TAILGATE TURKEY AND HAM CLUB SUB

Found this simple and yummy recipe in my mailbox this morning. What a quick and easy way to serve lunch to an impromptu crowd with just a few basic ingredients! Going to bring this to the next Indy 500 party! Recipe & Photo: Kroger.com 03-10-15

Steps:

  • 1. Spread mayo over cut side of bread.
  • 2. Fill with remaining ingredients.
  • 3. Slice into 10 servings. Refrigerate any leftovers.

1/2 c mayonnaise
1 french bread baguette (1 lb.) partially split
9 oz deli fresh oven roasted turkey breast
9 oz deli fresh smoked ham
6 slice sharp cheddar cheese, halved
2 c shredded lettuce
2 tomatoes, thinly sliced
10 slice bacon, cooked crisp, halved
1/2 c thinly sliced red onions

TAILGATER CLUB SANDWICH

Use a good quality ranch dressing for this, it will really improve the taste of the sandwich. All ingredient amounts can be adjusted to suit taste. I like to warm the sandwiches slightly in the microwave just before serving to soften the bread and melt cheese. You can replace the ranch with any similar dressing/spread, Thousand Island dressing will work great with this see recipe#188009 or see recipe#81986

Steps:

  • Spread softened butter on one side of the bread and ranch dressing on the other slice of bread (or use ranch on both sides if desired).
  • Place lettuce leaves over the bottom of the bread that has the ranch dreesing over (use as much lettuce as desired).
  • Top the lettuce with the turkey slices then American cheese slices then ham then then Swiss cheese triangles and then tomato slices, season the tomatoes with salt and pepper.
  • Place lettuce leaves over tomatoes and then top with bacon slices.
  • Cover with the top half of bread; press down slighty with hands to compact the sandwich.
  • Secure with 8 long toothpicks and slice into 8 pieces (you should have a toothpick for each sandwich).
  • You can cover sandwiches and refrigerate until ready to serve.

lettuce leaf (or use shredded lettuce)
1/2 lb thinly sliced turkey breast (can use more)
7 slices American cheese
1/2 lb thinly sliced deli ham (can use more)
4 slices swiss cheese (cut in half to make triangles)
thinly sliced tomatoes
black pepper
8 -10 slices cooked bacon (or use as much as desired)

Steps:

  • Bread: Use 3 slices of a good white sandwich bread (pain au lait or Pullman loaves are ideal). Be sure to toast it!
  • Lettuce: Bibb and Boston lettuce both have nice small, soft leaves that fit well on the sandwich; shredded iceberg can be unruly.
  • Tomatoes: Add 2 slices of tomato to each layer of a club; season with salt and pepper before you continue building the sandwich.
  • Turkey: Fresh roasted turkey is key. Rub a 2 1/4-pound skinless, boneless turkey breast with olive oil; sprinkle generously with Italian seasoning, salt and pepper. Roast 10 minutes at 425˚ F, then reduce to 350˚ F and roast until the internal temperature is 160˚ F, 15 to 20 minutes. Let cool, then slice.
  • Mayonnaise: Spread a thick layer of mayo on each slice of toasted bread.
  • Bacon: You'll want 3 slices per sandwich (1 1/2 slices in each layer). Halve the slices first, then cook in a skillet over medium heat until crisp.

Steps:

  • 1. Lightly spray 11x7 baking dish with non-stick cooking spray. Split rolls across with serrated knife and arrange in dish.
  • 2. Layer ham (or turkey) and Swiss (or provolone) on top of roll bottoms.
  • 3. Spread roll tops with layer of cream cheese. Carefully place tops to match up with rolls below.
  • 4. Meanwhile, in a small bowl, combine melted butter, Parmesan, Worcestershire, and minced onion. Pour evenly over sandwiches. Let stand for about 20 minutes.
  • 5. Cover and bake at 350 degrees for 20 minutes or until heated through.
  • 6. Serve right from the pan or separate and present on a platter. Have fun experimenting and customizing the recipe. You can't imagine how yummy these are... and popular, too!!!

12 King's Hawaiian sweet rolls, split across (no substitutes!)
1 lb honey ham or turkey, shaved
12 oz Swiss or provolone cheese, sliced
8 oz tub Philadelphia chive and onion or garden vegetable cream cheese, softened
