Tuna Panini Melt image

Steps:

  • Mix tuna, mayonnaise, balsamic vinegar, onion, and dill pickle together in a bowl.
  • Spread tuna mixture over 2 slices of bread. Top with American cheese and remaining 2 slices of bread.
  • Cook in a panini press until bread is crispy and cheese is melted, 3 to 4 minutes.

Tuna and Artichoke Panini image

Steps:

  • Puree the olives, oil, garlic, and zest in a food processor until smooth and spreadable. Blend in the mayonnaise. Toss the tuna, artichokes, lemon juice, and pepper in a medium bowl, keeping the tuna in small chunks.
  • Hollow out the bottom and top halves of the bread. Spread the olive puree over both cut sides of the bread. Spoon the tuna and artichoke mixture onto the bottom half of the bread. Sprinkle the tomatoes over. Cover with the bread top. Cut the sandwich crosswise into 6 pieces and serve.

Tangy Tuna Panini image

Steps:

  • Preheat a panini press. In a medium bowl, flake the tuna. Stir in 1/4 cup olive oil, the lemon peel, lemon juice, onion, celery and sun-dried tomatoes; season with salt and pepper.
  • Brush each slice of bread on one side with olive oil and place oiled side down on a work surface. Divide the tuna salad amond 4 slices, making a well in the center. Top the tuna salad with the pepperoncini.
  • In a small nonstick skillet, heat the remaining 1/4 cup olive oil over high heat. One at a time, fry the eggs just until the egg whites set, about 1 minute each. Set one egg sunny-side up on top of the tuna and pepperoncini, aligning the yolk with the well. Set the remaining bread slices in place, oiled side up.
  • Working in batches, grill the sandwiches in the panini press until the bread is crisp and golden, about 1 minute.

Steps:

  • Combine all ingredients EXCEPT OATMEAL in a large bowl, and mix well.
  • Mix in 1/4 cup oatmeal at a time, until mixture is a good texture to form into patties.
  • It should still be moist, but not drippy.
  • If you are not in a hurry, put the bowl in the refrigerator for 10 minutes to make the mixture easier to form into patties.
  • Otherwise, go directly to next step.
  • Cover broiler pan with foil and coat with cooking spray.
  • Form mixture into a ball with your hands, and then flatten into a pattie and put on broiler pan.
  • You can make whatever size you prefer, but make sure they are not very thick, or else the outside will burn before the inside is cooked.
  • I usually end up with 9 patties per batch.
  • Put pan in broiler and broil for about 8 minutes, or until top starts to brown.
  • Take out the pan, flip the patties, and cook another 6 minutes or so, until other side browns.
  • Remove from broiler and eat!

  • In bowl, mix together tuna, red pepper, celery, green onions,artichokes pepper,mayonnaise, plain yogurt salt and pepper.
  • Cut buns in half horizontally; spread tuna mixture evenly over bottom half of each. Sprinkle each evenly with cheese. Replace bun top.
