TOMATO KIELBASA PENNE
One of my favorite easy fix dinners. The recipe originally came from the back of a kielbasa package years ago but I doctored it up with many different ingredients to make it my own. Everyone in my house loves it.

Steps:
- Cook penne pasta as directed in separate pot.
- In a large skillet add olive oil, onion, garlic, and sliced kielbasa over cook over medium heat until onions are tender.
- Stir in diced tomatoes (undrained), tomato sauce, oregano, parsley, vinegar, and cooked pasta.
- Cover and simmer for 15 minutes.
- Serve topped with parmesan cheese, if desired.
PASTA SKILLET WITH KIELBASA
Inspired by several recipes here, I created this pasta skillet with what I had on hand, and everyone loved it! Nice change from regular pasta and meat, have to try it with fresh tomatoes when they are ready from the garden!

Steps:
- Bring a large pot of lightly salted water to a boil for pasta.
- Meanwhile, heat olive oil over medium-high heat in a deep skillet. Add onion and garlic to the hot oil and saute just until tender, about 5 minutes. Add kielbasa to the skillet and cook and stir until browned, 3 to 4 minutes. Stir in tomatoes, mushrooms, sugar, balsamic, salt, black pepper, and red pepper. Reduce heat and let sauce simmer while you cook pasta.
- Add penne to the pot of boiling water and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes, stirring peas into pasta during last 2 minutes of cooking time.
- Drain pasta and transfer to sauce. Stir to combine and add basil. Heat over medium-low heat so pasta can absorb liquid from sauce, about 5 minutes. Stir in Cheddar-Monterey Jack cheese and serve.

SAUSAGE AND PEPPER PENNE
This recipe is the best when made using farmer's sausage, but any sausage links will do. Add the red pepper flakes at the end for a little kick, or leave them out if spice isn't for you.

- Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Heat oil in a large skillet over medium heat, and cook and stir sausage, onion, green bell pepper, red bell pepper, orange bell pepper, and mushrooms until vegetables are tender, about 10 minutes.
- Stir diced tomatoes, tomato sauce, minced garlic, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes into vegetable mixture; bring to a simmer and cook, stirring occasionally, about 10 minutes.

PENNE WITH VEGETABLES AND KIELBASA
Quickly sauté frozen sugar snap peas, toss with cooked penne pasta, then blend with a cheesy cream sauce studded with sausage.

- Cook penne as directed on package. Drain; cover to keep warm.
- Meanwhile, heat 12-inch nonstick skillet or Dutch oven over medium-high heat until hot. Add bell pepper, onion and sugar snap peas; cook 4 to 5 minutes or until vegetables are crisp-tender, stirring frequently. Drain, if necessary.
- Reduce heat to medium. Add kielbasa, milk and cheese to vegetables. Cook over medium heat for 3 to 4 minutes or until cheese is melted and sauce is smooth, stirring constantly.
- Add cooked penne; stir gently to coat. Cook 1 to 2 minutes or until thoroughly heated, stirring occasionally.

- Preheat oven to 375°F.
- Spray a skillet with cooking spray and brown kielbasa, drain.
- In a 3 quart casserole, combine soup and milk.
- Add penne, kielbasa, 3/4 cheese, 1/2 cup onions and peas, stir to combine.
- Bake 30 minutes or until hot and bubbly.
- Stir, top with remaining cheese and onions and bake until golden brown.

TOMATO AND KIELBASA "SHORTCAKE"

- Preheat oven to 425°F.
- Sift together flour, cornmeal, baking powder and soda, salt, and sugar into a bowl and blend in butter with your fingertips until mixture resembles coarse meal.
- Stir together sour cream and water, then stir into flour mixture with a fork until just combined.
- Drop dough in 4 evenly spaced mounds on a buttered baking sheet and bake in middle of oven until pale golden and cooked through, 15 to 20 minutes. Cool biscuits slightly on a rack.
- Brown kielbasa in a large heavy skillet over moderate heat, turning it, and transfer to a bowl with a slotted spoon. Pour off all but 1 tablespoon fat from skillet, then cook tomatoes, onion, and jalape‱o, stirring, until tomatoes are softened, 1 to 2 minutes.
- Toss tomato mixture with kielbasa and stir in cilantro, lime juice, and salt to taste.
- Split warm biscuits and spoon filling and sour cream onto bottom halves. Put tops on biscuits.
