TINA'S BISCUIT DOUGH BREAKFAST PIZZA
Working on this recipe. Thought it would make a good brunch dish. Next time I will use Colby jack and pork sausage gravy in place of the Alfredo and sub sliced pickled jalapenos for the mushrooms. Then I will try ham instead of bacon and Swiss instead of cheddar. Oh, the yummy possibilities.

Steps:
- 1. Preheat oven along with pizza stone to 450 degrees for 15 minutes.
- 2. Cut bacon into 1 inch pieces. Saute until brown and crisp. Remove from pan and place on paper towel to drain. Pour off all but 1 Tbsp of fat.
- 3. Sift dry crust ingredients. Cut in shortening or lard. Add cold water until dough holds together.
- 4. Roll out dough on a piece of parchment paper until 14 inches or so. Dock with fork (poke holes into the dough with a fork) Slide parchment on to pizza peel and then slide parchment and pizza onto pizza stone. Bake 15 minutes
- 5. Meanwhile, beat the eggs with the water. Season with salt and pepper. Slowly scramble in sauté pan with the remaining 1 Tbsp of bacon grease until soft scramble and set.
- 6. Remove crust from the oven with peel, leaving crust on parchment paper. Spread 1/2 jar of Alfredo Sauce on crust. Top with scrambled eggs, Then top with shredded cheese, mushrooms and bacon pieces. Slide back onto pizza stone and bake an additional 10 minutes or until cheese is melted and bubble.
PIZZA BUNS
The elementary school I attended back in the 1950's used to make these, and were a favorite of most everyone. My wife and I spent a lot of time trying to recreate these when we were first married. Our kids (now in their 30's) still request these when they come to visit. We use canned pizza sauce but spice it up. Left-overs are easily reheated in the toaster oven.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place bun halves, crust sides down, onto a baking sheet. Broil the buns until just toasted, about 1 minute. Watch them carefully, they burn easily. Set the toasted buns aside.
- Turn oven heat to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, cook and stir the ground beef until the meat is browned and crumbly, about 10 minutes. Drain excess grease, and stir in the onion. Cook and stir the beef mixture until the onion is translucent, about 5 more minutes, then stir in the pizza sauce, Parmesan cheese, Italian seasoning, garlic powder, onion powder, crushed red pepper flakes, and paprika. Bring the sauce to a boil, and simmer for 10 to 15 minutes to blend the flavors, stirring often.
- Spoon the beef sauce over the buns on the baking sheet, and top each bun with about 1/4 cup of the shredded mozzarella cheese. Return the buns to the oven, and bake until the cheese is bubbly and lightly browned, about 10 minutes.

DAD'S BREAKFAST PIZZA
This recipe can be very versatile depending on your preferences. My whole family used to gather at 10 a.m. every Sunday morning at Mom and Dad's for breakfast. Dad made this up one Sunday, and it has been a favorite of ours ever since =)

- Preheat oven to 350 degrees F (175 degrees C). Lightly spray a 9x12-inch baking sheet with cooking spray.
- Cook the bacon in a large skillet over medium heat, stirring often, until the bacon is browned and crisp, about 10 minutes. Remove bacon pieces with a slotted spoon, and drain on paper towels.
- Open up the cans of biscuits, separate the biscuits, and arrange onto the prepared baking sheet so they touch. Press the biscuit dough down to seal them together into a crust that covers the baking sheet.
- Bake in the preheated oven until the crust is slightly cooked and very lightly browned, about 5 minutes. Do not overbake. Remove from oven.
- Melt the butter in a large nonstick skillet over medium heat until the foam disappears. Beat the eggs in a bowl, and pour the eggs into the hot skillet. Use a spatula to lift and gently stir the eggs just until set, but still moist, 3 to 4 minutes. Arrange the lightly scrambled eggs on the semi-baked biscuit crust. Top with the cooked bacon, onion, and green pepper; spread the Cheddar cheese all over the pizza. Season to taste with salt and black pepper.
- Return to oven, and bake on the top rack until the cheese is melted and bubbling and has begun to brown, about 10 more minutes.

SOURDOUGH PIZZA

- Make a batch of our white sourdough, following the recipe to the end of step 10. When the dough is ready, tip it onto a lightly floured surface and divide into six equal pieces. Roll into balls and leave to rest on a floured tray, covered with a damp teatowel, in the fridge for at least 4 hrs, and up to 18 hrs - the longer you leave the dough, the more sour it will taste.
- Meanwhile, make the tomato sauce. Drain some of the juice from the plummed tomatoes and tip the rest into a bowl with the olive oil, oregano and a generous pinch of salt. Combine by either scrunching everything together with your fingers (this will make a chunky sauce) or blitz with a stick blender (this will make a smooth sauce). Chill until needed.
- To make the pizzas, heat a grill to high and prepare an ovenproof frying pan. On a floured surface, push and stretch a ball of dough into a circle roughly the same size as the pan. Get the pan very hot, then working quickly and carefully, drape it into the pan, spread over some of the sauce, a handful of mozzarella and some basil, if using.
- Cook for 2 mins, until little bubbles appear, then put the pan under the grill for another 2-4 mins until the sides are puffed up and the cheese has melted. Remove, drizzle with a little olive oil and cut into wedges. Repeat with the remaining dough.
