Steps:

  • Bring a large pot of water to a boil and salt the water.
  • Add pasta and cook for a minute or two less time than package directions say.
  • The pasta will soak up more juice and keep on cooking after we drain it, so we need it to be a little undercooked.
  • The shells with probably cook for 9 or 10 minutes.
  • Preheat a big, deep skillet or a medium saucepan over medium heat.
  • Place garlic on a cutting board and place the flat of your knife on top of each clove.
  • Carefully give the garlic a whack with the palm of your hand to separate the cloves form the skins.
  • Throw out the skins and chop up the garlic.
  • Remember to keep your fingers curled under and the edge of your knife tilted slightly away from your body.
  • Add evoo by pouring a slow stream of it twice around the pan.
  • This will be about 2 tablespoons, just enough to coat the bottom of the pan.
  • Do not let the oil pour out too fast; you want a slow, steady stream.
  • Add the garlic to the oil.
  • To chop the onion, cut the ends off and cut the whole onion down the center.
  • Wrap half and save it for another use.
  • Cut the other half into thin slices then turn the slices a quarter turn and chop them again.
  • Hold the tip of the knife on the cutting board and lift the back of the knife up and down over the onion to make the pieces really small.
  • Add the chopped-up onion to the garlic and oil.
  • Cook, stirring a lot, until the onions are mushy and look cooked, about 5 minutes.
  • Add the tomatoes to the onions and stir.
  • When the tomatoes come to a bubble, reduce the heat under the sauce to low.
  • Stir in basil pieces to wilt them.
  • Season the sauce with salt and pepper.
  • Preheat the broiler to high and place a rack in the center of the oven.
  • Drain pasta shells.
  • Add them to a casserole dish.

Baked Four-Cheese Pasta With Tomatoes and Basil image

Steps:

  • For the topping:.
  • Pulse bread in food processor until mixture resembles coarse crumbs, about ten 1-second pulses (you should have about 1 1/2 cups).
  • Transfer to small bowl; stir in Parmesan, salt, and pepper.
  • Set mixture aside.
  • For the pasta:.
  • Adjust oven rack to middle position and heat oven to 500 degrees.
  • Bring 4 quarts water to rolling boil in stockpot.
  • Combine cheeses in large bowl; set aside.
  • Add pasta and 1 tablespoon salt to boiling water; stir to separate pasta.
  • While pasta is cooking, melt butter in small saucepan over medium-low heat; whisk flour into butter until no lumps remain, about 30 seconds.
  • Gradually whisk in cream, add tomatoes, and increase heat to medium, and bring to boil, stirring occasionally; reduce heat to medium-low and simmer 1 minute to ensure that flour cooks.
  • Stir in remaining 1/4 teaspoon salt and pepper; cover cream mixture to keep hot and set aside.
  • When pasta is very al dente (when bitten into, pasta should be opaque and slightly underdone at very center), drain about 5 seconds, leaving pasta slightly wet.
  • Add pasta to bowl with cheeses; immediately pour cream mixture over, then cover bowl with foil or large plate and let stand 3 minutes.
  • Uncover bowl and stir with rubber spatula, scraping bottom of bowl, until cheeses are melted and mixture is thoroughly combined. Stir in 1/4 cup chopped fresh basil.

Whether you're an avid TikTok user or just a casual Instagram consumer, you've probably seen the feta and tomato pasta taking the social media world by storm. It has an interesting history. In 2018, Finnish blogger Tiiu Piret (@tiiupiret) shared a recipe for a pasta containing prosecco, baked feta and tomatoes. In 2019, another Finnish blogger, Jenni Häyrinen (@liemessa), shared her simplified version of the dish on her blog and Instagram using the hashtag #uuifetapasta. (Afterward, sales of feta in Finland apparently increased by 300 percent.) American food influencer MacKenzie Smith (@grilledcheesesocial) eventually heard about the dish from a friend with a Finnish boyfriend. In January 2021, she posted a translation of the popular recipe on her blog and Instagram, which led to it going viral in the United States. It's easy to see why the recipe has achieved such fame: Cherry tomatoes and a whole block of feta are baked until soft and melty, then tossed with garlic, basil and cooked noodles for a beautifully cheesy dish.   • Preheat the oven to 400 degrees F.
  • Toss the cherry tomatoes and olive oil with 1/4 teaspoon of salt and several grinds of black pepper in a medium bowl until combined. Transfer to a 2 1/2- to 3-quart baking dish, place the feta in the center of the tomatoes and season with a pinch of black pepper. Bake until the tomatoes have burst and the feta has softened, about 30 minutes. Raise the heat to 450 degrees F and continue to cook until the tomatoes and feta are golden brown, 10 to 15 minutes more.
  • Meanwhile, bring a large pot of generously salted water to a boil over high heat. Add the pasta and cook until al dente, about 13 minutes. Reserve 1/2 cup of the cooking water, then thoroughly drain the pasta.
  • As soon as the tomatoes and feta come out of the oven, stir in the garlic and red pepper flakes (if using). Use the back of a spoon to smash the tomatoes and feta into a smooth and creamy sauce (it's okay if some of the oil isn't fully integrated). Add the pasta and half the basil and toss until evenly coated. If the sauce is too thick, stir in some pasta water a couple tablespoons at a time. Taste and adjust the seasoning with salt and pepper. Serve topped with the remaining basil and a pinch of sea salt.

