TOASTED COCONUT COLD-BREW ICED COFFEE
This refreshing drink gets infused with rich coconut flavor in two ways: a nutty, toasted coconut syrup and a creamy coconut milk floater.

Steps:
- Make the toasted coconut syrup:
- Preheat oven to 350°F. Spread coconut on a rimmed baking sheet and toast until golden brown and fragrant, about 10 minutes.
- Bring toasted coconut, sugar, honey, and 1/2 cup water to a low boil in a small saucepan. Remove from heat, cover, and let steep at least 30 minutes and up to 4 hours.
- Strain syrup through a fine-mesh sieve into a small bowl or resealable glass container, pushing down on solids to extract as much syrup as possible. You should have about 1/3 cup.
- Make the drink:
- Fill a glass with ice and add cold brew. Stir in desired amount of syrup (about 2 Tbsp.) Top with a splash of coconut milk.
- Do Ahead
- Toasted coconut syrup can be made 7 days ahead; store in an airtight container and chill.
COLD BREWED ICED COFFEE
I'm relatively new to coffee drinking, but have graduated from instant to actual brewed liquid energy. I was intrigued when I read about cold brewing and how it can make a smoother beverage with more kick. So I gave it a try and I am a convert. Any leftovers can be stored in the fridge, or made into ice cubes.

Steps:
- Place coffee beans in a French press or large measuring cup; pour in 2 cups water. Let coffee steep, 8 hours to overnight.
- Combine remaining 2 cups water and sugar in a saucepan; bring to a boil. Simmer until sugar dissolves, 3 to 5 minutes. Pour syrup into a container and transfer to the refrigerator.
- Strain coffee using the French press plunger or through a coffee filter in a fine-mesh strainer. Pour 1/2 cup coffee into a glass of ice; sweeten with simple syrup.

COLD BREW ICED COFFEE
This recipe makes just two servings of cold brew, so if you're new to the method, it will be a good test batch to see exactly how strong you want your steep to be. Once you've found your sweet spot of brewing time, you can double, triple or even quadruple the yield. The strained concentrate will keep tightly sealed in the fridge for up to a week.

- Grind the beans in a coffee grinder on the coarse setting; the ground coffee should resemble coarse sugar or sand.
- Cut a 6-by-6-inch double thickness of cheesecloth. Put the coffee in the middle and tie tightly with kitchen twine. Put the sachet in a pint Mason jar or other 2-cup glass container. Add the cold water and seal tightly. (If you prefer, you can just add the coffee directly to the cold water and strain through cheesecloth after steeping.)
- Refrigerate and steep for at least 12 hours, though 18 to 24 hours is best. Remove the sachet, press to extract as much liquid as possible back into the jar and discard the sachet.
- To serve, pour equal parts cold brew concentrate and cold water over ice. Add milk and sweetener if using.
SUNNY'S COLD BREW COCONUT COFFEE
Steps:
- In a large pitcher add the coffee, coconut and 3 cups water. Stir and refrigerate, stirring every few hours, at least 8 hours or up to overnight.
- Wet a paper towel or use a coffee filter placed in a fine mesh sieve over a pitcher. Pour the cold-brewed coffee into the lined sieve and allow it to drip into the pitcher beneath. Push through gently at the end to get the last bit of coffee. Add the evaporated milk to taste, then sweeten if desired and serve over ice.
COLD BREW WITH COCONUT ICE CUBES

- In a jar with a tight fitting lid, combine coffee grounds and 2 ¼ cups cold water. Stir to combine. Cover and set aside at room temperature for at least 12 hours.
- Meanwhile, make coconut ice cubes. Preheat oven to 350 and spread coconut onto a rimmed baking sheet. Transfer to oven and toast until golden, stirring occasionally, about 20-25 minutes. Let cool completely.
- In a measuring cup, combine sweetened condensed milk, 2 ½ cups warm water, and a pinch of salt. Stir to combine.
- Divide among two 15-cube, 15-ounce capacity silicone ice cube tray. Divide coconut among cubes.
- Transfer to freezer and freeze until firm, at least 2 hours.
- Strain the coffee twice through a sieve lined with a coffee filter or cheesecloth.
- Pour the strained coffee into a large pitcher. Add remaining 2 ¼ cups cold water.
- Divide among glasses and serve with ice cubes.

- Place coffee grounds in a clean glass container. Pour hot water over grounds; let stand 10 minutes. Stir in cold water. Cover and refrigerate for 12-24 hours. (The longer the coffee sits, the stronger the flavor.), Meanwhile, for coconut simple syrup, in a small saucepan, bring water, sugar and coconut to a boil. Reduce heat; simmer 10 minutes. Strain and discard coconut. Cool completely., Strain coffee through a fine mesh sieve; discard grounds. Strain coffee again through a coffee filter; discard grounds. COLD-BREWED ICED COFFEE
Cold-brewed coffee is actually dirt simple to make at home using a Mason jar and a sieve. You just add water to coffee, stir, cover it and leave it out on the counter overnight. A quick two-step filtering the next day (strain the grounds through a sieve, and use a coffee filter to pick up silt), a dilution of the brew one-to-one with water, and you're done. - To make the toasted coconut coffee syrup: Preheat oven to 425° F and adjust the top rack to the second notch from the top of the oven. Line a large baking sheet with parchment paper or a silicone mat and spread the coconut out in an even layer. Toast the coconut for 7-10 minutes until nicely browned and toasted, tossing after 5 minutes. Watch the coconut carefully as it can burn easily.
- Stir the sugar and water together in a small saucepan and bring the mixture to a simmer over medium-high heat. Simmer for 5 minutes, remove from the heat, and stir in the warm toasted coconut. Cover and allow the coconut to steep in the syrup for 30 minutes. Pour the syrup through a fine mesh strainer into a mason jar or resealable glass bottle to cool. Refrigerate for at least 2 hours before using. There may be some coconut residue in the syrup; if that bothers you, strain the syrup once more and if not, shake before adding to your coffee.
- To make the cold brew: Grind the coffee beans on the coarse or French press grind setting (typically setting 1 or 2 on a burr grinder) or have your favorite coffee shop grind your favorite beans. If using freshly ground coffee (that you're scooping from a bag of ground coffee), you'll need about 1¼ to 1½ cups of coarsely ground coffee.
- Fill up a large pitcher with 2 quarts of water and stir in the coffee with a wooden or plastic spoon. Cover and allow the coffee to sit at room temperature out of direct sunlight for 12-24 hours.
