GLAZED FUNNEL CAKES

- Make the batter: In a large bowl, whisk together the Irish cream, eggs, milk and vanilla. Sift the flour, confectioners' sugar, cocoa and baking powder right over the wet ingredients. Add the salt and whisk to combine. Transfer the batter to a large resealable kitchen bag or pastry bag. Refrigerate for at least 30 minutes and up to 4 hours.
- Make the glaze: In a small bowl, whisk the Irish cream and confectioners' sugar together until smooth. Set aside until ready to serve.
- Get ready: Meanwhile, preheat the oven to 350 degrees F. Pour the oil into a wide heavy-bottomed pot or pan. Heat the oil to 350 degrees F over medium heat. Fit a baking sheet with a wire rack. Have a spider, fish spatula, or slotted spoon on hand.
- Fry: Cut a small corner of the plastic bag or bottom of the pastry bag to create a small opening. Pour the batter from the bag into the hot oil, streaming about 5 overlapping rings of batter. Allow the batter to fry until it firms up and turns brown on the underside, 2 to 3 minutes. Use the spider to gently lift the cake out of the oil and flip it to the other side. Fry until golden brown, an additional 2 to 3 minutes. Transfer the funnel cake to the wire rack. Sprinkle with some granulated sugar. Use up the remaining batter to fry more funnel cakes, allowing the oil to return to 350 degrees F before each batch. You can hold the funnel cakes on the baking sheet in the oven while you make the remaining funnel cakes.
- Serve: Arrange the funnel cakes on plates, drizzling generously with the glaze.
SWEET CHILLI PRAWN CAKES
These prawn cakes are a great appetizer or small finger food to serve with drinks. They can be made in huge batches, all shaped and kept in the freezer. And when you need them (which will be often), just take them out and shallow fry. It is ready to be served. Great for unexpected guest.

- Place prawn meat, egg white, lime leaves, sweet chili sauce, corn flakes and rice flour in a food processor and process till the mixture is combined, BUT not smooth.
- With wet hands, shape the mixture into small cakes.
- Heat enough oil in a frying pan over medium heat to shallow fry.
- Add prawn cakes a few at a time and cook for 3 minutes on each side, or till golden brown.
- Place the cooked prawn cakes on kitchen towels to soak up the excess oil.
- Serve with the extra sweet chili sauce.
SWEET CHILLI PRAWN PATTIES
Delicious inclusion in a seafood platter, anti pasto or just as an entree/ starter. When I do this at home I use Chilli Wine jelly for the glazing, it comes from the Disaster Bay Chilli company in Eden NSW and is brilliant. If not from Australia substitute sweet chilli sauce for a similar taste

Steps:
- Mince prawns in blender or food processor.
- Add ginger, garlic, lemon grass, coriander and fish sauce and mix well.
- Add egg and stir through.
- Season to taste.
- Check consistency and add flour as required to stiffen up mixture.
- Make into small patties using 1 teaspoon of mixture at a time.
- Refrigerate for 1 hour then pan fry or cook on bbq grill until golden.
- Add sweet chille sauce and stir gently until sauce caramalises and adheres to patties.
- Serve while hot.

- Combine the piloncillo, cheese, and canela in a bowl and knead in the masa until uniformly distributed. Add a bit of water if it feels too dry or a little masa harina if it's too sticky. Shape the dough into 12 even balls.
- Place enough lard in a heavy pot to reach a depth of least 3 inches and heat to about 365°F. (You can check the temperature by dipping a wooden spoon in the fat; once it steadily bubbles, it's ready.) While this heats, flatten the masa rounds between your hands (you can dampen your hands very lightly so they don't stick or press down on top with a piece of plastic wrap) to about ⅛ inch thick. Slide them into the hot fat and bathe them with a spoon so they are covered with fat at all times, and turn often, frying until they are golden on all sides and make sure not to overcrowd the pan. Drain on paper bags or towels and enjoy warm. (You can keep them in a warming oven for 15 minutes.)
