Steps:

  • Slice each tomato into 3 thick slices, arrange on shallow serving platter.
  • Season each slice with sugar, salt and pepper.
  • Drizzle with wine vinegar and olive oil.
  • Let stand at room temperature for 1 hour.
  • At serving time, add paper thin onion slices.
  • Sprinkle each slice with fresh mint.

  • Spread pesto on flatbread, English muffin or split crusty roll.
  • Top with your favourite shredded cheese.
  • Add thick slices of tomato; sprinkle with salt and freshly ground pepper.
  • Top with thinly sliced onion.
  • Broil about 6 inches from heat until tomato is soft and cheese is melted.
  • About 5 minutes.
  • Serve immediately.
