Angel Food Cake w/ Tangy Citrus Sauce Recipe - (4.5/5) image

Steps:

  • Move oven rack to the lowest position then preheat oven to 350° F. In a large mixing bowl, whisk together the water, orange, and lemon zests. Add the cake mix and prepare and bake as directed on box in an ungreased 10" tube cake pan. When done, invert cake (in pan) onto a long neck bottle to cool completely. When cake is cool, prepare the sauce: In a 2-qt.non-stick saucepan, stir together the sugar and cornstarch. Whisk in the orange juice. Bring to a boil over medium heat, stirring frequently, until sauce thickens and reduces somewhat, about 8-10 minutes. Remove from heat. Whisk in the butter, lemon zest, and salt. Set aside to cool completely. (To speed the process, I set the pot over some ice and water in the sink until cool, stirring occasionally.) To serve, spoon the sauce over each slice of cake. Garnish servings with whipped cream and fresh berries, if desired. Store leftovers in the refrigerator. NOTE: I made the cake ahead of time without checking the recipe and completely forgot about adding the orange and lemon zests when mixing the cake!!! It is very delicious even without it but will try to remember it next time! UPDATE: I made the cake again, this time with the zests! It's even better than the first one which was delicious! The second photo on the right is the latest cake.

Cake:
1 box Angel Food cake mix (I used Betty Crocker)
1 1/4 cups water
1 tablespoon finely grated orange zest
2 teaspoons finely grated lemon zest
Citrus Sauce:
1/2 cup sugar
2 tablespoons cornstarch
2 cups orange juice (I used refrigerated Tropicana Premium)
1 tablespoon unsalted butter
1 tablespoon finely grated lemon zest
Pinch of salt
Garnishes: (optional)
Whipped cream (I use canned Reddi-Whip whipped cream)
Fresh berries

ANGEL FOOD CAKE I

Homemade angel food cake is worth the work. It is moist, unlike the sweet styrofoam available in the grocery bakery. A tube pan with a removable bottom is highly recommended.

Steps:

  • Preheat the oven to 350 degrees F. Move a rack to the bottom position.
  • Drain the mandarin oranges and reserve the liquid. Measure the reserved liquid and add enough water to equal 1 1/4 cups. Measure out 1 cup mandarin oranges, reserving the remaining oranges for garnish.
  • In a large mixing bowl, combine angel food cake mix, mandarin water, orange extract and orange zest. With an electric mixer, beat on low speed for 30 seconds. Scrape down sides of bowl and beat on medium for 1 minute. Pour into angel food tube pan. Carefully place 1 cup of orange segments around top of cake batter. Bake for 35 to 45 minutes, or until top of cake is cracked, dark golden brown, and not sticky.
  • Remove cake from oven and invert onto glass bottle to cool.
  • Frost cake with whipped topping and garnish with reserved orange segments.
  • Cook's Note: Excessive stirring will cause whipped topping to become watery.

1 (15-ounce) can mandarin oranges in light syrup
1 (16-ounce) box angel food cake mix
1 teaspoon orange extract
1 tablespoon orange zest
1 (8-ounce) container whipped topping

GREAT GRANDMA PEARL'S ANGEL FOOD CAKE WITH PEACHES AND CREAM

My great-grandmother Pearl was famous for her angel food cake. She would enter baking contests with this recipe and always took home the blue ribbon. Among her bounty of prizes? A KitchenAid stand mixer (which came in very handy for this recipe, considering she used to beat the egg whites by hand) and a new stove! Not to mention a mighty fine sash and a ribbon proclaiming her the queen of cakes.

Steps:

  • Preheat the oven to 325 degrees F.
  • In a standing electric mixer, beat the egg whites at medium speed until foamy. Add the cream of tartar and salt and beat until stiff peaks form. Beat in the sugar, a few tablespoons at a time, until smooth and glossy, about 4 minutes.
  • Transfer the egg whites to a large, wide bowl. Using a fine sieve, gradually sift the flour over the egg whites, gently folding in the flour with a spatula. Fold in the vanilla and almond extracts.
  • Scrape the batter into a 10-inch angel food cake pan. Using a table knife, slice through the cake batter several times to release any large air bubbles. Tap the cake pan once or twice on a flat surface. Bake in the center of the oven for 20 minutes. Increase the oven temperature to 350 degrees F and bake for about 35 minutes longer, until a toothpick inserted in the center comes out clean. Invert the pan onto the neck of a wine bottle and let cool completely.
  • To loosen the cake, run a thin-bladed knife around the side and tube of the pan. Unmold the cake and transfer to a platter. Cut the cake into wedges and drizzle with some of the reserved syrup. Serve with the sliced peaches and whipped cream.

2 cups egg whites (from about 16 large eggs)
2 teaspoons cream of tartar
1/2 teaspoon salt
2 1/2 cups sugar
2 cups cake flour
1 teaspoon pure vanilla extract
1 teaspoon almond extract
6 to 8 canned peach halves in syrup, cut into thin wedges, syrup reserved
Lightly sweetened whipped cream

WHOLE-ORANGE SNACK CAKE

It may strike you as curious, but adding an entire orange to this easy snacking cake, rind and all, imparts a wonderful flavor reminiscent of orange marmalade, pleasantly bitter and sweet. A high-speed blender is the best way to process the orange, but a food processor works too. You want the purée to be as smooth as possible. While the cake bakes, prepare an easy orange glaze. For that step - or any recipe requiring both orange zest and juice - be sure to zest your orange before juicing it, as it's much more difficult the other way around.

Steps:

  • Heat the oven to 350 degrees. Prepare the pan: Butter an 8-inch square baking pan. Line the pan with parchment paper, leaving a 2-inch overhang on two sides. Butter the parchment.
  • Transfer the orange chunks and milk to a high-speed blender (or food processor) and process until it is the texture of smooth applesauce. (You should have about 1 generous cup.)
  • In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
  • In a large bowl with an electric mixer, beat the butter and granulated sugar on medium until light and fluffy, about 3 minutes. Add the eggs, one at a time, scraping down the bowl as needed.
  • Add half the flour mixture and beat just until combined. Beat in the orange mixture, then beat in the remaining flour mixture. Transfer the batter to the prepared pan and smooth the top.
  • Bake the cake until a toothpick inserted into the center comes out with moist crumbs attached, 35 to 40 minutes. Transfer to a rack to cool for 20 minutes. Then, using the parchment, transfer the cake to a rack to cool completely.
  • While the cake cools, prepare the glaze, if using: In a small bowl, whisk together the confectioners' sugar, orange zest and orange juice. (Use a little less juice for a thicker glaze that will sit on top of the cake, or add a little more juice for a thinner glaze that will soak into the cake.)
  • Spread the glaze over the cooled cake, then slice to serve. Store leftovers well-wrapped at room temperature for up to 3 days.

6 tablespoons/85 grams unsalted butter, at room temperature, plus more for greasing the pan
1 small navel orange (about 250 grams), ends trimmed, cut into large chunks, and seeds removed, if necessary
1/4 cup/60 milliliters whole milk
1 1/2 cups/192 grams all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
3/4 cup/151 grams granulated sugar
2 large eggs, at room temperature
3/4 cup/77 grams confectioners' sugar
1/2 teaspoon freshly grated orange zest, plus 3 to 4 teaspoons freshly squeezed orange juice (from 1 orange)
