SUNNY'S CREAMY 5-CHEESE MAC 'N' CHEESE

Sunny's Creamy 5-Cheese Mac 'n' Cheese image

Steps:

  • Preheat the oven to 375 degrees F. Butter the bottom and sides of a deep 13-by-9-inch baking dish.
  • Make the sauce. In a large bowl, mix the ingredients in order, combining completely between additions. Start by adding the flour, paprika, ground mustard, garlic, scallions, hot sauce, cream cheese, a pinch of salt and more grinds of black pepper than normal. Mix this until combined completely. In a liquid measure, mix the heavy cream and pasta water together and add slowly to the bowl while whisking. Add the Cheddar, Gouda, mozzarella and Pecorino Romano cheeses.
  • Bake. Add the pasta to the bowl of liquid and stir until the liquid seeps into the elbows and everything is distributed evenly. Pour into the prepared dish. Level with the back of your spoon. Toss together the Cheddar and mozzarella in a small bowl and sprinkle evenly over the top. Bake until the edges are bubbly and the top is golden brown, 35 to 40 minutes.

2 tablespoons salted butter
1 tablespoon all-purpose flour
1 1/2 teaspoons hot Hungarian paprika
1 teaspoon ground mustard
3 cloves garlic, grated on a rasp
4 finely chopped scallions, white and green parts
1 teaspoon hot sauce, such as Frank's or Cholula
8 ounces whipped chive-flavored cream cheese
Kosher salt and freshly ground black pepper
2 cups heavy cream
2 cups reserved pasta water
8 ounces sharp Cheddar, shredded from the block
8 ounces Gouda, shredded from the block
8 ounces mozzarella, shredded from the block
3 ounces Pecorino Romano, shredded on a box grater
1 pound elbows, cooked al dente in salted water, 2 cups pasta water reserved
8 ounces sharp Cheddar, shredded from the block
8 ounces mozzarella, shredded from the block

Mac 'n Cheese and Spinach Strata #SP5 image

Steps:

  • Heat oven to 350 degrees F. Coat a 2-3 quart glass baking dish with cooking spray. Set aside.
  • Transfer 1 package of the heated Simply Macaroni and Cheese to the bottom of prepared baking dish and spread evenly. Top evenly with spoonfuls of spinach. Cover spinach with 2nd package of macaroni and cheese and spread evenly.
  • In a small bowl, combine the breadcrumbs, butter and cheese. Sprinkle over casserole.
  • Bake for 30-35 minutes or until hot and bubbly and crumbs are just starting to brown.

2 (20 ounce) packages Simply Macaroni & Cheese, heated as directed on package
1 (16 ounce) bag frozen spinach, thawed and squeezed dry
2/3 cup breadcrumbs
3 tablespoons butter, melted

  • 2) Mix Cornbread and Cheese together and sprinkle over Mac N Cheese mixture.

Kale Mac N Cheese #SP5 image

Steps:

  • Heat 2 Tbsp olive oil over med-high heat.
  • Add 1 medium yellow onion minced and saute until soft, about 5 minutes.
  • Add 2 cloves garlic minced (or more if you like garlic!) and saute until fragrant, 30-60 seconds while stirring frequently so it doesn't burn.
  • Add one bunch (approx 8 oz or more) kale (tough stems removed and leaves chopped) to pan and toss to coat with onion/garlic/oil mixture.
  • Add 1-2 tbsp water to pan and cover with lid. Allow kale to steam until bright green and tender approx 5 mins, tossing kale 1-2 times in the interim.
  • Add 20 oz package Simply Macaroni and Cheese to skillet and stir to combine.
  • Season with pepper, heat through and serve!

Fried Mac & Cheese #SP5 image

Steps:

  • Cook Simply Macaroni & Cheese as directed on package.
  • After cooked, place the macaroni & cheese in a large bowl (more deep than wide) and mix the green onions. Set aside to cool for about an hour. This will allow the macaroni and cheese to firm up and stick together. May have to let sit longer if not sticking together. (also great when using left over Mac & cheese!).
  • Whisk egg until well blended. This will be used to dip your mac & cheese "balls" into so the flour mixture will stick to it for a batter.
  • Take the flour and add the steak seasoning to it. Mix well.
  • Use an ice cream scoop or round table spoon to form rounded chunks of mac & cheese.
  • Gently dip the mac & cheese balls into the egg batter and then roll in the flour. Place into frying oil and fry until slightly golden brown. (approximately 1 minute on medium heat - - be sure to turn on all sides).
  • Repeat the process until you have all fried up!
  • Makes about 12.
  • Enjoy!

Steps:

  • Thaw overnight the package of Simply Macaroni & Cheese in the refrigerator.
  • When ready to cook, preheat oven for 400 degrees F.
  • In a frying pan or large skillet, heat 2 tbsp of the bacon fat on medium-high. When fat has melted and is sizzling, add the mushrooms and saute them for 4-5 minutes.
  • Open the package of Simply Macaroni & Cheese and add to the frying pan. Mix well and allow to cook for 2 minutes. Sprinkle the white truffle oil around the pan and stir well to combine all of the flavors.
  • Pour the mixture into a deep glass or ceramic bread loaf pan. Melt the remaining 2 tbsp of bacon fat in the microwave and stir in the panko breadcrumbs. Stir well to incorporate the bacon fat. Top the mac and cheese with the panko breadcrumbs evenly.
  • Bake in the upper portion of the oven for 16-20 minutes, or until the topping is golden and the cheese sauce is bubbly. Serve hot!
