SPAGHETTI AND MEATBALL "STOUP" (THICKER THAN SOUP, THINNER THAN STEW)

Steps:
- Preheat a medium soup pot over medium heat. Add extra-virgin olive oil, 2 turns of the pan, carrots, onions, celery, garlic and saute 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil.
- While soup comes to a boil, mix the ground meat with cheese, bread crumbs, egg and parsley. Roll into 1 1/2- to 2-inch balls.
- Remove lid from soup and slide balls into soup. Bring back to a boil then stir in spaghetti. Reduce the heat and simmer soup 10 minutes more, until pasta is tender and balls have cooked through. Stir in basil and remove "stoup" from the stove. Serve soup with bread and cheese.
THICK & MEATY SPAGHETTI SAUCE
As everyone knows by now, most of my recipes come from a "Taste of Home" recipe magazine. This is by far our favorite spaghetti sauce. It is so thick and meaty that sometimes my boys just pour it over a piece of garlic bread and eat it like that!

- In a large skillet over medium heat, cook beef and sausage until no longer pink; drain.
- Transfer to a 5 quart slow cooker.
- Stir in green pepper, onion, garlic, tomatoes, tomato sauce, tomato paste, sugar and seasonings; mix well.
- Cover and cook on low for 8 hours or until bubbly.
- Serve over spaghetti.

- In a large skillet, saute the onion, celery and carrots in oil until tender. Add thyme; cook 1 minute longer., Transfer to a 5-qt. slow cooker. Add the peas, broth and water. Cover and cook on low for 7-8 hours or until peas are tender. , Cool slightly. In a blender, process half of the soup until smooth. Return all to the slow cooker. Add bacon and pepper; heat through.

MIMI'S FANTASTIC THICK SPAGHETTI SAUCE
A few years ago I came upon a sauce that was so good but........... I altered it quite a bit to fit our family. This is now the best sauce I have ever had and if you follow the measurements, it will come out the same every single time. I use Tuttoroso brand in the puree, paste, and sauce because that is the one my friend's mother always used. She was from Italy and made the best sauce in the world. Hubby loves it and comments on it whenever we have it which is once a week. It freezes well and is great with meatballs even thought there is a lot of meat in the sauce. Serve it with garlic bread and you will be sooooo happy.

- In a heavy pot, brown sausage and hamburg, breaking it up into smaller pieces.
- Add chopped onions and minced garlic and cook till meat is done; add tomato paste and stir until it is mixed in well.
- Add tomato puree, sauce, and water (when measuring the water, put it into the puree can to rinse it all out and then add to meat mixture).
- Add basil, brown sugar, salt, parsley, and black pepper and mix well.
- Add the Parmesan cheese (yes, to the the sauce) and mix it in well.
- Simmer on low for 2-4 hours stirring occasionally so it won't burn; if you think it needs some thinning down, add about 1/8 cup water at a time; don't add too much because you want it thick so it will stick to your pasta.
- Cook your spaghetti and enjoy! Eat what you want and freeze the rest in containers that will hold the amount you will eat at a sitting.

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes.
- Mix water, tomato juice, tomato paste, minced onion, chili powder, sugar, oregano, garlic salt, and salt into ground beef; cover skillet and bring to a boil. Reduce heat to medium-low and simmer beef mixture, stirring occasionally, until flavors have blended, about 30 minutes.

THICK SPAGHETTI SOUP
This is an extremely thick hardy soup, a whole meal in a bowl. We usually have some raw vegetables with dip and some good crusty bread with it. It freezes very well. I've had this recipe for sometime now. I believe it came from the first year of the Taste of Home magazine, but I'm not positive.

- Saute meats with onions and garlic in large soup kettle.
- Drain excess grease.
- Add next 10 ingredients.

- Use large stock pot with lid. Add first five ingredients. Cook on medium until potatoes are soft and can pierce with fork.
- Add the bacon, ham, and cheese. turn stove to medium-low. stirring often. when cheese is melted mix the gravy mix with a little bit of cold water till creamy then add to soup. Add evaporated milk and more pepper. let simmer 1 hour stirring often.
- If you have a large enough pot this recipe is easy to double. Can always be frozen for later.
- Everyone always likes crackers with their soup but this soup is so thick you really wont need them.

Steps:
- Mix ground beef and cold water in a cold dutch oven. The beef will absorb the water like a sponge. As it cooks, the water will keep the ground beef from forming large clumps.
- Place over high heat.
- Add onion and spices. Stir occasionally.
- Allow meat to cook until all water evaporates.
- Cook a few minutes longer until the beef gets browned like the outside of a hamburger. The browning makes the sauce richer.
- Turn down the heat to simmer and add the jar of spaghetti sauce. Stir to combine.
- If you want a thinner sauce, add a 16 ounce can of diced tomatoes.
- Heat through.
- Hints: * If you can't get 96% lean ground beef, proceed with recipe, except don't allow the water to evaporate. Drain off the water and fat and return the meat mixture to the pot to brown.
