ROTISSERIE CHICKEN SALAD
This salad is great for parties or family gatherings, and prep is fast. This recipe is easily doubled. Don't worry about leftovers - there are never any left! Serve fresh or chilled on bread or crackers of choice.

- Combine chicken, onion, eggs, pickle relish, mustard, paprika, and red pepper flakes in a bowl; stir in mayonnaise by spoonfuls until mixture holds together but isn't too moist. Season salad with salt and pepper.

Thalhimers was a department store in downtown Richmond that no longer exists. We do there for lunch, get the chicken salad plate, which had cold asparagus spears and cantaloupe. Wonderful!!

Steps:
- In a large bowl, combine chicken, celery, lemon juice and mayonnaise.
- Stir to blend.
- Add pepper and salt and mix thoroughly.
- Chill before serving.
- 8 servings.

BILLIE'S HOUDINI CHICKEN SALAD
Steps:
- In a large stockpot over high heat, cover the chicken with water and bring to a boil. Cook for 20 to 30 minutes, or until tender. Drain and set aside to cool completely, about 20 minutes, then dice.
- In a large bowl, mix together the chicken, yogurt, grapes, almonds, pecans, cranberries, apples and onions. Season with salt and pepper to taste. Serve on toasted bread or with crackers.

- Pour into prepared pan.
- Bake in preheated oven until firm and golden brown, 30-35 minutes.
