BARBECUE PORK BUTT

- Place the water, salt and molasses in a large 12-quart container and stir until the salt dissolves. Add the pork butt to the brine and weigh down with a zip top bag filled with 2 cups of the brine to make sure it is completely submerged in the brine.
- Cover and refrigerate overnight. Remove the pork from the brine, and pat dry.
- Heat the smoker to 225 degrees F. Add the wood chunks, and place the pork into the smoker. Cook until the pork reaches an internal temperature of 150 degrees F, 4 to 5 hours.
- Once the meat reaches 140 degrees F, heat the oven to 300 degrees F. Wrap the pork in aluminum foil and transfer to a half sheet pan. Place on the center rack and cook until the pork reaches an internal temperature of at least 200 degrees F and is tender and pulling apart easily, 3 to 5 hours. Remove from the oven and rest, covered for 30 minutes before serving.
GRILLED SWEET AND TANGY PORK CHOPS

- Preheat the grill to medium-high heat.
- Season the pork chops lightly on both sides with the Seasoning Salt. Remember, we aren't rubbing the chops.
- Grill the chops for 5 to 7 minutes per side. Brush them with the Sweet and Tangy Glaze the last 5 minutes of grilling. Internal temperature should register 145 degrees F on an instant-read thermometer. Remove the chops from the grill to a serving platter and allow them to rest for 5 minutes before serving.
- Mix the salt, onion powder, black pepper, garlic powder, celery seed, cayenne, and smoked paprika in a small bowl. Reserve a small amount for another use.
- You can store the remaining Seasoning Salt in an airtight container for up to 6 months.
- In a small bowl, mix together the apple cider vinegar, maple syrup, ketchup, mustard, Worcestershire, and hot sauce. Season with salt and pepper, to taste, and refrigerate if not using immediately.
PORK STEAKS WITH HOMEMADE BARBECUE SAUCE, TEXAS STYLE YUKON GOLD POTATO FRITES, AND GRILLED CHAYOTE

- Heat olive oil in skillet. Add the salt pork and cook over medium heat until crispy. Remove the salt pork and set aside. Add in the onion and shallot and cook until translucent. Add in the garlic, ginger, and ancho powder and saute until fragrant, about 2 minutes. Add in the beer, cook 5 minutes. Add in all other ingredients except 1 cup of chicken broth. Simmer for 15 minutes. If the sauce seems too thick, thin with the reserved chicken broth. Crumble the salt pork into the sauce. Set aside and wait for pork to grill. Season pork steaks with salt, pepper. Place on a medium-high grill and sear, 5 to 6 minutes on each side. Remove the steaks and dip in homemade BBQ sauce. Place back on the grill for 2 to 3 minutes, turning and basting to let the sauce caramelize on the pork steaks. Remove and let sit for 5 minutes. Serve with Yukon Gold Frites and Grilled Chayote and Tomatoes.
- Yukon Gold Frites: Thinly slice potatoes lengthwise to form a traditional thin chip. Toss into a hot pot of good frying oil (canola or peanut). Fry until partially cooked. Remove from oil and let drain on a paper-towel covered plate. Sprinkle with a homemade Texas-style dry rub spice (sea salt, white pepper, celery salt, ground cumin, paprika, black pepper, garlic powder, chili powder, lemon zest, cayenne pepper and dry mustard). Toss chips on a hot grill and cook through until brown, crispy, with nice grill marks. Serve with Chipotle Aioli to dip.
- Grilled Chayote: Slice 1 to 2 chayote lengthwise like the potatoes. Brush each side with melted butter and season with salt and pepper. Cook on a medium-high grill turning frequently to make crisscross marks on both sides. When fork-tender, remove from grill and season again.
- Grilled Roma Tomatoes: Slice 2 Roma tomatoes in half; core the center to remove seeds and to make a pocket. Sprinkle with salt and pepper. Brush with olive oil. Fill pockets with pesto, about 2 tablespoons each, and sprinkle on some grated Parmesan. Grill tomatoes until tender but not falling apart, about 5 minutes if grill is very hot. Sprinkle with a bit more grated Parmesan, and serve.
- Whisk all ingredients together.

- In large saucepan, combine all ingredients and bring to a boil over medium heat.
- Reduce heat and simmer, uncovered, for about one hour. Stir occasionally.
- *For ribs: Boil ribs with some salt & pepper and a quartered onion until tender. Then drain and place on broiler pan. Baste with sauce, broil 5 minutes, turn ribs over and baste other side. Broil 5 minutes longer. Serve.
- *For shredded pork sandwiches: Put sauce and pork loin in crock pot on low for 5-6 hours or until pork begins to shred itself when poked with a fork.
- *For barbecue ham sandwiches: Put sauce and thin, deli sliced ham torn into 2 inch pieces into crock pot and heat on low for 2 hours or until hot.

This recipe is a fly-by-the-seat-of-your-pants creation. I researched several BBQ recipes online and in my cookbooks and combined bits and pieces of different things I liked about them. - Place the roast into a slow cooker along with the water. Cover, and cook on LOW for 2 to 4 hours, or until beef can be easily shredded with a fork.

- Season the steaks on all sides with the grill seasoning, garlic powder, salt and pepper, and Essence. Grill the steaks over medium high heat until done, about 15-20 minutes, flipping once halfway through.
- Reduce heat to medium. Place steaks in a large aluminum roasting pan. To the pan add equal amounts of barbecue sauce and beer until the steaks are just about covered. Wrap the top of the pan with aluminum foil, place on the grill and close the grill cover.

