Steps:
- Heat the grill to high. Put the salmon on a baking tray, skin-side down, and grill for 8-10 mins until cooked through. Put the noodles in a heatproof bowl and pour over boiled water from the kettle. Leave for 5 mins.
- Heat the curry paste in a pan for 1 min, then add the coconut milk and 400ml water. Season and bring to the boil. Drain the noodles and add to the pan with the pak choi. Heat through for 1 min, then transfer to bowls and top with the salmon.

Steps:
- 1. In a large pot add oil and add the garlic, ginger, onion, chili pepper, lemongrass, and kaffir leaves. Cook on medium heat two minutes to release the flavors.
- 2. Pour in the coconut milk and vegetable broth. Bring to a boil and reduce heat to a simmer and simmer for 15 minutes
- 3. Strain the broth and discard the solids. Place the broth back on stove and add the fennel and fish sauce. Cook 2 minutes. Add the spinach and carrots. Cook 1 minutes. Add the salmon and lime juice. Cook 3 to 4 minutes. Add the cilantro and green onions serve

- Heat the oil in a large pan, then add the curry paste. Stir in the onion, then cook gently for about 5 mins until softened. Pour in the coconut milk and bring to the boil. Reduce to a simmer, then add the salmon chunks and beans.
- Leave to gently simmer for 5 mins until the fish flakes easily and the beans are tender. Scatter with the coriander or basil, and serve with plain rice.

- Heat the oil in a large pot over medium heat. Cook and stir the ginger, lemongrass, and curry paste in the heated oil for 1 minute. Slowly pour the chicken broth over the mixture, stirring continually. Stir in the fish sauce and brown sugar; simmer for 15 minutes. Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are soft, about 5 minutes. Add the shrimp; cook until no longer translucent about 5 minutes. Stir in the lime juice; season with salt; garnish with cilantro.

- Pour the stock into a large pan, bring to the boil, then stir in the curry paste. Add the noodles and cook for 8 mins. Tip in the mushrooms and corn and cook for 2 mins more.
- Add the salmon to the pan and cook for 3 mins or until cooked through. Remove from the heat and stir in the lime juice, soy sauce and a pinch of sugar. Ladle into 4 bowls and sprinkle over the coriander just before you serve.

- In a small saucepan, melt the butter over medium high heat. Whisk in the flour and cook for 3 minutes, whisking continually, or until the flour browns lightly and smells nutty. Remove from the heat and set aside.
- Slowly cook the bacon in a heavy stockpot over medium heat until the bacon fat is rendered and the bacon begins to crisp. Add the onion, garlic, ginger, bay leaves, galangal and cayenne pepper. Then add in the carrots and celery, stir and sauté until the vegetables become soft.
- Stir in the wine and cook until the wine has reduced and absorbed into the veggies. Add the potatoes and sauté for 3-4 minutes. Add the stock, lemon grass, kaffir lime leaves or zest, milk and the cream.
- Raise to medium high heat and bring mixture to a low boil. Stir in the roux and cook until the mixture thickens, about 5-8 minutes. Season with kosher salt and freshly ground black pepper to taste.
