Tarragon Beef Stew Recipe - (4/5) image

Steps:

  • Heat fat of choice in the bottom of a large cast iron dutch oven over medium-high heat. Work in batches to not over crowd the pan, sear stew meat for five minutes before flipping. Continue browning all sides and set aside on a plate. Once all meat is seared, sauté the onion for ten minutes, until translucent. Return the meat, add broth, bring to a simmer. Reduce heat, cover, and let mixture simmer 60-90 minutes. Add carrots, sweet potatoes, herbs and salt. Stir to combine, cover, and let simmer another 30 minutes. Check seasoning before serving.

1 lb. grass finished beef stew meat, seasoned with Real salt or Himalayan sea salt
1 TB fat of choice {lard, tallow, or rendered bacon fat work especially well}
1 organic yellow onion, chopped
1 1/2 cups bone broth
2 organic carrots, peeled and sliced
1 large organic sweet potato, chopped
1 tsp Real salt or Himalayan sea salt
2 TB organic tarragon, chopped {or 2 tsp dry}
1 TB organic rosemary, chopped {or 1 tsp dry}
1 TB organic thyme, chopped {or 1 tsp dry}

Steps:

  • Heat oven to 450°F. Spray shallow roasting pan with cooking spray; place beef in pan. In small bowl, mix salt, pepper, garlic, dried tarragon and oil. Rub mixture on all sides of beef.
  • Bake uncovered 15 minutes. Reduce oven temperature to 350°F. Bake 30 to 40 minutes longer or until of desired doneness. Cover; let stand 15 minutes before slicing. Garnish with tarragon sprigs.

TARRAGON MEATLOAF

Everyone has a different idea of how meatloaf should taste. I am always looking for ways to revise and improve my recipe. The sour cream imparts extra moisture, even if you overcook it a little. The herbs add a fresh taste. If you have time, grind your own beef, using brisket and chuck cuts, and your own pork, using shoulder cuts.

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, mix the beef and pork and gently knead them together with your hands. Add the paprika, salt and pepper. Add the rest of the ingredients. Mix to blend.
  • The taste test: Heat a small saucepan and add the vegetable oil. When the oil begins to smoke, lower the heat and add a small piece of the mixture. Cook 1 to 2 minutes on each side. Remove from the pan and taste. Check seasoning. If too moist, add more bread crumbs. If too dry, add an extra egg.
  • Mold the meat into a loaf and place it in the center of a baking sheet lined with parchment paper. Using a pan without high edges will yield a meatloaf with a crust. Cook, undisturbed, for 15 minutes. Brush it with additional ketchup and lower the oven temperature to 350 degrees F.
  • Bake until the meat is firm when touched or when it has an internal temperature of 150 degrees F, about 45 additional minutes. Remove from the oven, pour off any excess grease and allow it to "rest" for 10 to 15 minutes before serving. Brush again with ketchup, if desired.

3/4 pound ground pork
1 teaspoon hot paprika
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 small yellow onions, peeled and minced (should equal roughly 1 cup)
2 cloves garlic, peeled and minced
1 cup bread crumbs
2/3 cup ketchup
1 cup sour cream
1 small bunch flat-leaf parsley, stemmed, washed, dried and chopped, 1/4 cup total
1 small bunch tarragon, stemmed, washed, dried and chopped, 1/4 cup total
3 eggs, lightly beaten
1 teaspoon vegetable oil
Additional ketchup for brushing, if desired

TARRAGON BEEF STEW WITH VERMOUTH

Simply throw it all together, cover, and walk away. Return to a rich, hearty, dark stew. Serve with heavy, rustic breads and strong cheeses, such as smoked Cheddar, baked Brie, or Roquefort.

Steps:

  • Melt butter In a large stockpot over medium-high heat. Add the beef stew meat, and fry for 2 to 3 minutes, or until evenly browned on the outside.
  • Pour the chicken broth, water, and vermouth into the stock pot. Add the potatoes, carrots, and garlic. Season with tarragon, bay leaf, Worcestershire sauce, sugar, honey, salt and pepper. Bring to a boil, reduce heat, and cover. Cook 2 1/2 hours to blend the flavors.
  • Remove cover and continue cooking 20 minutes, or long enough to evaporate enough liquid to reach your desired thickness.

Steps:

  • Bring a large pot of water to a boil and season generously with salt. Add lobsters head first to water and cook, covered, until shells are bright red and an antennae or leg pulls off easily, 8 to 10 minutes. Crack one open where the tail meets the body of the lobster. The flesh should be firm, white, and opaque. If it is still translucent, then the lobster needs more time to finish cooking. Drain lobsters head down in a colander to release excess liquid.
  • When cool enough to handle, crack lobster shells and remove meat from tails, claws, and knuckles. Tear the meat by hand into 1-inch pieces and place in a large bowl.
  • In a small bowl, combine the mayonnaise, lemon, celery, tarragon, cayenne, pepper, and 1/4 teaspoon salt. Pour over lobster meat and gently stir until lobster is well coated. Taste and adjust seasoning, adding more mayonnaise if desired. Chill lobster mixture for 15 to 30 minutes.
  • Spread cut sides of buns with butter. Heat a large skillet over medium heat and toast buns, buttered side down, until golden brown, about 2 minutes per bun. Fill each bun with lobster mixture and sprinkle with an extra dash cayenne, if desired. Serve immediately.

  • In a small bowl, dissolve yeast in warm milk. In a large bowl, combine 1 egg, butter, sugar, chives, zest, salt, tarragon, yeast mixture and 1-1/2 cups flour; beat on medium speed until smooth. Steps:

  • Position rack in center of oven and preheat to 400F degrees.
  • Heat oil in large skillet over high heat.
  • Pat beef dry.
  • Add to skillet and brown on all sides, turning frequently, about 7 minutes.
  • Place rack in roasting pan.
  • Transfer beef to rack.
  • Roast about 25 minutes for rare, or longer, if desired.
  • Pour oil from skillet.
  • Add butter and melt over medium-low heat.
  • Add shallots and saute 1 minute.
  • Add mushrooms, tarragon and salt.
  • Increase heat to medium, cover and cook until mushrooms release their juices, stirring once or twice, about 6 minutes.
  • Add wine and bring to boil.
  • Boil uncovered until almost no liquid remains, about 2 minutes.
  • Mix in 1 cup stock.
  • Stir cornstarch and remaining ¼ cup stock in small bowl.
  • Add cornstarch to mushroom sauce and bring to boil; stirring constantly.
  • Boil until thickened, about 1 minute.
  • Cut beef into ½ inch slices.
  • Overlap slices on plates.
  • Spoon sauce over and serve.
  • This is excellent served with Scalloped Potatoes with Cream and Broccoli with Lemon-Garlic Crumbs (in my recipes).
