GREEN TOMATO CAKE
This is a moist, spice-type cake...a good way to use some of those extra green tomatoes before frost hits. Sprinkle the finished cake with confectioners' sugar or frost with your favorite caramel or cream cheese frosting.

Steps:
- Place chopped tomatoes in a bowl and sprinkle with 1 tablespoon salt. Let stand 10 minutes. Place in a colander, rinse with cold water and drain.
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
- Cream butter and sugar. Add eggs and beat until creamy.
- Sift together flour, cinnamon, nutmeg, soda and 1/4 teaspoon salt. Add raisins and nuts to dry mixture; add dry ingredients to creamed mixture. Dough will be very stiff. Mix well.
- Add drained tomatoes and mix well. Pour into the prepared 9 x 13 inch pan.
- Bake for 40 to 45 minutes in the preheated oven, or until toothpick inserted into cake comes out clean.

- Pre heat oven to 350 degrees.
- cream butter and sugar together until light and fluffy.
- sift together flour and all spices with baking soda in separate bowl.
- Add tomato soup to creamed butter mixture - rinse can with small amount of water. Gradually add in dry ingredients. Stir in raisins. I remember her baking these in greased loaf pans. She doesn't list a specific time for doneness but notes that top should be well done and toothpick should come out clean.

- Preheat the oven to 350 degrees F. Spray a loaf pan with nonstick cooking spray.
- Puree the tomatoes in a blender and measure out 2 cups for the cake. Reserve any remaining juice for the glaze.
- In the bowl of a stand mixer, cream the brown sugar and butter together until light and fluffy. Beat in the eggs one at a time, and then mix in the 2 cups tomato puree. Sift together the flour, baking soda, cinnamon and salt in a bowl. Add the dry ingredients to the tomato-butter mixture and mix to combine.

- For the crab cakes: Gently fold together the crabmeat, panko, mayonnaise, chives, Dijon, seafood seasoning, lemon zest and juice, 1 teaspoon salt and 1 teaspoon black pepper in a large bowl. Refrigerate the crab mixture for 30 minutes to firm up; this allows the panko to absorb some of the liquid, helping the crab cakes bind together.
- For the remoulade: Meanwhile, combine the mayonnaise, parsley, Dijon, capers, hot sauce, Worcestershire, paprika, cayenne, garlic, lemon juice and 1 teaspoon salt in a medium bowl and mix until combined. Cover and refrigerate until ready to use.
- For the crab cakes: Preheat the oven to 450 degrees F. Lightly grease a baking sheet with butter.
- Scoop 1/3-cup mounds of the crab mixture, pat into 1-inch-thick patties and place on the prepared baking sheet. You should have 9 patties. Bake until golden around the edges and heated through, about 205 minutes.
- For the fried green tomatoes: Meanwhile, heat 1/2 inch of oil in a large Dutch oven or skillet over medium-high heat until a deep-fry thermometer registers 350 degrees F. Line a plate with paper towels or set a wire rack inside a rimmed baking sheet.
- Whisk together the flour, cayenne, garlic powder and 1/2 teaspoon salt in a shallow dish. Whisk the eggs in another shallow dish. Put the panko in a third shallow dish. Dip each tomato slice in the flour, then egg, then panko.
- Fry the green tomatoes, flipping, until golden, 3 to 5 minutes. Transfer to the prepared plate or rack.
- For serving: Split the slider buns. Put a fried green tomato on each bottom bun. Spoon some remoulade over each, add a crab cake and top with pickled red onions and Bibb lettuce. Close the sliders with the top buns.
GREEN TOMATO CAKE
I was overrun with green tomatoes that weren't going to ripen & found this recipe on Serious Eats. It is really tasty, something different other than making chutney with them. I halved the recipe and it was the perfect size for a loaf cake.

- For the cake, adjust oven rack to middle position and preheat oven to 325°F Lightly coat cake pans with baking spray. Line bottoms of cake pans with parchment paper rounds and coat lightly with baking spray once again.
- Combine flour, baking soda, cinnamon, allspice, salt, and nutmeg in medium bowl or on large sheet of parchment paper.
- In large bowl, beat oil and sugar on medium speed until fully incorporated, about 2 minutes. Add eggs, one at a time, beating well after each addition. Add tomatoes and beat just until incorporated, about 30 seconds.

Transfer cakes to cooling racks and cool in pans for 15 minutes. Invert cakes directly onto racks. Peel off and discard parchment lining and cool completely, about 90 minutes.

GREEN TOMATO CAKE
My mother had a lot of green tomatoes at the end of the season and I was looking for something to do with them. This sounded tempting. My 16-year-old nephew thought the cake looked good and asked what was in it. I told him to taste it then I would tell him. He tried it, liked it, then I told him. He was amazed. The original recipe called for 1 cup oil but I substituted applesauce for half the oil. The cake turned out very well. Delicious, moist, tasty.... truly wonderful cake.

- Preheat oven to 350°F Butter a 9x13-inch pan or two 9-inch cake pans.
- In a large bowl, beat oil, applesauce, sugar, and eggs.
- In a separate bowl, sift together flour, baking powder, and baking soda. Add tomatoes and cherries. Stir and then blend into oil and egg mixture in three additions. Add vanilla extract and stir. Add raisins.
