TANGY TOMATILLO SAUCE
Recipe from Chef Rick Bayless. So yummy and versatile. I have used this sauce as a dip with tortilla chips and also for green chicken enchiladas and green burritos. It's even yummy on scrambled eggs and in breakfast burritos too. If you want it spicy add some red pepper flakes before blending. Enjoy! :)

Steps:
- 1. In a medium saucepan add fresh tomatillos, chiles, and enough water to just cover.Lightly salt.
- 2. Cook for 15 minutes and drain.
- 3. For canned tomatillos, just drain.
- 4. Place tomatillos, cilantro, onion and garlic in a blender or food processor.
- 5. Process to almost smooth-leave a little texture.
- 6. In a large saucepan heat the oil over medium high heat.When oil is hot add all the sauce at once, stirring constantly until darkened-about 5 minutes
- 7. Add the broth, return to a boil and reduce heat to medium and simmer until thickened, around 10 minutes.
- 8. Remove from heat, squeeze in fresh lime juice, stir again, taste and add salt if needed.
TANGO TOMATOES
Steps:
- Preheat oven to 350 degrees F.
- Cut off top third of each tomato. Scoop out seeds, juice and pulp from and discard. Set aside. Chop tomato top and set aside.
- In medium nonstick skillet, saute chorizo or sausage in olive oil, breaking it up with a spoon as it cooks. When browned all over, add onion to skillet and cook until soft, stirring frequently. Add garlic, celery, and poblano pepper and cook for another 2 minutes, stirring to combine well. Add reserved chopped tomato tops, salt, and pepper and stir for another minute.
- Remove skillet from heat. Mix in 2 tablespoons cilantro, bread crumbs, and pepper jack cheese. Using a large spoon, stuff mixture into tomatoes, packing down firmly. Top with Parmesan and place tomatoes in oiled baking dish. Bake until heated through and cheese turns golden, approximately 20 minutes.
- Sprinkle with remaining 1 tablespoon of cilantro and serve.
TOMATILLO SAUCE

- Preheat the oven to 350 degrees F.
- Place the tomatillos, garlic, Anaheim chile, onions and jalapeno on a baking sheet. Toss the vegetables with the oil, salt and pepper. Roast the vegetables until the tomatillos turn a dark-green color and the onions golden brown, about 30 minutes.
- Let the vegetables cool slightly. Peel the garlic and transfer all the ingredients to a blender. Blend until smooth, about 1 minute. Add the lime juice and sprinkle with more salt and pepper.
- The tomatillo sauce can be made 1 day ahead, covered and chilled.
TANGY TASTY TOMATILLO SOUP
This is a much played with recipe. I love it! I like it chunky. Feel free to adjust it to your own tastes.

- Cook and shred chicken. Set aside.
- Heat oil over medium high heat in a large pot or dutch oven. Ingredients 3-8: add 1 red onion and 1 white onion, saute until golden. Add garlic and saute 1-2 minutes. Stir in tomatillos, 3 jalapenos and broth. Bring to a boil. Reduce heat, cover and simmer for about 15 minutes until the tomatillos start to burst.
- Puree in pot with an immersion blender. Stir in garlic salt, black pepper and cayenne pepper to taste.
- Add reserved shredded chicken and the rest of the ingredients up to the chopped spinach and cook until heated through.
- Stir in lemon juice and sugar if desired and remove from heat.
- Serve in bowls topped with sour cream and cilantro to taste. Tortilla chips are also good with this.

- Place tomatillos and serrano peppers into a medium pot and cover with water. Bring to a boil; reduce heat to medium-low and let simmer until tender, 15 to 20 minutes. Remove from heat, drain, and let cool, 15 to 20 minutes.

- Stir sake and 1/4 cup white sugar together in a saucepan over medium heat; cook until sugar dissolves, about 5 minutes. Add soy sauce, 1/3 cup white sugar, orange marmalade, vinegar, garlic powder, sesame oil, ginger, cayenne pepper, and black pepper; stir to combine. TANGY KIWI TOMATILLO SAUCE

- place ingredients (reserve one lime) in a baking dish with the tomatillos and yellow pepper on top. Place under a broiler until peppers brown slightly. Remove mixture to blender and blend for 1 minute to eliminate chunks. Add remaining lime juice, and warm over low heat for 5 minutes. Let stand for 10 minutes.

- Remove the husks from your tomatillos and rinse in cold water. Cut them into quarters and place on a greased baking sheet. Set your oven’s broiler to high and place the pan in the oven. Check every two or three minutes to turn the tomatillos and make sure they aren’t burning. Remove from oven when they have a nice brown color.
- Meanwhile, place the peeled kiwi, chopped onion, cilantro leaves, lime juice, sugar, and Jalapeño peppers in a food processor or blender.
- Add the roasted tomatillos to the food processor and pulse until all of the ingredients are combined but not entirely pureed. You want some little lumps in there.

- Remove the husks from the tomatillos and rinse under cool water to remove the stickiness. Place the tomatillos, onion and pepper on the baking sheet, drizzle with the olive oil and a generous pinch of salt and toss. Place the wrapped garlic on the pan. Roast for 15 minutes or until the tomatillos are soft.
- Unwrap the garlic from the foil, peel it, and place in the bowl of a food processor. Add the roasted vegetables, lime juice and cilantro and pulse. If your salsa is too thick, add 1 to 2 tablespoons water to thin to desired consistency. Season to taste.
