SWEET-AND-SOUR MEAT LOAF

Steps:
- In a large bowl, combine the bread crumbs, salt, pepper and eggs; crumble beef over top and mix well. Add onion and half of the tomato sauce. Press into a 9x5-in. loaf pan. , Bake at 350° for 50 minutes. In a saucepan, combine the sugars, vinegar, mustard and remaining tomato sauce; bring to a boil. Pour over meat loaf; bake until no pink remains and a thermometer reads 160°, about 10 minutes longer., Freeze option: Securely wrap and freeze cooled meat loaf in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf; reheat on a greased 15x10x1-in. baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

SWEET AND SOUR MEATLOAF
This is a southern meatloaf. It is the only one I will eat. The sauce makes it the best. Its a little sweet and a little sour. I promise you will love it. It is great on a sandwich the next day with a little mayo and cheese. My husband makes me double this recipe and he would eat it every day if I cooked it! We always fight over the leftovers!!

Steps:
- Preheat oven to 425°F.
- To prepare meatloaf: Add celery and onions (and any other veggies you like) to beef.
- Add egg.
- Add rice, breadcrumbs or cracker crumbs (I've even used potato chips!) for firmness.
- Open can of tomato sauce put in a little for moisture.
- Add some salt and pepper and start mushin.
- I always like garlic in everything so I usually put in a bit.
- Make into a loaf.
- Put in a loaf pan or a dish that will leave some room on sides.
- I like lots of sauce so I put mine in a corning dish with room all the way around.
- For Sauce: Pour tomato sauce in same mixing bowl.
- Add all your remaining ingredients.
- If you like it a little sweeter, add more sugar.
- A little more sour, add more vinegar.
- I usually put in quite a bit more Worcestershire sauce.
- Mix well and pour over meatloaf.
- Cook covered in oven for about 35 minutes, depending on altitude and oven intensity.
- Keep checking it.
- Insert a knife into the middle to check for doneness.
- This recipe is served best with Mashed Taters and corn.
- You mush em all together and it's delicious.

Steps:
- In a bowl, lightly beat the egg.
- Add 2 tablespoons of ketchup, mustard, bread crumbs, dry soup mix, salt& pepper.
- Crumble beef over mixture and mix well.
- Shape into an oval loaf and place in loaf pan.
- Bake at 350 for 40 minutes.
- In a small bowl combine the sugars, vinegar and remaining ketchup.
- Take out meat loaf, spread topping, and bake for 10-15 minutes more.

- Heat oven to 350°F. Beat egg in large bowl. Add all remaining meatloaf ingredients; mix well. Press mixture firmly in ungreased 8x4-inch loaf pan. Bake at 350°F. for 40 minutes.
- Remove meatloaf from oven. Spread about 3 tablespoons sweet-and-sour sauce over loaf. Arrange bell pepper rings and pineapple slices over sauce. Brush with remaining tablespoon sauce.
- Return to oven; bake an additional 25 to 30 minutes or until meatloaf is thoroughly cooked in center and meat thermometer registers 160°F. Cover with foil; let stand 5 minutes before cutting meatloaf into slices.

It's a little bit sweet a little bit sour and makes the best sandwiches the day after that I have ever tasted. Sometimes you have to make it more then once to make it your own and adjust the sugar to vinegar ratio but it's worth it.
