THE RUMPOLITAN

The Spaniard - a wonderfully cozy, cluttered, friendly pub in Belfast, Northern Ireland - has a fine assortment of rums and a winning way with rum-based cocktails. I've had many excellent daiquiris there, but I can also vouch for the Rumpolitan, the bar's alternative to a Cosmo. The Clément Créole Shrubb orange liqueur contributes a subtle, welcome note of bitterness and a flash of spice.

The Rumpolitan image

Steps:

  • Shake the liquid ingredients with ice, and strain into a rocks glass filled with ice cubes. Garnish with the lime wedge.

3/4 oz. Rhum Clément Créole Shrubb
3/4 oz. white rum
2 1/4 oz. cranberry juice
Juice of 3 lime wedges
1 lime wedge

UPDATED WHISKEY-GINGER HIGHBALL

A dressed up version of an easy favorite, galvanized by fresh ginger and orange.

Updated Whiskey-Ginger Highball image

Steps:

  • Muddle one slice of ginger with syrup and a bit of ginger beer in the bottom of a highball glass. Fill glass with ice cubes.
  • Add rye and stir with a bar spoon. Add ginger beer to fill.
  • Run the other slice of ginger around the rim of the glass, then discard. Twist orange peel over drink to release oils, then drop into glass.

2 slices raw, peeled ginger (about the size of a quarter)
1 bar spoon Morris Kitchen ginger syrup
Ginger beer (I like Gosling's)
3 ounces rye
Orange peel twist to garnish

GIN AND TONIC WITH BITTERS AND ORANGE

Use bitters and orange peel to perk up a gin and tonic.

Gin and Tonic With Bitters and Orange image

Steps:

  • Fill a highball glass with ice and add gin and simple syrup. Top with tonic water and add orange bitters. Garnish with a ribbon of orange; let it drop into the glass.

2 ounces London Dry-style gin
1 teaspoon simple syrup
2 dashes orange bitters
Tonic water to top
Ribbon of orange peel, for garnish

RUM RAISIN HOT COCOA

Rum Raisin Hot Cocoa image

Steps:

  • In a saucepan over low heat, combine cocoa powder, sugar, crème de cacao and just enough half-and-half to make a slurry. Add milk and whisk until blended (be careful not to boil). Remove from heat and add rum. To serve, put three rum-soaked raisins in a mug, pour in the cocoa mixture and top with cream that has been freshly whipped with a little rum.

2 tsp. cocoa powder
1 1/2 tsp. demerara sugar
1 tsp. dark crème de cacao
Half-and-half as needed (about 1 tbsp.)
7 oz. milk
1 oz. dark rum
3 rum-soaked raisins
Whipped cream

LEMON DAIQUIRI

Is a daiquiri a daiquiri only if it includes lime? Nope. Even bars in Cuba, the drink's homeland, play pretty fast and loose with daiquiri variations. The lime shortage of 2014 inspired me to try it with lemon instead, and the result is bracing and a little disorienting (in a good way) - like a union between a traditional daiquiri and a Tom Collins. And I like what the distinctive funkiness of rhum agricole adds to the drink. Swap in different fresh, seasonal citrus juices whenever the mood strikes (but adjust the amount of simple syrup accordingly, as other fruits are inherently sweeter than lemons). I'm thinking a daiquiri with clementine juice will hit the spot come winter.

Steps:

  • Shake all ingredients except lemon verbena with ice, and strain into a cocktail glass.
  • Garnish with verbena.

2 ounces rhum agricole blanc (like Neisson)
1 ounce fresh lemon juice
½ ounce simple syrup
Lemon verbena for garnish

TEQUILA SHOTS WITH SANGRITA CHASERS

There's only one way to improve on tequila shots: chase them with a short glass of spicy, citrusy sangrita. This recipe makes an entire pitcher of sangrita, enough for several shots, though you could also pair it with very cold Mexican beer.

Steps:

  • To make sangrita, mix all ingredients except tequila in a pitcher and chill well.
  • Shake tequila with ice; strain into shot glasses. Serve sangrita in small glasses to chase tequila shots.
