SPINACH PUFF
My favorite! Card 25, packet 17 of My Great Recipes. Can make 2 hours ahead and baked just in time for serving.

Steps:
- Cook spinach according to package directions, adding onion to the pan as spinach cooks.
- Drain well. Fold in the eggs and sour cream. Blend in the Parmesan cheese and flour. Stir in the butter, nutmeg, salt and pepper.
- Turn into a well buttered 1-quart casserole or soufflé dish.
- Bake at 350°for 25-30 minutes or until the center is set.
- Serving suggestions: baked ham, tomatoes vinaigrette, and French bread.
THE ONE SPINACH APPETIZER PUFF
One of each ingredient (almost) makes this recipe easy to make. Perfect for any party or even to make a regular dinner a bit more special. These can be made ahead and kept in the freezer. When ready to serve, just pop in an oven or toaster oven for 5-10 minutes until heated through. (personally, I think these taste better when frozen and then reheated.)

Steps:
- Break egg into a bowl and beat with a whisk for 30 seconds.
- Add remaining ingredients and combine with a wooden spoon until well mixed.
- Let batter sit while greasing a mini-muffin pan and preheating oven to 375 degrees.
- Spoon batter into the mini-muffin pan to 3/4 full.
- Bake for 25-30 minutes or until puffed and golden brown.
- TIP: There will be leftover batter after filling the 24 - mini muffin pan. If you don't have a second pan, and you don't want to wait for the first batch to finish, use small foil tart cups for the last few, they may take a bit longer to cook. However, since these will disappear quickly, and they can be frozen, it is much easier to just double the recipe and just make 2 1/2 - 3 pans.

- Preheat oven to 400°. Unfold puff pastry; cut each sheet into 12 sections. Place in greased mini muffin cups, pressing gently onto bottoms and up sides, allowing corners to point up., In a large bowl, stir together spinach, cream cheese, mozzarella, feta, 1 egg, garlic, pepper and salt. Spoon 1 tablespoon into each cup. Bring pastry corners together and pinch to seal. In a small bowl, beat remaining egg. Brush over pastry edges. Bake until puffed and golden brown, about 20 minutes.

SPINACH IN PUFF PASTRY
Steps:
- Preheat the oven to 375 degrees F.
- Heat the butter in a saute pan and cook the onions over medium-low heat for 5 to 7 minutes, until tender. Add the garlic and cook for 1 more minute. Meanwhile, squeeze most of the water out of the spinach and place it in a bowl. Add the onion mixture, scallions, Gruyere, Parmesan, eggs, bread crumbs, salt, pepper, nutmeg, and pignolis. Mix well.
- Unfold one sheet of puff pastry and place it on a baking sheet lined with parchment paper. Spread the spinach mixture in the middle of the pastry, leaving a 1-inch border. Brush the border with the egg wash. Roll out the second piece of puff pastry on a floured board until it's an inch larger in each direction. Place the second sheet of pastry over the spinach and seal the edges, crimping them with a fork. Brush the top with egg wash but don't let it drip down the sides or the pastry won't rise. Make three small slits in the pastry, sprinkle with salt and pepper, and bake for 30 to 40 minutes, until the pastry is lightly browned. Transfer to a cutting board and serve hot.
FLORENTINE APPETIZER PUFFS
Simple ingredients but an impressive taste. Great on your buffet or served at a cocktail party. They can be prepared up to 1 week ahead, so your party planning couldn't be easier.

- Preheat oven to 375 degrees. Lightly grease baking sheets. Cook spinach according to package directions; drain well. Transfer to large bowl. Add Parmesan and onion. Blend in eggs. Stir in croutons and butter. Shape mixture into 1-inch balls. (Can be prepared 1 week ahead, covered and frozen. Do not thaw before baking. Just increase baking time to 20-25 minutes.) Arrange on prepared baking sheets, spacing 1/2" apart. Bake until golden brown, about 15 minutes.

- In a large bowl, mix together chopped spinach, dry bread stuffing mix, eggs, Parmesan cheese, onion, butter and Cheddar cheese. Cover and chill in the refrigerator approximately 30 minutes.
- Drop the mixture by rounded spoonfuls onto a lightly greased large baking sheet. Place baking sheet in the freezer approximately 1 hour.
- When ready to bake, allow the balls to partially thaw, about 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet.
- Bake the balls in the preheated oven 20 to 25 minutes, or until lightly browned.

Got this recipe from a friend. They are one of my favorite appetizers. Cook time is an estimate because she said she doesn't pay that much attention. Chill time is 1-2 hours.

Steps:
- In a saucepan, add the onions and spinach; cook according to the directions on the package of spinach; drain and press out liquid.
- In a mixing bowl add the spinach, eggs, cheeses, dressing, margarine, garlic powder, peppers, and Worcestershire sauce; stir to combine.
- Add the muffin mix; stir to combine.
- Cover and refrigerate for 1-2 hours.
- Shape mixture into 1-inch balls and place on a very lightly greased baking sheet.
- Bake at 350° for 10-15 minutes (estimate).

- Need Mini Cup Cake Pans).
- Grind chicken breast in food processor until consistency of ground meat.
- Defrost spinach according to directions of package and drain. Dry the spinach as much as possible with paper towels and set aside.
- Rough chop artichoke hearts until they are 1/8" pieces and set aside.
- Chop onion to a 1/4" dice and mince garlic cloves.
- Add 2 tablespoons oil to a sauté pan and heat over medium heat, once warm add onions and sweat onions about 5 minutes than add minced garlic. Cook until tender and the onion starts to show color.
- Add ground chicken breasts to pan with onions and garlic and cook thoroughly.
- Once chicken is cooked, add artichoke hearts and chopped spinach. Mix and heat through.
- Turn the heat down to low, add the whole package of laughing cow cheese and mix everything together. Heat until the cheese is just melted.
- Remove from heat and allow to cool to room temperature.
- Once room temperature is achieved, stir in the sour cream.
- Place in refrigerator and allow to cool completely about 15 minutes.
- Once chicken mixture is completely cool heat oven to 375 degrees F.
- Unroll crescent dough and for each serving you will need a half of a crescent triangle piece. Roll the dough with rolling pin to stretch it and than poke all over with fork to help prevent the dough from rising, do the same to each half piece.
- Take the rolled out piece and place in cupcake pan so that the sides and bottom are covered and there is dough to fold over top to patch the pieces together.
- Once the whole pan is filled with the dough place about 1-2 teaspoon of the chicken mixture in each and fold over the tops making sure there are no openings.
- Bake in the 375 degree F oven for 14-16 minutes (depending on your oven.).
- They are done once golden brown on top and will just pop right out of the pan.

- Using your hands, squeeze spinach until dry, forcing out as much water as possible (too much water will make for a soggy filling; you should have about 2/3 cup well-drained spinach). - Preheat oven to 400°. Beat remaining egg to blend in a small bowl. Brush pastry with egg wash (this will give the pastry a nice sheen). Bake until pastry is golden brown and puffed, about 25 minutes. Transfer to a wire rack; let puffs cool in pan for 10 minutes. Run a sharp paring knife around pan edges to loosen; turn out puffs onto rack to cool slightly before serving.
