt.
- casserole dish.
- Layer sliced potatoes on the bottom, the chopped onion next.
- Pour soup over all (I added just a pinch of milk to my soup to make it pourable).
- Place chicken breast on top, sprinkle with paprika.
- Cover tightly with tinfoil and bake in a preheated 350* oven for 1 hour.
- **This is the original recipe.
- When I made it, I used cream of chicken soup because we don't like mushroom.
- I also used bite sized pieces of stir fried chicken, but still cooked it for an hour.
- I guess because it's covered in foil, it didn't dry out.
- Was good enough for all 3 of us to like it!
- *LOL*(that doesn't happen often) This would be a very easy recipe to double or triple!
