TASTY PORK NUGGETS

Through my 30 years of being married to a pork producer, I've come across quite a few wonderful recipes. These nuggets are fabulous finger food for snacks, lunches and dinners.

Steps:

  • Combine the cornflake crumbs, wheat germ, sesame seeds, parsley, paprika, mustard, celery salt, onion powder, lemon-pepper and salt if desired; set aside. , Dip pork cubes in yogurt, then roll in crumb mixture. Arrange pork in a single layer on a baking pan coated with cooking spray. , Bake at 400° for 15-18 minutes or until juices run clear. For a crispier coating, broil for 2-3 minutes after baking.

Steps:

  • In a food processor, blend carrots, cauliflower, broccoli, garlic, egg, onion powder, salt, and pepper until combined.
  • Add 1¼ cup (145 grams) of bread crumbs and blend just until incorporated.
  • Scoop a tablespoon of the mixture and form a small circular-shaped "nugget."
  • Place the remaining ½ cup (60 grams) of bread crumbs in a bowl and cover each nugget with the bread crumbs.
  • Pan fry with a small drizzle of oil over medium-high heat until both sides are golden brown, about 10 minutes. Or, you can bake them on a piece of parchment paper at 400˚F (200˚C) for 25 minutes, flipping after the first 15 minutes.
  • Serve with your favorite dipping sauce.
  • Enjoy!

Steps:

  • Preheat oven to 375°F Spray a baking sheet with veg. cooking spray.
  • In a large bowl, combine tuna, spinach, bread crumbs, Monterey Jack, Parmesan, eggs, onion and salt; mix well.
  • Drop generous tablespoonfuls of mixture, about 1 inch apart, onto the prepared baking sheet.
  • Bake 15 minutes; turn nuggets over and bake 10 minutes longer. Serve immediately.

Wheat Free, Milk Free, Egg Free, Tasty Chicken Nuggets image

Steps:

  • Crush garlic cloves and stir into 1/4 cup of oil - set aside.
  • Cut up chicken into nugget size pieces (note i have also done this leaving the breast whole and cooking a little longer - its very yummy).
  • In a bowl, mix the no-egg and water to make a paste - add more water if the paste is too thick to coat the chicken, more no-egg if its too watery.
  • Fill a second bowl with the polenta.
  • Dunk the chicken into the no-egg paste, then into the polenta bowl, ensuring the chicken is fully covered.
  • When all chicken is coated, heat the "garlic oil" in a pan, add the nuggets and cook until golden.
  • Great on their own for nibbles or with a salad and veges for a meal.
