HEARTY TURKEY STEW WITH VEGETABLES

Turkey breast meat and fresh vegetables are cooked up into a hearty stew that may be enjoyed any time of year.

Hearty Turkey Stew with Vegetables image

Steps:

  • Melt the butter in a pot over medium heat. Place onions in the pot and cook until tender. Stir in celery and carrots, and cook until tender. Stir in the potatoes and flour. Pour in the chicken stock, and season soup with marjoram. Place turkey in the pot, and bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.
  • Mix the green bell pepper into the soup, and continue cooking 10 minutes, until pepper is tender.

TRUE DOMINICAN SANCOCHO (LATIN 7-MEAT STEW)

My fiance is from the D.R. and his mother has made me some amazing food! The first time she made sancocho I fell in love with it. It is often made with 7 different meats for a special festivity or holiday. I have simplified the meats in my version, but don't be afraid to use many kinds; this is my mimicked recipe. Great by itself or served the traditional way over rice. Super filling and even better the next day.

True Dominican Sancocho (Latin 7-Meat Stew) image

Steps:

  • Mash garlic, oregano, and 1 teaspoon salt together in a bowl.
  • Douse chicken, beef, and pork with lemon juice in a large bowl. Drain half the liquid. Mix the mashed garlic, half of the onions, 2 tablespoons vegetable oil, and vinegar into the meat mixture.
  • Heat the remaining 1/2 cup vegetable oil in a large skillet over medium-high heat. Add the meat mixture in batches and cook until browned on all sides, 15 to 20 minutes.
  • Transfer the browned meats into a large pot. Add half of the water, chicken broth, beef consomme, 2 bouillon cubes, and 1 teaspoon salt. Bring to a boil; reduce heat to low and simmer, covered, until meats are more than halfway cooked through, about 40 minutes.
  • Combine pumpkin, sweet potatoes, eddeos, yuca, potatoes, plantains, corn, celery, carrots, green pepper, cilantro, and adobo seasoning in the simmering pot. Return soup to a boil. Reduce heat to low and continue simmering until the sancocho is thick and the root vegetables are soft, 1 to 2 hours. Stir in the remaining half of the water by gradual increments to replace any evaporated liquid.

My kids have been hounding me to write down some of my 'creations', so this recipe is a result of that 'pressure'... ;-) If you decide to use beef or venison, be sure to throw in a bay leaf. Feel free to experiment with some of your favorite spices/herbs. I may try this with chicken one of these days too. A nice crusty bread goes well with this.

Steps:

  • Brown meat and place in stockpot with garlic, onion, boullion granules, salt, pepper, lentils and carrots.
  • Simmer while preparing celery and potatoes, approximately 10 minutes.
  • Add celery and potatoes to soup stock.
  • Add remaining ingredients and simmer until potatoes and carrots are tender, approximately 20 minutes more.
  • It may be necessary to add more water.
  • Serve.

1/2 lb cubed pork roast (or beef roast, or venison roast, or stew meat--I use left-over)
1 (8 ounce) can tomato sauce
salt (to taste)
2 teaspoons beef bouillon granules
1/2 teaspoon fresh ground pepper
1 clove minced garlic (or more if desired)
1 medium onion, chopped
1 cup baby carrots, rinsed
2 large potatoes, peeled and sliced 1/2 inch thick

Steps:

  • Place lamb shoulder chops, carrots, onions, and potatoes in a large pot over medium heat. Stir in salt and cracked black pepper.
  • Pour in vegetable broth and enough water to cover; drop in bay leaves. Bring to a boil, reduce heat to low and simmer for 1 hour, stirring occasionally.
  • Stir in split peas and bring to a boil. Reduce heat to low and simmer until lamb is very tender and split peas have broken apart to create a thick stew, about 1 1/2 more hours. Stir occasionally to keep stew from burning on the bottom.
