What is "mince and tatties"? - I hear you ask. Basically it is meat and potatoes, but with a Scottish recipe. Ever since I was a kid, I have loved mince & tatties, and even these days I could live on it.

Steps:

  • In a good sized pan (non-stick is best) heat up some oil, chop up the onion, and stir fry.
  • Break up the mince, and place in the pan.
  • Stir until brown.
  • Make up the brown gravy (see packet for directions! LOL).
  • Add the gravy to the mince, and start to simmer.
  • Chop up the carrots (as much/little as you want) and add to the mix.
  • Pour in some peas.
  • Add salt (we use low sodium)& pepper, stir and simmer the mixture for about 20 minutes.
  • Peel and chop the potatoes, and boil for about 20 minutes, adding some salt.
  • Serve and enjoy.
  • Also great if served with some boiled cabbage or Brussels sprouts.

1 lb beef mince (Yanks call it 'ground sirloin', we usually buy the 8%-10% fat range)
1 large onion
vegetable oil or olive oil
carrot
peas (we use frozen)
1 (1 1/4 ounce) packet beef gravy
6 boiling potatoes

Steps:

  • Heat the oil in a pan and sauté the onion until it is brown.
  • Add in the mince and cook until well browned.
  • Drain off the liquid.
  • Add the carrots and oatmeal, mix well and pour in enough water to just cover.
  • Crumble in the stock cubes, season and stir.
  • Cover the pan and simmer the mince for about 20 minutes.
  • Once the mince is cooked thicken the mince with about 3 teaspoons of gravy powder or cornstarch mixed with a little cold water.
  • Serve the mince with boiled potatoes.

1 tablespoon oil
1 large onion, finely chopped

1 tablespoon toasted pinhead oats
water (to cover)
1 -2 beef bouillon cube (or equivalent powdered beef bouillon -- Oxo if you can find it)

Steps:

  • Using a wok, saute the ground sirloin over medium heat.
  • When the meat is browned, drain it, but do not rinse.
  • Turn heat to low and add spices (except bisto).
  • Mix for 2 minutes.
  • Mix 2 Tbsp bisto powder and 2 cups cold water together (not into the meat).
  • Add roughly half of the gravy to the meat and increase heat to medium.
  • stir for 5 minutes.
  • Add the rest of the gravy.
  • stir for 5-10 more minutes.
  • Use the rest of the water and bisto to make more gravy and add slowly over 5 minutes.
  • cook on low for 15-30 minutes until thick.
  • wash, peel, boil and mash the potatoes.
  • add milk and butter to the potatoes.
  • When ready, serve meat over the potatoes.

Steps:

  • The day before you want to serve, preheat the oven to fan oven 200C/conventional 220C/gas 7. Put the potatoes into a pan of lightly salted water, return to the boil and cook for 5 minutes. Drain the potatoes, put them back into the pan and place it back on the heat for a couple of minutes to dry out.
  • Meanwhile, pour the oil into a large roasting tin (you may have to use two) and heat it in the oven until smoking hot. Now stir the potatoes into the hot oil and return to the oven to roast, turning occasionally, for 55 minutes.
  • Cook the swede in boiling salted water for 50-55 minutes, or until very soft. Drain and add to the roasted potatoes. Roughly mash everything together, keeping quite chunky, then cool, cover and keep in a cool place.
  • To serve, preheat the oven to fan 180C/conventional 200C/gas 6. Uncover the potatoes and swede, dot with the butter and put in the oven to reheat for 25-30 minutes, stirring now and again until piping hot. Serve with lots of butter.

Steps:

  • Brown ground beef and onion in skillet over medium heat. Drain fat.
  • Make a small well in the center of the meat, and add the gravy mix and water.
  • Stir until gravy boils and thickens.
  • Stir in Worcestershire sauce, mushrooms, salt and pepper.
  • Heat through and turn down to low to keep warm.
  • Adjust the seasonings with more salt and pepper, if you like.
  • With a ricer or a potato masher, mix the boiled potatoes with the butter, milk and salt to taste.
  • Serve the meat with the potatoes. It's good with peas!

Steps:

  • Brown ground beef draining off excess fat if any. Put into stew like pot or crook-pot. Add all dried seasonings, packages beef broth, dried onion and onion soup mix and mix well. Add in diced carrot and onion. Add 2 1/2 to 3 cups of water, stir all ingredients together. Simmer until carrots and onions are tender.
  • Peel and dice potatoes and cook until tender, drain. Add butter, milk, cream cheese, salt and pepper and whip up until creamy.
  • Cook peas or sweet corn, drain, season and add a little butter.
  • Mix Bisto Gravy Mix and flour together with a little water to form a smooth paste. Turn up ground beef and add in a teaspoonful at a time of the gravy/flour paste until quite a thick consistency.
  • Put a pile of mashed potatoes in the middle of the plate. Make a well in the middle. Ladle the ground beef stew into the well. Add veggies.

Steps:

  • Heat the haggis following pack instructions. When the haggis has 30 mins cooking time remaining, tip the potatoes into a large pan of generously salted cold water, then bring to the boil over a medium heat and cook for 10-12 mins until very tender when pierced with a fork. Drain well and leave to steam-dry in the colander for 10 mins.
  • Add half the milk and two-thirds of the butter to the pan used to cook the potatoes, and warm over a low heat until the butter is melted and the milk is just steaming. Remove from the heat and return the potatoes to a pan, then use a potato masher to mash everything together. Or, pass the potatoes through a medium sieve into the pan in batches using the back of a spoon or ladle. (Using a sieve will give you a very fine, no-lump texture.) Season well with salt and pepper.
  • Meanwhile, cook the swede and carrots in a pan of boiling water for 18-20 mins until very tender when pierced with a fork. Drain well and leave to steam-dry in the colander for 10 mins. Return the vegetables to the pan along with the remaining milk and butter, then coarsely mash using a potato masher - you don't want a smooth texture here. Season well. Serve the haggis with the neeps and tatties alongside.
