Steps:

  • Rub each piece of chicken with a little Tabasco sauce.
  • Heat the oil in a frying pan and brown the chicken on all sides.
  • Remove chicken from the pan.
  • Saute the onion, celery, parsley, chives, garlic, green pepper, salt and pepper for five minutes.
  • Add the mushrooms and cook for another five minutes.
  • Stir in the tomato paste, water and 1/2 teaspoon Tabasco sauce.
  • Mix well.
  • Return the chicken to the pan, cover and cook for about 40 minutes or until the chicken is tender and juices run clear.

Steps:

  • Trim off the tips of the drumsticks and cut halfway through the joint that connects the thigh and the drumstick of each leg.
  • Mix the soy sauce, ketchup, vinegar and Tabasco together in a tray and roll the chicken legs in the marinade.
  • Place the legs skin-side down on the rack of a hot grill about 10 inches from the heat, and cook for about 10 minutes. Turn the legs over, and cook for about 10 minutes on the other side. Turn them again, and cook them skin-side down for 10 minutes more.
  • Take the legs off the heat to rest for 5 minutes before serving.

Steps:

  • Combine the buttermilk, garlic, and hot sauce and stir well. Submerge the chicken pieces in the buttermilk. Let soak for at least 2 hours in the refrigerator, but preferably overnight.
  • Preheat the oven to 350 degrees F.
  • Sift together the flour, salt, and pepper. Heat the oil and butter over medium heat in a large skillet until the foaming of the butter begins to subside. Pull the pieces of chicken out of the buttermilk 1 at a time. Let the excess buttermilk drip off, and then coat the chicken in the seasoned flour. Coat well and shake off any excess flour. Place the chicken skin side down into the hot oil. Cook until nicely browned, 10 to 12 minutes per side.
  • Place the chicken on a sheet tray and bake in the oven for 10 to 15 minutes. You should see the juices of a thigh or leg run clear when you pierce the chicken with a fork.

1/3 cup hot sauce (recommended: Tabasco)

Steps:

  • Trim steak and pound, if needed, to 1/2 inch thick; cut into 6-8 pieces.
  • Combine evaporated milk, Tabasco jalapeno sauce and 1/2 teaspoon salt in a bowl.
  • Measure 1 cup of flour into a second bowl.
  • Combine remaining flour, paprika, garlic powder, salt and pepper in another bowl.
  • Dip steak into flour, into milk mixture, and then into seasoned flour (repeat this process for an extra thick coating).
  • Set aside until all meat is coated.
  • Heat 1 or 2 inches of oil in a heavy fry pan.
  • Fry meat until both sides are golden brown, about 2 minutes per side.
  • Drain on paper towels.
  • Serve with cream gravy.
  • Cream Gravy:
  • Pour off all but about 6 tablespoons of fat from fry pan; add 6 tablespoons flour into pan (use leftover seasoned flour) and blend well.
  • Allow the flour 'paste' to brown slightly over medium heat for 2 or 3 minutes.
  • Gradually stir in 2-1/2 cups milk.
  • Simmer and stir over medium heat until thickened.
  • Season with salt and pepper.
  • Cover steaks with gravy when served.
