Old-Fashioned Turkey Noodle Soup image

Steps:

  • Place the turkey carcass, bones from wings and drumsticks, neck bone, onion, carrots and garlic in a 15x10x1-in. baking pan coated with cooking spray. Bake, uncovered, at 400° for 1 hour, turning once., Transfer the carcass, bones and vegetables to an 8-qt. stockpot. Add 4 qts. cold water; set aside. Pour remaining cold water into baking pan, stirring to loosen browned bits. Add to pot. Bring to a boil. Reduce heat; cover and simmer for 3-4 hours. , Cool slightly. Strain broth; discard bones and vegetables. Set stockpot in an ice-water bath until broth cools, stirring occasionally. Cover and refrigerate overnight. , Skim fat from broth. Cover and bring to a boil. Reduce heat to a simmer. Meanwhile, in a Dutch oven, bring 3 qts. water to a boil. Add noodles and carrots; cook for 4 minutes. Add celery; cook 5-7 minutes longer or until noodles and vegetables are tender. Drain; add to simmering broth. Add cubed turkey; heat through. Stir in the parsley, salt, thyme and pepper.

6 to 8 garlic cloves, peeled
4 quarts plus 1 cup cold water, divided

3 quarts water
5 cups uncooked egg noodles
2 cups diced carrots
2 cups diced celery
3 cups cubed cooked turkey
1/4 cup minced fresh parsley
2-1/2 teaspoons salt
2 teaspoons dried thyme
1 teaspoon pepper

A great way to stretch a couple of extra meals from your Thanksgiving turkey that can also be frozen and enjoyed anytime. This is almost as popular as the turkey dinner itself at our house. Works exactly the same with chicken - Enjoy!

Thanksgiving Turkey Noodle Soup image

Steps:

  • 1. Combine turkey carcass (use whatever fits!) and water in a large soup pot and boil for 1 hour.
  • 2. Remove carcass and bones - allow to cool and pick off any loose meat pieces. Return meat to stock.
  • 3. Add extra leftover turkey meat as needed, onion, carrots, celery, potatoes, bay leaf and all seasonings and simmer for 1 hour.
  • 4. Cook egg noodles in a separate pot according to instructions.
  • 5. Rinse noodles in cold water and allow to cool.
  • 6. Add noodles to soup and serve.

Day-After-Thanksgiving Turkey Carcass Soup image

Steps:

  • Place the turkey carcass in a large, deep pot, and add the stuffing, celery, carrots, onion, bay leaves, poultry seasoning, sage, and chicken broth. Pour in additional water if needed to cover. Bring to a boil over medium-high heat; reduce heat to medium, and simmer for about 1 hour, skimming off any foam. Remove the carcass and any bones. Pick any meat off and return to the pot, discarding bones and skin.
  • Season to taste with garlic salt and pepper. Stir in the rice and return to a boil over medium-high heat. Lower heat to medium, and simmer 15 minutes. Stir in the peas, and continue to simmer until rice is tender, about 10 minutes more. Adjust seasonings to taste.

Creamy After-Thanksgiving Turkey Soup image

Steps:

  • Place turkey carcass in a large pot or Dutch oven and cover with water. Bring to a boil. Reduce heat to medium, cover, and simmer for 1 hour. Remove carcass and allow to cool. Separate turkey meat from the bones. Cut meat into bite-size pieces; discard bones. Reserve about 12 cups turkey broth in a large bowl. Save remaining broth for another use.
  • Melt butter in another large pot or Dutch oven over medium heat; cook and stir onion, carrots, and celery in melted butter until tender, about 5 minutes. Stir flour into vegetable mixture; cook and stir until smooth, about 5 minutes. Gradually stir in about 1/3 the reserved turkey broth. Bring to a boil; cook and stir until thickened, about 2 minutes.
  • Stir remaining turkey broth, turkey meat, half-and-half, fettuccine, stuffing, salt, chicken bouillon, pepper, and poultry seasoning into half-and-half mixture. Reduce heat to medium-low, cover, and simmer until noodles are tender, about 10 minutes more.

TURKEY AND NOODLES

This comforting family recipe belongs to Whitney Reynolds, a New Yorker with roots in Tennessee. She traditionally serves the dish of thickened turkey broth and noodle-shaped dumplings as a side at her Thanksgiving dinner, next to the roasted bird and mashed potatoes. The yolk-rich noodles, rolled and cut with a knife, are dried out for some hours at room temperature. That way, they become strong enough to withstand a long boil during which they soak up the flavors of the roasted turkey stock, going tender and sticky-edged. The stock reduces, until it's somewhere between soup and gravy. Ms. Reynolds, a noodle purist, would never put turkey meat in the dish, but the day after Thanksgiving, when there's often a little left over, it's hard to imagine a better place for it to end up. Consider it optional.

Steps:

  • In a large mixing bowl, combine flour, baking powder and salt. In a separate bowl, whisk together yolks, butter and cream, then slowly add to the dry ingredients, beating together with a fork. When the dough gets too stiff for the fork, use your hands to mix and knead in the bowl until dough is yellow and smooth. Wrap well with plastic wrap and transfer to the refrigerator for about 1 hour.
  • Flour a work surface, and roll out dough until it's about 1/4 of an inch thick, dusting with more flour as needed. Use a pizza roller or long knife to cut the dough into thick noodle shapes measuring just under 2 inches by 1/2 inch. Spread cut noodles out on lightly floured parchment paper, cover with a clean dishcloth and let sit out at room temperature for about 6 hours, or overnight.
  • In a large pot, bring turkey stock to a hard boil, then add the noodles, stirring gently. Boil until noodles are moist and tender all the way through and the broth has reduced and thickened like a gravy, about 30 to 40 minutes. If adding turkey meat, stir into the pot in the last 10 minutes of cooking. Taste and adjust seasoning with salt and black pepper and serve in shallow bowls.

Turkey Noodle Soup image

Steps:

  • In an eight quart kettle or Dutch oven place turkey bones, water -- down through to and including the bay leaf.
  • Heat to boiling; reduce heat, cover and simmer for 1 hour.
  • Remove the bones to a platter and let c ool.
  • Add the parsley through to green beans.
  • Heat to boiling; reduce heat and simmer for 10 minutes.
  • Meanwhile, scrape meat from carcass and return meat to soup pot. Add liquid if required.
  • Heat to boiling; add noodles and cook uncovered for 10 minutes.
  • Melt butter in a small frying pan; stir in flour.
  • Cook over low heat, stirring constantly, until the flour browns.
  • Stir into boiling soup.
  • When the soup returns to a boil; reduce heat and simmer for 5 minutes.
  • Serve hot in large bowls - as if there were any other kind! - Enjoy.
  • Notes: I serve this with fresh French Bread and butter.
  • I have used yellow beans and a mixture of both.
  • Once I wound up using frozen mixed vegetables - and it was still good.
  • On two makings, chicken was substituted for the turkey - and it turned out well.
  • Hints on Herbs and Spices: To substitute dried herbs for fresh, use 1/3 tsp powdered or 1/2 tsp crushed for every Tbsp of fresh chopped herbs.
  • To test for dryness before packing (in case of drying f resh herbs for winter use) put a few sprigs or leaves in a tightly covered jar and watch for condensation.
  • Store herbs in tightly covered jars, away from heat. Add mint, oregano, basil and any other dried herbs to recipes at the end or near end of cooking time for a more pronounced flavour.
  • If you are enlarging recipes, spice to taste rather than to measure. When preparing cooked foods for freezing, it is advisable to under-season them with herbs or spices, then add more seasoning to taste when you reheat them and you will have the ultimate in flavour.
