STAR SPANGLE LAYERED DIP

Steps:

  • Evenly spread the refried beans on the bottom of a 9-by-13-inch baking dish. Spread the guacamole over the beans and then spread the sour cream over the guacamole. Sprinkle with scallions and then the shredded cheese.
  • To make the shape of a flag, arrange the black olives in the top left corner of the dish. Sprinkle with a dusting of cotija cheese. Spoon salsa in stripe formation on the rest of the dish. Sprinkle the remaining cotija cheese between the salsa to create white stripes. Refrigerate until ready to serve. Serve with corn chips for dipping.

Two 15-ounce cans refried beans
2 cups guacamole
One 16-ounce container sour cream
4 scallions, thinly sliced, light green and white parts only
2 cups shredded Mexican blend cheese
1/4 cup chopped black olives
1 cup crumbled Cotija cheese
1 1/2 cups salsa
Corn chips, for serving (I like Fritos scoops)

TACO SALAD DIP

I made this up with ingredients I had when I needed something to take to a Cinco de Mayo luncheon. It has the ingredients of a layered taco dip, but the addition of lettuce makes it like a salad. The best of both worlds!

Steps:

  • Mix ranch-style beans and refried beans together in the bottom of a shallow casserole dish; season with taco seasoning mix and stir. Spread the bean mixture into an even layer.
  • Mix sour cream and onion soup mix together in a small bowl; spread over the bean mixture. Top the sour cream layer with salsa.
  • Refrigerate dish until the bean layer firms, about 30 minutes.
  • Layer lettuce atop the salsa. Sprinkle tortilla chips in a layer over the lettuce. Finish with a layer of Cheddar cheese.

This is a scrumptious taco dip. When I use all low-fat ingredients, such as low-fat sour cream and low-fat Cheddar, it still comes out so delicious! Serve with baked tortilla chips for dipping.

  • In a medium-sized mixing bowl, combine cream cheese, sour cream and taco seasoning. Spread this mixture in a 9-inch (or a little larger) round serving dish. Top the mixture with lettuce, Cheddar cheese, tomatoes, bell pepper and black olives.

Steps:

  • In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
  • Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the water, tomato paste and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes., Place chips in an ungreased 13x9-in. dish. Spread beef mixture evenly over the top. Cover with lettuce. For each star, arrange five olive slices together in the upper left corner. To form stripes, add cheese and tomatoes in alternating rows. Serve immediately.

  • In a large skillet, brown ground beef (No need to add oil). Drain with a paper-towel if there is excess liquid. My lean 7% beef didn't have any extra juices to drain.
  • Combine 1 packet of taco seasoning mix with 1/4 cup water. Once the beef is fully cooked, stir the taco seasoning mix into the beef and remove from heat to cool down.
  • In the bowl of a food processor, blend 1 cup cottage cheese, 1 package cream cheese and 1 cup salsa until well combined and smooth.
  • Spread beef into the bottom of a 9x13-inch glass baking pan, or into individual glass ramekins. Top the meat with the blended cream cheese mixture.
