Steps:
- Preheat oven to 350 Degrees.
- In large bowl mix fresh corn, onions, red peppers, cilantro, black beans, cream of mushroom soup, and broth. Stir till mixed completely.
- Season to taste the Tilapia Filets then place in an 8x10 baking dish.Pour mixture of ingredient into baking dish and cover Reynolds Wrap.
- Bake in oven covered for 60 minute Uncover, place biscuits over pot pie and bake for an additional 17 minutes.
- Let sit for aprox. 13 minute.

SOUTHWESTERN TACO POT PIE
Steps:
- Preheat the oven to 400 degrees F.
- Brown ground beef in large skillet over medium-high heat for 8 to 10 minutes or until thoroughly cooked, stirring frequently. Drain. Add taco seasoning mix and water; mix until ground beef is well coated.
- Meanwhile, heat oil in large saucepan over medium high heat until hot. Add peppers and onions; cook 4 to 5 minutes or until tender, stirring occasionally. Remove from heat and drain excess liquid. Add garlic and onion powders, salt, pepper, corn, and salsa, stir well and set aside.
- Prepare pie crusts as directed on package for 2-crust pie using 9-inch glass or metal pie pan.
- Combine salsa and corn mixture with ground beef; mix well. Sprinkle 1/2 cup of cheese evenly in bottom of crust-lined pan. Spread 1/2 of beef mixture evenly in pan over cheese, pat down. Sprinkle 3/4 cup cheese in pan and spread evenly with remaining beef mixture, pat down, top with remaining 3/4 cup cheese. Top with second crust and flute; slit in several places.
- Bake for 30 minutes or until crust is golden brown. Cover edge of crust with strips of foil or a pie crust shield after 15 minutes of baking. Let stand 5 minutes before serving. Store in refrigerator.
- Garnish with a dollop of sour cream and a drizzle of taco sauce. Also recommended: guacamole, salsa, and diced green chiles.

- Preheat oven to 375 degrees and line a 9 x9 baking pan with Reynolds Wrap to go up the sides of the pan. Cook tilapia in microwave on microwave safe plate for 3 1/2 minutes on each side. Cut into bite size pieces and place on foil. Sprinkle taco seasoning evenly over tilapia. Add corn, beans, peaches, and salsa, and mix well. Sprinkle cheese evenly over top. Flatten biscuits slightly and then arrange evenly over top of cheese. Bake at 375 degrees for 15-20 minutes until biscuits golden brown. Yields 6 servings.

- Preheat the oven to 425 degrees F (220 degrees C). Spray a baking dish with nonstick cooking spray.
- Place potatoes, bell pepper, garlic, oil, and 1/2 teaspoon salt in the prepared dish; toss to coat.
- Bake in the preheated oven for 30 minutes. Add tomatoes. Place tilapia fillets on top of vegetables and sprinkle with remaining salt, pepper, and lemon zest. Continue to bake until fish flakes easily with a fork, about 10 minutes.
- Squeeze lemon juice over fish and serve.

- Preheat oven to 400 degrees F.
- Place foil squares on a baking sheet and set aside.
- Pour almond oil into a preheated saute pan over medium heat. Season tilapia filets with salt and pepper. place filets flesh side down into oil and cook 1-2 minutes. Remove filets from pan and place cooked side up in the center of each foil square. Wipe pan dry with a paper towel and return to medium heat. Add cold butter to pan and melt butter until slightly toasted with a nutty aroma, and the foam subsides. Add shallots, almonds, and rosemary, saute 2-3 minutes. Add orange juice and zest, season with salt and pepper to taste.
- Fold up sides of foil to form a pouch. Spoon butter sauce over each filet, along with 1 tablespoon of amaretto per each. Seal tops and sides of foil, place baking sheet in preheated oven and bake 4-5 minutes. Carefully remove from oven, cut foil open and transfer to a plate along with juices. Serve with jasmine rice and your favorite veggies. Enjoy!

I watched him make this the other night and decided to try it. It's easy to see why this pie was a winner! It is just oustanding and a snap to put together. A great family meal, I would suggest a guacamole salad on the side. Watch the cook time! I only baked for 20 minutes.

- Mix cabbage, mayonnaise, cilantro, and lime juice together in a medium bowl until combined. Set coleslaw aside.
- Preheat the oven to 450 degrees F (230 degrees C). Spray a 9x13-inch baking dish with cooking spray. Make 2 stacks of tortillas and wrap tightly in aluminum foil.
- Rinse fish and pat dry. Cut into 3/4-inch pieces and lay in a single layer in the prepared baking dish. Sprinkle with cumin, garlic powder, and onion powder.
- Bake in the preheated oven until fish flakes easily with a fork, about 10 minutes. Place tortillas in the oven to heat during the last 5 minutes.

- Preheat oven to 375 degrees.
- Rub filets with 1/2 of the olive oil and 1/2 of the Greek seasoning.
- Wrap 1 slice of prosciutto around each filet.
- Place 1 filet on 1 sheet of aluminum foil.
- Combine tomatoes, zucchini, olives, capers, parsley, mint, lemon juice & zest and remaining spice blend in a small mixing bowl. Toss.
- Place equal amounts of tomato mixture on top of each filet. Top with goat cheese and black pepper.
- Take the 2 opposite ends of foil, bring them together over filet and fold edges 2-3 times down and seal. Fold in 2 remaining open ends and seal.
- Place aluminum pockets on a large oven proof sheet pan.
- Bake for 15-20 minutes. Allow to rest for 5 minutes. Unseal and serve.

- Heat olive oil in a large skillet over medium-high heat. Add tilapia fillets and sprinkle with garlic powder and pepper. Cook for 5 minutes, turn, and continue cooking until fish flakes easily with a fork, about 5 more minutes. Break fillets apart with a spatula, remove from the heat, and allow to cool. Wipe skillet clean with a paper towel.
- While fish is cooling, mash avocado in a small bowl for guacamole. Mix in sour cream and season with garlic powder and salt.
- Place 1 tortilla in the cleaned skillet and cook over low heat until warm, about 1 minute. Remove tortilla and set on a plate with the uncooked side facing up. Cover one half of the tortilla with 2 lettuce leaves and salsa. Spread guacamole on the other half, then add 1/4 of the fish. Fold halves together. Repeat to make the remaining tacos.

- If baking, preheat the oven to 400 degrees Fahrenheit. Pat the tilapia dry, then sprinkle it with 1 teaspoon kosher salt and pat it in. Add the Fish Taco Seasoning or Fajita Seasoning and pat it to cover the fish. Place the fish on a parchment lined baking sheet. Bake for 10 minutes, until tender, then broil for 2 minutes until the top is lightly browned. Or broil on High for 2 to 3 minutes per side (4 to 6 minutes total), until cooked through and it flakes with a fork.
- Meanwhile, thinly slice the cabbage. Shred or grate the carrot (we used a handheld julienne peeler). Thinly slice the green onion. Place the cabbage, carrots and green onion in a bowl. Stir in the lime juice, 1/4 teaspoon kosher salt and 1/4 teaspoon celery salt. Serve immediately with a slotted spoon. The slaw picks up moisture as it sits; if you plan to let it sit, make sure to serve with the slotted spoon to strain out the moisture.
- If desired, char the tortillas by placing them on an open gas flame on medium for a few seconds per side, flipping with tongs, until they are slightly blackened and warm. Or warm them according to How to Warm Tortillas.
