Steps:
- To start you will first need to heat the oil in a skillet.About a 1/2 inche in oil.
- Now for the platano,first cut the ends of the platanos.
- Then cut a slice down the middle of the platano and peel.
- Ok then cut the platano in oval slices and fry in oil.cook until golden brown.
- about 5 mins or so.drain on paper towels.season with salt.serve.enjoy -- .

FRIED GREEN PLANTAINS (TOSTONES DE PLATANO VERDE)
Steps:
- Preheat oil in a fryer or Dutch oven to 365 degrees F.
- Peel the plantains and cut into 1-inch pieces. Place into preheated oil and fry for 5 minutes or until they begin to brown. Drain them on a paper-towel lines plate. Flatten them using a Tostonera or the bottom of a metal can and fry again at 385 degrees F for approximately 3 minutes. Drain again and sprinkle with salt and Garlic Mojo. For softer fried plantains, soak for a few minutes in salted water after the first fry, drain and fry again.
- Chop up the garlic very thinly or crush using a mortar and pestle or food processor with the salt to form a thick paste. In a mixing bowl, combine the garlic paste and juice, and let the mixture sit at room temperature for 30 minutes or longer.

- Pre-heat the oven to 350 degrees and line the baking sheet with parchment paper.
- Cut the edges, peel, and slice the plantain thinly using a knife or mandolin. In a bowl, combine sliced plantains, salt, oil and mix well.
- Arrange the sliced plantains in a single layer and bake in a pre-heated 350 degrees oven for 25 to 30 minutes until they start to brown the edges and turns crispy. Turn plantains to the other side after 10 minutes.
- Allow the plantains to cool and serve.

Salty baked plantain chips. Let the plantain ripen on the counter for a day or two if they're green when you buy them.

- Heat oven to 400°F.
- Trim ends from plantains, then cut a slit down one side.
- Peel plantains-beginning at the slit.
- Slice across into 12 pieces, each about 1/2-3/4".
- Place in a large bowl.
- Toss slices with oil and 1/8 tsp of the salt.
- Transfer to a sprayed nonstick baking sheet.
- Bake slices for 15 minutes Remove pan from oven.
- Place a few slices on a cutting board and press gently with the bottom of a glass. Turn over.
- (Bottoms will be lightly browned.).
- Return to baking sheet.
- Repeat with all slices.
- Spray with oil. Sprinkle with the rest of salt (1/8 tsp).
- Bake another 5 minutes.
- Serve warm with fat free sour cream.
- 194 cal per serving-9g fat & 2g fibre.

PLANTAIN CHIPS (PLATANUTRES)
Plantains are a member of the banana family and look like large bananas. They are hard and starchy when green, and are used much like a potato. They turn yellow, and then black, as they ripen. This is a yummy way to fix them! Prep time includes soaking time.

Steps:
- Peel plantain, and diagonally cut into 1/8 inch slices.
- Combine the water and salt in a large bowl, stirring until salt disolves; add plantain slices.
- Cover and let stand 30 minutes.
- Drain plantain slices well, and pat dry.
- Heat 2 tbsp oil in a large skillet; add plantain slices and cook over medium-high heat, stirring constantly, until tender, but not brown.
- Drain well on paper towels.
- Mash each plantain slice with the bottom of a glass cup.
- Pour oil to depth of 2-inches; heat till good and hot.
- Fry plantains, a few at a time, until golden brown; drain on paper towels.
- Serve plantain chips with Plantain Dip.
- Plantain Dip: Combine all ingredients in a jar; cover tightly, and shake vigorously.
- Chill at least 2 hours.
- Shake just before serving.
- Yield: 1/2 cup.