So instead of driving the 6 hours to the nearest Lambert's to Chicago, I decided to give it a try myself. It turned out so well that I thought I should share the recipe. And it's very easy. I've been snooping around in the shadows on this site for a long time but you've finally inspired me to share as well. Hope you enjoy this as much as my family did. The rib rub and sauce listed are completely customizable...feel free to use whatever you have on hand and it'll still be great. This just happens to taste like Lambert's. =)

- Lay out steaks and generously sprinkle with rib rub. Give the meat a quick rub. Make sure you do both sides!
- Stack the steaks up and wrap tightly with plastic wrap. Refrigerate for at least 2 hours. Anything longer than 8 hours and you're just prolonging your own hunger ;).
- Heat a (gas) grill to medium-high or equivalent. Grill steaks over direct heat for about 3 minutes on each side. These are kind of hard to overcook due to the fat content so don't be too scared of drying them out.
- Pour BBQ sauce in a shallow dish and dredge steaks in the sauce.
- Return steaks to grill over lower, indirect heat for 3-5 minutes per side or until they are carmelized to your taste.
- Remove from grill and let rest a few minutes and serve.
- If you've got any rolls, feel free to toss them across the room! Enjoy!
HICKORY-SMOKED PORTERHOUSE STEAKS
The sugar in the rub will not add sweetness to the steaks. Instead, as it melts, the stickiness helps the smoke from the wood chips adhere to and permeate into the meat. - About 2 hours before grilling, pat the steaks dry and return to the refrigerator, uncovered.
- Season the steaks all over with the sugar and 2 tablespoons each kosher salt and pepper. Let the steaks come to room temperature for 30 minutes. Meanwhile, soak 1 1/2 cups hickory wood chips in water, 30 minutes; drain.
- Preheat a grill to very low and prepare for indirect cooking: On a gas grill, turn off half the burners; on a charcoal grill, bank the coals to one side. When the grill registers 225˚ F, add the wood chips: On a gas grill, fill a smoke box with the chips and place over direct heat; on a charcoal grill, sprinkle the chips over the coals.
- Place the steaks on the cooler side of the grill (indirect heat) with the strip side (the larger side) closest to the heat. Cover the grill and cook the steaks until an instant-read thermometer inserted into the centers registers 110˚ F, 1 hour 15 minutes to 1 hour 45 minutes. Transfer the steaks to a baking sheet and tent with foil to keep warm.
- Increase the grill heat and prepare for direct cooking: On a gas grill, turn on all of the burners; on a charcoal grill, build a hot fire with new coals. Once the grill registers 425˚ F to 450˚ F, place the steaks over direct heat and cook, turning often and moving the meat around if it flares up, until a thermometer inserted into the center reaches 125˚ F for medium rare, 10 to 15 minutes.
- Transfer the steaks to a cutting board and let rest at least 10 minutes before slicing. Sprinkle with flaky salt.

- Rub steaks on both sides- about 1 tsp per side.
- Rest in fridge for 30 minutes Prepare smoker with 1/2 mesquite and 1/2 hickory wood chunks and smoke meat for at least 1 hour at a temperature of about 250.
- Turn once or twice.
- Add more wood if necessary.
- Remove steaks from smoker to a roasting pan.
- Brush on 1/2 of the BBQ sauce.
- Cover with foil and cook in oven for 90 minutes@300.
- Remove from oven a brush on a light coating of more sauce.

When Snow's BBQ in Lexington was named best barbecue in Texas by _Texas Monthly_ magazine in June 2008, Tootsie Tomanetz became an instant star in the barbecue world. It's odd that her significant skill as a pitmaster was "discovered" only after more than thirty years of tending pits. As one of thee rare female pitmasters in Texas, she says some folks insist on calling her a chef because they don't feel comfortable applying the pitmaster moniker to a woman, but Tootsie is no doubt a master of the many pit types out behind Snow's. Even several years removed from the initial stardom, she still gets asked every Saturday morning to pose for photos. Always humble, this reluctant star says she is just a "plain old country girl" who has lived her entire life in either Lexington or Giddings, just seventeen miles away, and would just as soon keep a low profile. That's going to be tough if she keeps showing up at 2 a.m. every Saturday to cook some of Texas' best pork, and she has no plans to stop, even at age seventy-seven.

Steps:
- MEAT: Boston butt sliced into steaks 2 to 3 inches thick
- RUB: Equal parts coarsely ground pepper and table salt. Apply rub at least a day before smoking.
- WOOD: Texas post oak cooked down to coals.
- PIT: Rectangular steel pit with a hinged steel lid.
- FIRE: Apply a thin even layer of hot coals onto bottom of cooker. Place meat on the grate after the lid gets warm.
- TIME: Cook the steaks over direct heat for about 6 hours. To hold the meat just let the fire die down after the 6-hour cooking time.
- IT'S DONE WHEN: A fork slides in easily
- REST THE MEAT: No need
- PRO TIP: Mop the meat a couple of times on either side with a mix of water, butter, onion, Worcestershire sauce, and dry mustard.
ELECTRIC SKILLET BBQ PORK STEAKS
This was one of my moms recipes. They are soooo easy & the pork comes out sooo tender & flavorful. One of our families favorites!!!! I usually serve mashed potatoes with them.

- Put carrots in the bottom of the electric skillet.
- Layer pork steaks on top of carrots.
- Pour both cans of French Onion soup over steaks.
- Dump bottle of bbq sauce over top.
- Cover with lid & cook on low temp for 2 to 2 1/2 hours.

- In a Dutch oven, melt butter over medium heat. Stir in flour until smooth. Add ketchup, water, vinegar, Worcestershire sauce, onion, garlic and seasonings; bring to a boil. Add roast. Reduce heat; simmer, covered, 3 hours or until meat is very tender., Remove roast; shred with two forks. Skim fat from cooking juices; return meat to pan and heat through. Using a slotted spoon, place mixture on buns.
