ANGEL FOOD CAKE I
Homemade angel food cake is worth the work. It is moist, unlike the sweet styrofoam available in the grocery bakery. A tube pan with a removable bottom is highly recommended.

Steps:
- Beat egg whites until they form stiff peaks, and then add cream of tartar, vanilla extract, and almond extract.
- Sift together flour, sugar, and salt. Repeat five times.
- Gently combine the egg whites with the dry ingredients, and then pour into an ungreased 10 inch tube pan.
- Place cake pan in a cold oven. Turn the oven on; set it to 325 degrees F (165 degrees C). Cook for about one hour, or until cake is golden brown.
- Invert cake, and allow it to cool in the pan. When thoroughly cooled, remove from pan.

OLD FASHIONED DEVIL'S FOOD CAKE (CAKE MIX DOCTOR)
This cake is delicious but truly it is "the icing on the cake" that makes it. Use the "Perfect Chocolate Frosting" and this cake will be perfect. Both the cake and icing recipes are from the Cake Mix Doctor cookbook.

- Place rack in center of oven and preheat oven to 350°F; grease two 9-inch round cake pans.
- Place the cake mix, cocoa, buttermilk, oil, eggs, and vanilla in a large mixing bowl. Blend with an electric mixer on low speed 1 minute. Stop the machine and scrape down sides. Increase the speed to medium and beat 2 minutes more, scraping sides if needed. The batter will look well combined. Divide the batter evenly between cake pans, smoothing with rubber spatula. Place pans side by side in oven.
- Bake the cakes until they spring back when lightly pressed with your finger, 28 to 30 minutes. Remove from the oven and cool on wire racks for 10 minutes. Run a knife around the edges and invert onto rack, and again until right side up and cool another 30 minutes.

ONE-POT HONEYCOMB CAKE
On the outside, this honeycomb cake looks like any other Bundt cake, but inside, it has a vibrant shade of green and beautiful honeycomb pattern.

- Preheat the oven to 350°F with a rack in the center. Place a 9-inch Bundt or cake pan in the oven.
- In a heavy saucepan, add the tapioca flour, rice flour, coconut milk, sugar, coconut water or water, miso, pandan extract, optional vanilla extract, and melted butter and whisk to combine. While continuously whisking, heat over medium heat until all the sugar dissolves and the mixture is homogeneous. Rest for 5 minutes.
- Then crack the eggs directly into the saucepan. Cut each yolk in halves or quarters using clean scissors. Whisk the mixture gently until all the eggs are barely incorporated. Add the baking powder and cream of tartar and whisk until just combined. Some lumps are okay.
- You'll need to work quickly now. Using oven mitts, remove the preheated pan from the oven. Generously grease the entire interior of the pan with cooking spray or neutral oil. With a fine-mesh strainer, carefully sieve all the batter directly into the pan. Use a spatula to press and direct the batter through the strainer as needed. The pan is still hot, so while still using an oven mitt, swirl the batter in the pan so it's evenly distributed in the pan.
- Bake for 50 to 55 minutes, until the top is golden brown. Let the cake rest in the oven for 5 minutes. Then with the oven door slightly ajar, keep the cake in the oven for an additional 15 minutes. The cake will deflate a little.
- Cool completely at room temperature. Dust with the optional confectioners' sugar or coconut flakes or both. Slice and serve.
DEVIL'S FOOD BROWNIE CAKE
This cake is truly decadent and made with only 5 ingredients. It is chocolaty, rich, moist, and absolutely delicious. I top it off with an easy 2-ingredient ganache but feel free to top it off with a sprinkle of powdered sugar, ice cream, whipped cream, or hot fudge.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a fluted tube pan (such as Bundt®) with nonstick spray.
- Combine brownie mix, cake mix, cold coffee, oil, and eggs in a large bowl; beat with an electric mixer until well combined. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 60 minutes. Cool on a wire rack for 10 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
- Heat whipping cream for ganache in the microwave until hot, 2 to 3 minutes. Add chocolate chips and stir until melted.
- Pour ganache over the cooled cake.

FRAISIER (STRAWBERRY CREAM CAKE)
The frasier cake brings together tender sponge cake, luxurious pastry cream, and ripe, juicy strawberries in a classic French dessert.

- In a medium bowl, vigorously whisk together the egg yolks and sugar until lightened. Whisk in the cornstarch. In a saucepan, warm the milk, then slowly pour it into the egg mixture while whisking constantly. Pour the combined mixture back into the saucepan and cook over medium heat, whisking constantly, until very thick, about 5 minutes. Cover the surface with plastic wrap and refrigerate.
- Preheat the oven to 350°F. Line a rimmed sheet pan with parchment paper.
- Make the sponge cake. Sift the flour. In a large bowl, whisk together the egg yolks and one-third of the sugar until lightened. In a separate bowl, beat the egg whites into stiff peaks, adding the remaining sugar a little at a time halfway through the beating time. Fold the beaten egg whites into the yolk mixture, then fold in the flour. Spread the batter evenly into the prepared sheet pan. Bake for 10 minutes. Cool completely.
- Carefully peel the parchment paper from the cake.
- Using the cake ring, cut out two circles from the cake.
- Add the butter to the bowl of a standing mixer fitted with the whisk attachment and beat until light and creamy.
- Add the pastry cream and beat until well incorporated. Transfer the mixture to a bowl.
- Place the cake ring on a serving plate and place one cake circle on the bottom.
- If necessary, briefly rinse the strawberries and pat them dry on paper towels.
- Set aside one dozen of the most attractive strawberries for the top decoration. Hull and cut similarly sized strawberries in half and place them next to each other around the perimeter of the ring with the cut side touching the ring.
- Cover the strawberries with a little of the pastry cream to seal them against the ring.
- Hull the remaining ones and place in the center of the cake.
- Cover the layer of strawberries with some of the pastry cream.
- Place the second cake disk on top.
- Evenly spread a thin layer of the pastry cream on top.
- Hull the remaining whole strawberries then set them on top of the cake, pointed ends up.
- Scrape the remaining pastry cream into a pastry bag fitted with a 1/3-in plain pastry tube and pipe pointed mounds of cream on top of the cake between the strawberries.
- Refrigerate overnight. Just before serving, carefully remove the ring.
COURGETTE & LIME CAKE
Use up a glut of courgettes in this loaf cake. You won't taste them - mixing them into the batter creates a tender sponge that carries the lime flavour

- Heat the oven to 180C/160C fan/ gas 4. Oil a 900g loaf tin and line with baking parchment. Combine the sugar, oil and eggs in a large bowl and mix well. Fold in the flour, baking powder and ground pistachios. Squeeze out as much moisture as you can from the grated courgette using your hands (don't worry about squeezing out every drop), then add this to the bowl along with the lime zest and half the juice, and mix to combine.
- Bake for 40-50 mins until a skewer inserted into the middle comes out clean. Check the cake after 30 mins - if it's looking too brown, cover with foil for the remaining cooking time. Leave to cool in the tin for 20 mins, then transfer to a wire rack, poke a few holes in the top using a skewer and pour over the remaining lime juice. Leave to cool completely. Once cool, will keep frozen for up to a month. Defrost fully before decorating and serving.
- For the frosting, tip the soft cheese into a bowl, sift over the icing sugar, pour in the lime juice and mix to combine. Spread this over the top of the cooled cake, then sprinkle with the chopped pistachios and lime zest. Will keep chilled in an airtight container for up to three days.
