LAURENT TOURONDEL'S FAVORITE GRANOLA

This recipe came to The Times from the chef Laurent Tourondel. The focus is on texture: rolled oats, corn flakes, steel-cut oats and sliced almonds combine for a hefty crunch, while honey, vanilla, cinnamon and orange zest give it a golden warmth. The granola comes together quickly and will bake in 20 minutes or less. Store in an airtight container for a week, but you'll probably run out before then.

Steps:

  • Heat oven to 325 degrees. In a large bowl, combine rolled oats, cornflakes, steel-cut oats, almonds, salt and cinnamon. Mix until well combined.
  • In a small saucepan, combine honey, maple syrup, canola oil, orange zest and split vanilla beans and their pulp. Place over medium heat and boil for 1 minute. Discard vanilla beans, and pour hot liquid over dry ingredients. Using a rubber spatula, mix until well combined.
  • Line a large rimmed baking sheet with parchment paper, and spread evenly with the granola. Bake until golden brown and evenly toasted, tossing about halfway through, 10 to 20 minutes. Remove baking sheet from oven and place on a rack to cool; mixture will be soft and sticky while hot, but will dry and become crisp as it cools.
  • When granola is completely cool and dry, break into bite-size pieces. Store in an airtight container for up to 1 week.

BILL'S FAVORITE GRANOLA

Yummy granola made with whatever I have on hand at the time! Basic recipe from Ina Garten, but I toss in all kinds of fruits and nuts. Our friend Bill cannot keep his hands out of it and I always send him home with a bag to snack on! The first time I made it, it looked like alot so I used 2 sheet pans! Big mistake! Just pile it on one, and do not overbake it...it will seem "soft" when you take it out, but will "crisp up" as it cools! I bag it up in snack size servings,...and larger bags for Bill! Freezes well, and great on yogurt, ice cream, cereal or just out of hand.

Steps:

  • Mix first 7 ingredients together in a large bowl, breaking up clumps of coconut, if necessary. Add the oil and honey and toss really well to coat. Add the cinnamon and stir until mixed inches.
  • Spread onto a large sheet pan, place in a 350 degree oven, and bake for 25-30 minutes, stirring often. Remove from oven when it's a lovely golden brown, stir occasionally while it's cooling and then place in airtight container.

Steps:

  • Heat the oven to 180C/160C fan gas 4. Line a large baking sheet with baking parchment to prevent the granola from sticking. Put all of the dry ingredients in a large mixing bowl. Whisk together the almond extract, vegetable oil and maple syrup in a jug, then pour into the bowl with the dry ingredients.
  • Mix together well, making sure that all the dry ingredients are well coated and that there are no dry bits. Tip the mixture onto the lined baking sheet and spread out in an even layer. Cook for about 25-30 mins until golden. You will need to give the mixture a few turns every 8-10 mins to make sure it dries out evenly and doesn't clump together too much. Keep an eye on it as nuts can burn easily.
  • Remove from the oven and leave to cool completely on the tray. Break up any large clumps of granola with a wooden spoon. Will keep for up to one month in an airtight container. Serve with milk or yogurt, and fresh seasonal fruit, if you like.

  • Preheat the oven to 325°F. Line a 13 x 18-inch rimmed baking sheet with parchment paper. (If using parchment sheets, line the pan first with heavy-duty aluminum foil, then parchment.)
  • Combine the oats, almonds, pecans, walnuts, sunflower seeds, sesame seeds, wheat germ, coconut, cinnamon and salt in a large bowl and mix well.
  • In a small bowl, whisk together the honey and oil until emulsified. Pour the mixture over the dry ingredients and mix well. Spread the granola mixture evenly onto the prepared baking sheet and bake for 25-30 minutes, stirring and re-spreading a few times with a spatula, until the entire mixture is medium golden brown. Watch carefully towards the end; granola burns quickly and will brown first in the corners and on the bottom.
  • Toss the granola with a spatula and mix in the dried fruits. Spread and press into an even, compact layer, then let cool on a rack to room temperature. Break the granola into large clusters and store in an airtight container in the refrigerator for up to two weeks.
