TEXAS COWBOY COOKIES IN A JAR

Steps:
- Layer ingredients in order given in a 1- quart wide mouth canning jar.
- Press each layer firmly in place before adding next ingredient.
- Recipe for Cowboy Cookies (to be attached with the mix):.
- Empty jar of cookie mix into a large mixing bowl,.
- Blend mix together.
- Add: 1 stick butter melted, 1 large egg, slightly beaten, and 1 tsp vanilla.
- Mix until completely blended.
- Shape into balls the size of walnuts; place 2 inches apart on sprayed baking sheets.
- Bake at 350° for 11-13 minutes until edges are lightly browned.
- Cool 5 minutes on baking sheet.
- Remove cookies to racks to finish cooling.
- Makes 3 dozen cookies.

Steps:
- 1. Preheat oven to 375F
- 2. Cut the bacon into thirds and wrap each Little Smokie (small sausage). Place all the wrapped smokies in a single layer in a baking dish.
- 3. Then melt the stick of butter and then 1 cup of brown sugar and stir until mixed well. Pour the butter and brown sugar mixture on the smokies and bacon. Then take the other cup of brown sugar and sprinkle evenly over the smokies.
- 4. Bake them for about 15-20 minutes and then turn the heat up to 400 dgrees F for about 5 minutes or longer until the bacon becomes crispy.
- 5. Notes: I like to put them under a low broiler for 5 minutes. I have also left off the second cup of brown sugar and just drizzled a bit of honey over it. Another great and tasty way to do them is to mix the brown sugar with a bit of maple syrup and drizzle over them. If you are using them as appetizers, then secure the bacon with a toothpick and they are ready to serve.

Laura Bush's cowboy cookies, a classic chocolate chip cookie that's been beefed up with oats, pecans, coconut and cinnamon, beat Tipper Gore's ginger snaps by a mile. Here is an adaptation of that winning recipe.

Steps:
- Heat oven to 350 degrees.
- Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
- In a very large bowl, beat butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars, and combine thoroughly.
- Add eggs one at a time, beating after each. Beat in vanilla.
- Stir in flour mixture until just combined. Stir in chocolate chips, oats, coconut and pecans.
- For each cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
- Bake for 15 to 17 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies from rack to cool.
