LEFTOVER PECAN PIE BREAD PUDDING
Completely reinvent your leftovers: Fold pieces of leftover pecan pie into a bread pudding made from leftover dinner rolls and bake until golden brown.

Steps:
- Preheat the oven to 350 degrees F. Lightly coat a 2-quart baking dish with cooking spray.
- Spread the bread pieces in a single layer on a baking sheet and bake until toasted and golden, tossing halfway through, about 15 minutes. Let cool.
- Whisk together the evaporated milk, milk, sugar, vanilla, eggs, nutmeg and a pinch of salt in a large bowl. Add the cooled bread cubes. Toss to combine and set aside until the bread soaks up most of the liquid, about 30 minutes.
- Stir the pecan pie pieces into the mixture and transfer to the prepared baking dish. Bake until the bread pudding is set and golden, 30 to 40 minutes. Let rest for a few minutes. Serve warm or at room temperature topped with a scoop of vanilla ice cream.
TOASTED PECAN BREAD PUDDING & BOURBON SAUCE
I first made a version of this recipe 10 years ago, but made it plain & without the sauce. Now after making this version as I have listed, I realize that the plain version just did not do the recipe justice. This version is SO much better. The toasted pecans really does enhance the nutty flavor in the recipe, the bourbon sauce...

Steps:
- 1. Chop pecans, if not already chopped, then toast in preheated 350 degree oven for 10 to 15 minutes. Then set aside till needed. May toast bread in same oven at same time, but may require additional extra time till fully toasted. Stir after the first 15 minutes, and adjust time as needed.
- 2. These are the main ingredients. I didn't have all raisins, so I used dried cranberries & raisins. The original recipe suggested golden raisins. The Mexican Vanilla is a gift from Phyllis Lively here at Just A Pinch. I love it's strong aromatic sweet flavor.
- 3. Using a large bowl add one cup of toasted pecans, (RESERVING THE REMAINDER FOR THE TOPPING)cinnamon, Mexican Vanilla, brown sugar & melted butter. Stir to mix together.
- 4. Then add in the eggs and beat till well blended together.
- 5. Add in the toasted bread cubes, and stir to mix together. Allow to sit about 15 to 20 minutes, or longer if needed to absorb the liquid.
- 6. Spray an 8 X8 size , I used a 9X9 size pan, then pour batter into pan and bake in preheated 350 degree oven about 25 to 30 minutes. Should look like this.
- 7. While Pudding is baking, assemble the topping by combining the 1/2 cup reserved toasted pecans, brown sugar and cinnamon, stir till blended together.
- 8. Sprinkle the brown sugar mixture over the bread pudding & return to the oven for an additional 10 to 15 minutes or until the pudding is set and the topping is browed. Remove from oven.
- 9. Prepare the bourbon sauce by adding the butter to a small sauce pan along with the firmly packed browned sugar & corn starch, whisk as butter begins to melt & sugar dissolves over low heat, and mixture slowly comes to boil, then pour in the heavy whipping cream and whisk together till blended abut 2 minutes. Add the bourbon & cook for about 1/2 minute. Remove from heat and add in the Mexican vanilla & whisk until thoroughly blended. Allow sauce to cool slightly before serving.
- 10. This is what the bread pudding looked like when baked with brown sugar topping. Note: I omitted the bourbon because of the strong flavor of the Mexican Vanilla
PECAN PRALINE FRENCH TOAST PUDDING

- Heat oven to 400°F. Spray cookie sheets with cooking spray. Bake cinnamon rolls as directed for faster bake method, refrigerating icing containers for later use. Remove rolls from cookie sheets to cooling rack. Cool completely, at least 30 minutes. Reduce oven temperature to 375°F.
- Spray 13x9-inch (3-quart) baking dish with cooking spray.
- In medium bowl, mix brown sugar, pecans, butter, cinnamon, nutmeg and salt.
- In medium bowl, beat eggs, whipping cream and vanilla. Cut or tear each cinnamon roll into 6 pieces, and arrange evenly in baking dish. Pour egg mixture over torn cinnamon rolls; lightly press pieces down to absorb some of the liquid. Let stand 10 minutes.
- Sprinkle brown sugar mixture evenly over cinnamon rolls. Bake 25 to 30 minutes or until puffed and deep golden brown and knife inserted in center comes out clean. Let stand 15 minutes.
- In small microwavable bowl, add icing from both containers. Microwave uncovered on High 15 to 20 seconds or until thin enough to drizzle. Drizzle over top of pudding.

- 1. Mix butter, coconut, flour, Brown sugar, and pecans together. Bake in 9x13 pan @ 325 degrees for 30 minutes. Stir every 15 minutes to form crumbs. Cool.
- 2. Beat pudding and milk together. Add tub of Cool Whip.
- 3. Put 1/2 crumbs in bottom.of 9x13 pan. Spread pudding mixture. Top with rest of crumbs. Chill
- 4. Can use sugar free pudding and cool whip.
SAVORY BREAD PUDDING WITH ROASTED SHALLOTS, PECANS, AND HERBS
Steps:
- Preheat oven to 350 degrees F.
- Melt butter in an 8 to 10-inch oven-proof saute pan and then add shallots. Transfer to oven and roast until lightly browned, stirring often. Remove pan from oven and set aside.
- Over medium heat, melt 2 tablespoons butter in a 6-inch saute pan. Add garlic and saute for 30 seconds; do not let garlic color. Add mushrooms and saute until browned. Carefully add brandy and flambe. Remove pan from heat immediately when flames subside. Stir in herbs and season with salt and pepper, to taste. Set aside.
- Place the cream, eggs, pecans, nutmeg, salt and pepper in a blender with the sauteed shallots (make sure to scrape the pan with a rubber spatula). Blend on high speed for about 20 seconds. Set aside.
- Mix the cream mixture with the toasted pecans, bread cubes, and mushroom mixture. Mix well and refrigerate for about 1 hour, stirring every once in a while so that the bread fully absorbs the flambeed mixture.
- Preheat oven to 350 degrees F.
- Melt butter and then thoroughly brush the inside of 6 individual-sized ramekins. (It's best to use cool ramekins because the butter sticks better and forms a thicker coat). Fill ramekins about 3/4 full with the bread pudding mixture. Brush the tops with more melted butter. Place ramekins in a water bath and bake for 30 to 40 minutes. Remove from oven and from water bath and let cool for about 15 minutes. Run a paring knife around the bread pudding on the inside edge of the ramekin. Invert onto serving plates. The bread pudding can be prepared 1 day in advance, refrigerated, and reheated before serving.

- In a large bowl, whisk the first eight ingredients. Gently stir in bread and pecans; let stand for 10 minutes or until bread is softened., Transfer to an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean., For sauce, combine the sugar, cornstarch and salt in a small heavy saucepan.