  • Preheat the oven to 425°F. Bring a large pot of salted water to a boil.

Creamy Pasta Bake with Cherry Tomatoes and Basil image

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain, reserving 1 cup of cooking water.

This is a different twist on my family's old favorite: Baked Penne. This recipe is also meatLESS, which I like, but I am sure you can improvise and add ground meat or sausage if you prefer. This is great for potlucks or parties because it can easily be made ahead of time. I saw a version of this made on 30 Minute Meals, but I prefer to make my own pesto sauce from scratch, because I am not too fond of the store bought. To save time, please feel free to use store bought pesto. I also chose to use whole wheat pasta in this as well. Because of the great flavors of pesto, cheese and tomatoes, I find that it is easy to sub whole wheat pasta, even for folks who might be skeptical.

  • Bring a large pot of salted water to a boil for the pasta.
  • Preheat your pot for the tomato sauce over medium heat.

Tomato and Basil Pasta Sauce image

Steps:

  • use half the oil and gently fry garlic do not let it brown.
  • add the tomatoes, dried basil, bay leaf, mixed herbs, salt and pepper and sugar (this recipe needs between 1/2 - 1 tsp salt to bring out the flavours of the tomatoes.
  • bring to the boil and gently simmer for 20 mins, add the tomato puree and the rest of the oil and simmer for a further 15 mins until the mixture has reduced.
  • If using fresh basil roughly chop and add now.
  • Serve with pasta with grated parmasan cheese and freshly ground black pepper.
  • Variations - button mushrooms, black olives can be added.

Steps:

  • Heat the broiler with a rack about 6 inches from the heat source.
  • In a large (12-inch) skillet on the stovetop, heat enough olive oil to lightly coat the bottom of the pan (about 1 tablespoon) over medium-high. Add half the gnocchi to the pan, breaking up any that are stuck together. Cover with a lid or baking sheet and cook, undisturbed, until golden brown on one side, 2 to 4 minutes. Transfer to a medium bowl. Repeat with the remaining gnocchi and olive oil.
  • Add the butter to the skillet and cook over medium-high, stirring often, until golden-brown and toasty, 1 to 2 minutes. Add the garlic, red-pepper flakes, 1 1/2 teaspoons salt and a few grinds of pepper, reducing the heat slightly if necessary to avoid scorching.   • 1. Bring a large pot of water to a boil and salt the water. Add pasta and cook to al dente. 2. Preheat a deep, large skillet over medium heat. 3. Chop the garlic and onion. 4. Add olive oil to pan. Add garlic. Chop onion and add to the oil. Cook, stirring frequently, five minutes until the onons are mushy and look cooked. 5. Add the tomatoes to the onions and stir. When they start to bubble, reduce the heat to low. Stir in basil pieces to wilt them. Season with salt and pepper. 6. Preheat broiler to high and place rack in the center of the oven. 7. Drain pasta. Add to a flameproof casserole dish. Add pesto sauce, ricotta and parmesan. Stir to coat the pasta. Pour tomato sauce over pasta. Scatter mozzerella cheese over pasta. Add a final sprinkle of parmesan to the mozzarella. 8. Place casserole under the broiler, 10-12 inches from the heat. Let the cheese melt and bubble on top, 3-5 minutes.
