BASIL PESTO BREAD ROUNDS

A very easy, versatile recipe of a pesto topping on French bread slices. One of my most requested recipes! Great for potlucks or as an accompaniment to soup or salad meals. Try them with sun-dried tomato pesto!

Basil Pesto Bread Rounds image

Steps:

  • Preheat oven on broiler setting. Arrange bread slices in a single layer on a cookie sheet. Place under broiler for 5 to 8 minutes, or until lightly toasted on one side. Watch carefully to ensure they don't burn. Remove from oven, and flip bread slices so that the toasted side is on the bottom.
  • Set the oven temperature for 350 degrees F (175 degrees C). In a small bowl, mix together mayonnaise, pesto, garlic, Parmesan and salt. Spread evenly over untoasted sides of bread slices.
  • Bake in the preheated oven for 6 to 8 minutes. Set the oven to broil, and place the rounds under the broiler just until they begin to bubble and turn golden. Let cool slightly before serving.

This is a great recipe to make with prepared basil pesto, makes a great latenight snack or serve it with a pasta dinner. To save some time you can broil/toast the bread slices in advance. If you prefer a lot of topping on the rounds just double the pesto mixture.

Steps:

  • Set oven to broil.
  • Arrange the bread rounds/slices in a single layer on a cookie or baking sheet.
  • Broil for about 6-7 minutes or until lightly toasted (watch closely that they do not burn).
  • Remove then flip the slices so that the toasted side is on the bottom.
  • Set oven to 350 degrees.
  • In a small bowl mix together mayonnaise, pesto, garlic, Parmesan cheese and salt to taste.
  • Divide and spread the mixture onto the untoasted tops of each bread slice, then sprinkle lightly with black pepper if desired.
  • Bake for about 6-8 minutes, just until they bubble and turn golden.
  • Let cool slightly before serving.

Pesto Egg Toast image

Steps:

  • Turn the oven to its broiler setting and position a rack in the middle of the oven.
  • Add the pesto and red pepper flakes to a nonstick skillet over medium heat. Allow to heat for 1 minute. Crack the eggs into the pesto and cook to your liking, 4 to 7 minutes.
  • Meanwhile, spread the sourdough with the garlic mayonnaise. Top with the cheese, then broil until toasted and the cheese has melted, 1 to 2 minutes.
  • Top the toasted bread with the sliced tomato and basil leaves. Top with the eggs, then sprinkle with salt and pepper.

Basic Pesto Sauce image

Steps:

  • Pulse pine nuts in a food processor until they're completely broken down. Stop to scrape down the sides of the bowl with a spatula from time to time. Add olive oil and garlic and pulse until garlic is finely chopped.
  • Chop basil very roughly - just run a knife through it once or twice to cut most of the leaves into halves or thirds - then add to food processor. Pulse, stopping every 15 seconds to push the leaves down with a rubber spatula, until basil is entirely worked into the oil. Pulse for another few seconds, and then stop to prevent turning the basil brown.
  • Pour pesto base into a bowl and add grated cheese and salt. Stir to combine, then taste and adjust seasoning as needed. Leave the sauce thick to toss with cooked pasta and a little pasta cooking water. To use the pesto as a garnish for grilled or roasted meats, fish and vegetables, thin it out with 2 to 3 more tablespoons olive oil until it's the consistency of a loose paste. To store leftovers, pour a little more olive oil over the pesto to cover. Refrigerate in an airtight container for up to three days.
