TAMPA'S OWN FISH CHOWDER

An awful lot of hoopla and celebrating goes on in Tampa in February and this chowder/stew is often served. I finaly got this wonderful recipe, after years of asking, from a friend who admitted it was from the Gasperilla Cookbook. Full flavored and hearty and easy to put together. Serve with warm crusty bread or big ole' homemade croutons. Time is estimated. I guess it depends on how fast one dices.

Steps:

  • Fry bacon & remove from pan.
  • Add onions & garlic to drippings.
  • Saute' until tender but not browned.
  • Add the water, potatoes, carrots, celery, and paprika.
  • Cook until the potatoes are almost done.
  • Cut fish into 1 inch pieces.
  • Add the rest of the seasonings, the fish and cooked chicken at the same time.
  • Cook until fish becomes flaky this only takes a short time depending on thickness of fish.
  • Pour in the Half & Half and white wine, stir well.

1 lb red snapper fillets or 1 lb grouper fillet
1/2 cup diced cooked boneless skinless chicken
2 slices bacon
1 cup diced potato
2/3 cup chopped onion
1 minced garlic clove
1/4 cup diced carrot
1 tablespoon dice celery
1 lemon, juice of
1 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon paprika
1/4 teaspoon ground dill
2 cups half-and-half cream
2 cups hot water (not quite boiling)
1/4 teaspoon ground cumin
1/4 teaspoon ground ginger
2 tablespoons dry white wine, can be added if desired (optional)

FISH CHOWDER

You'll often find one-pot meals in Gullah cuisine, and this fish stew is definitely that! Creamy, smoky, and slightly sweet, it's packed with corn, potatoes, bacon and cod. It also feeds a crowd as an appetizer or main dish.

Steps:

  • Place a large Dutch oven over medium heat. Add the bacon and cook until the fat begins to render but the bacon is still soft, about 5 minutes. Add the celery and onion and cook until the bacon is crisp and the vegetables are tender, about 5 minutes. Stir in the garlic.
  • Add the butter and flour and stir until combined. Cook until the flour is bubbly, about 2 minutes. Slowly add the stock and whisk until combined. Whisk in the heavy cream.
  • Add the corn, potatoes and paprika. Season with salt and pepper. Cover and cook over medium heat, stirring occasionally, until the potatoes are tender, about 15 minutes.
  • Add the fish to the Dutch oven. Reduce the heat to low, cover, and simmer until the fish flakes with a fork, 5 to 7 more minutes. Season with salt and pepper. Spoon into serving bowls and garnish with dill and chives. Sprinkle with additional crumbled bacon, if desired.

8 slices thick-cut applewood-smoked bacon, diced, plus more cooked, crumbled bacon for garnish, optional

1 large yellow onion, diced
3 cloves garlic, minced
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups seafood or vegetable stock
2 cups heavy cream
2 cups fresh or frozen corn kernels
1 pound russet potatoes, peeled and cut into large chunks
2 teaspoons smoked paprika
Kosher salt and freshly ground black pepper
2 pounds cod or other firm white fish, cut into bite-size pieces
Chopped fresh dill and chives, for garnish

CREAMY FISH CHOWDER

WE were tired of the same old vegetable soup and I had on hand some fish that needed to be cooked, so this was the creation of our favorite fish chowder. Occasionally, I enhance it still further by adding another vegetable, such as corn or peas, to add to color and nutrition.

Creamy Fish Chowder image

Steps:

  • In a large saucepan, saute onion in butter until tender. Add the broth, potatoes, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until potatoes are tender., In a bowl, combine the flour, potato flakes and milk until smooth. Stir into the potato mixture. Bring to a boil. Reduce heat; add fish and parsley. Cover and simmer for 5-10 minutes or until fish is opaque.

  • Cook the vegetables: Melt butter in a heavy-bottomed, large pot over medium heat. Add the onions and cook until softened, about 3 minutes. Add the celery and cook, stirring for 8-10 minutes. Add the potatoes. Add enough water to the pot to just cover the vegetables with water. Bring to a boil, then reduce heat and simmer until potatoes are tender but not too soft, about 10-15 minutes (depending on the size of the dice). Remove from heat.
  • Poaching Liquid: In a second pot, heat the 4 cups of water with a bay leaf and the 1/4 onion until just before boiling. Maintain temperature just below boiling and add the sole and scallops. Cover and cook just until seafood is opaque and tender. Remove fish and and scallops to a bowl, reserving the poaching liquid for your stock. Discard the bay leaf and quartered onion.
  • Soup: Melt the butter in a saucepan over medium heat. Add the flour, stirring to make a smooth paste. Cook for about 1 minute. Gradually whisk in the reserved poaching liquid until your have a smooth mixture. Cook until it begins to thicken. Return the pot with the potatoes to medium heat. Slowly add the the butter/flour/poaching liquid mixture to the pot with the potatoes. Add the fish and scallops. Continue cooking and stirring until chowder thickens. Add the cream and stir until heated through, but do not boil. Season with a pinch of nutmeg and a generous amount of salt and pepper, to taste.
