- In a small bowl combine well the herring, the onion, the orange juice, and pepper to taste and let the herring marinate, covered and chilled, for at least 3 hours or overnight.
- Make the lemon-chive butter:
- In a bowl with an electric mixer cream the butter and beat in the sour cream and the lemon juice gradually. Beat the mixture until it is light and smooth and beat in the chives and salt and pepper to taste.
- Toast the bread until it is just pale golden, cut out 3 decorative shapes from each piece, and spread one side of each shape with some of the lemon-chive butter. In a small bowl toss together the salmon and the red onion and divide the mixture among 16 of the toasts. Drain the herring, discarding the onion, and divide it among 16 of the toasts. Divide the caviar among the remaining 16 toasts. Garnish the salmon canapés with the parsley leaves, garnish the herring canapés with the orange slices, the chives, and the zest, and arrange the canapés on a platter. The canapés may be prepared 1 hour in advance and kept covered and chilled.

- Place bread on ungreased baking sheets. Broil 4-6 inches from the heat for 1-2 minutes or until lightly browned.
- Turn slices; and slice into quarters spread each with 1 rounded tablespoonful of seafood mixture. Broil 4-5 minutes longer or until heated through.

- In a large bowl, whisk the first 5 ingredients until blended. Pour 1-1/2 cups marinade into a large bowl. Add shrimp and stir to coat. Cover and refrigerate 45 minutes., Meanwhile, pour remaining marinade in a 4- or 5-qt. slow cooker. Cook, covered, on high, 45 minutes. Drain shrimp, discarding marinade in bowl. Add shrimp to slow cooker. Cook, covered, on high until shrimp turn pink, about 20 minutes, stirring once; drain., Cut each cucumber into 1/4-in.-thick slices. Scoop out centers, leaving bottoms intact. Pipe cream cheese onto each cucumber slice; top with shrimp and parsley.

- Spread the bread with the butter, cut it into twelve 2-inch squares, and on it arrange decoratively the tomatoes, the olives, and the shrimp.
- In a small bowl combine well the mayonnaise and the horseradish, dot the shrimp with the mixture, and garnish it with the dill.

We've decided to recreate that recipe into an appetizer. Our challenge this time was to keep it 12 ingredients or less. The sky's the limit so long as we keep it under 12 ingredients. Easy Peasy. Right? This is what we created.

Steps:
- 1. In a small sauce pan with a tight fitting lid over medium-high heat, bring 2 cups of water or chicken stock and grits to a boil, stirring often.
- 2. Turn the heat down to medium, add parsley and scallions, place lid on pan and continue to simmer the grits until they are tender, about 20 minutes, stirring occasionally. Remove from heat and set aside to cool.
- 3. Meanwhile, preheat the oven to broil and while the oven is preheating, place a baking sheet inside to heat with the oven. In a small bowl, coat the shrimp in Cajun seasoning. Carefully remove the baking sheet from the oven and, in a single layer, add the shrimp. Place the pan back in the oven and broil the shrimp for 3-5 minutes or until their color changes and they start to curl. Remove from the pan and set aside.
- 4. Now turn the oven down to 400° F. With non-stick cooking spray, coat the mini muffin tin(s). Fill each tin about half way full with the grits mixture. Bake in the oven for about 15-20 minutes or until the edges are slightly brown. Remove from the oven and cool. After cooled, remove from tins.
- 5. In a food processor, grind tasso ham until finely chopped. Next add the cream cheese and blend into the ham creating a mousse.
- 6. To assemble, place a dollop of tasso ham mousse on top of each grit cake and top with one roasted shrimp. Garnish with a chive, optional.
- 7. Note: Tasso ham is just a smoked ham piece slathered in cajun seasonings. If Tasso ham is unavailable in your area, you can purchase a small piece of smoked ham and grind it with Cajun seasoning to create the spicy mousse.
